Asiago Breaded Pork Chops.

  Although I have been suffering from an aversion to meat this year, I have been craving pork. Tenderloin, chops and pulled (my ultimate fave!) – you just can’t go wrong!     This is another dish my mom made often – and still does. We never got sick of it because it is THAT good.   You need 4 boneless pork chops.       4 thin, boneless pork chops. THIN makes all the difference. (Doesn’t it though?)                       Trim off all of the fat.                 This is something I have to do because if I see or bite into (blech!) the tiniest piece of fat, gristle, vein, muscle, etc, I’m done. No more meat for me. It is one of the reasons I have a hard time eating the meat I prepare, because I see everything.             Tenderize the pork with a fork.                         The breading is a mixture of corn flakes and seasoned bread crumbs.                     [...]

Nutrition Hot Seat: Let's Go To The Bar!

Protein bar, that is.   Let me preface this by saying I usually do not eat store-bought bars. Of course, I stay away from them for the obvious reasons…they are usually full of processed junk, they can be a trigger food, etc, but my main reason is that you just don’t get much bang fo’ your buck.   Not all bars fall under this category. I can have a Larabar and usually be perfectly satisfied. However, when I eat a bar covered in chocolate (think Zone) I am usually 1. ravenous shortly afterwards and 2. looking for the nearest piece of chocolate.   I would always remind my clients that a bar (well, a select few) are great in a pinch and most of the time will be better than that Big Mac. One possible exception: The Big 100 Colossal bar. Have you guys seen this whopper??   The Big 100 Colossal has around 410 calories PER bar, with HFCS listed as one of the first ingredients. I once watched a guy at the gym eat this bar as his ‘pre-workout snack.’ He then did 20 minutes of cardio, and proceeded to make himself a ‘post-workout shake‘ - about 500 calories worth. Halloweenie Pumpkin Scones.

   I said weenie.  (follow me as I tweet my life away and say other inappropriate things.)   Thank you all so much for additional recipe suggestions on my honeycrisp apple crisp! Check out the comment section for some yummy and healthier substitutions. You guys are the best!       I have never been a fan of scones from most bakeries or coffee shops. 95% of the scones I’ve bought are usually dry and crumbly, and although I realize that is sometimes how scones are supposed to be, I really do not like that texture.   After getting a pumpkin scone from Starbucks on Saturday that tasted like it had been sitting out for 4 days, I knew I had to come up with something.       I used the base of this scone recipe from a friend’s sister. Honeycrisp Apple Crisp.

  We had about 7 honeycrisps in our fridge and I knew they had to go to good use. I am really trying to not be wasteful with food – we always have so much since my husband is a human garbage disposal, albeit a healthy one.     I had just been eating the honeycrisps (who woulda thunk?), but the recent attack on my mouth, aka loads of dental work (and the raping on my bank account), have made chomping on a crisp apple not such a pleasant task.   Especially after I chipped my first filling on this.     I wanted to make a slightly healthier version, and also not make an entire baking dish full of apple crisp. Because we all know where that would end up.     This apple crisp is so simple and took less than 10 minutes to prepare! It’s more of a cobbler than a crisp, and it is prepared so easily that you just need a fork, not a mixer. So it’s kind of a fake apple crisp. Oh well. It can serve up to 4 in small portions. Veggie Crisp.

  I decided to give veggies another chance this week and created a ‘Vegetable Crisp.’ Reason for the name would be - directly before I made this I made an apple crisp (recipe coming soon..). So guess what I ate while making the veggie crisp?     No clue why I don’t like veggies…       I began by roasting some garlic, because this I do like.                           I figured if I smash a ton of stuff I enjoy on the veggies, I may be able to force ‘em down. Healthy stuff, that is. Because what I really want to smash on is bacon, cheese, buttered croutons and cheese. And bacon.           Since these sat on the dining room table for 7 days, I decided to give them some love.                       I toasted up 4 slices of Ezekial bread to make Ezekial bread crumbs. Loaded Steak Salad and 20 Questions. Or 10.

Check out this loaded steak salad we had for din-din tonight!   Ok, let’s get real – we all know that I didn’t eat this salad because it is chock full of my frenemie, vegetables. You will be happy to know that I did create a ‘vegetable crisp’ today that I will be posting sometime this week. I only had a few bites and it tasted great, but let’s hope that the veggies can fully redeem themselves and I will gobble it up all week.   Just in case I gag on it at lunch, I am defrosting some of my leftover veggie soup for the week. I can’t wait – those are some veggies that I love!       Leafy greens.                       We love this dressing. Mainly because it tastes like Caesar, but only has 6 grams of fat per serving. Home Alone.

Usually when my husband travels I really have my act together. House is spotless, meals are prepared, workouts are done, relaxing ensues…     Ok, besides that fact that I sleep on the couch because it is easier to escape an intruder than if I had to jump out of my 2-story bedroom window. Aside from that, I’ve got it all together.   This week was quite different. As I tweeted my life away, I was a complete wreck. Dishes left in the sink and all over the place. Clothes thrown everywhere. Toilet paper and paper towel racks lacking said paper. No cooking. Scraping leftover oreo crust from a baking dish for dinner. Dragging myself out of bed. Leaving green monsters stewing in my warm bedroom. Talk about being in a funk.       I’ve been brainstorming ways to feel more secure. My brother comes to stay with me, but I don’t feel like waiting on him hand and foot while he mooches homemade dinners off of me interrupting his life.       Of course, I thought that a security system may help me feel more secure. …but I have to post pics of my lunch yesterday. I love Atria’s Octoberfest menu, and this should show you why.       I never…’utilize’ the bread basket.                 I am not a big fan of bread. Never have been. And I actually dislike white bread.     Well, most of the time anyway.       Last Sunday I made a grilled cheese in bacon grease on white tuscany bread. If it sounds gross, trust me, it wasn’t.    I ate a ton of this bread. I had not eaten since before my dentist appointment at 8 am. This was a late lunch at around 2 pm. Starving!         I had one of these.                 Watermelon martini. They are so, so good here. I love ‘em.           My husband ordered Sangria.   Looking for the Glo Bar Winner?     Don’t know much about Mother Lovett – my deaf, blind, bossy and utterly hilarious grandma? She is funnier than a cross between Everybody Loves Raymond and Seinfeld.   You can find out more about her here, here, here, and here.     I loved hearing about the dialogues with your own grandmother (or mother!) in my weekend recap.
