How was your Monday?

 

I never remember it being this difficult to get back in the grind after a holiday. It must be my old age.

 

Have you started to make this a December to Remember? With tomorrow being December 1st, you still have 31 whole days to start living your healthiest life NOW – long before January 1st. Get that head start!

 

I highly encourage you to write your goals down and place them somewhere you can see them. Even if you are not participating in the December challenge, it is always exhilarating to have a goal to work towards. It doesn’t even have to be a fitness goal – it can be any goal. Believe it and it will happen.

 

Since tomorrow is the real beginning of December, I decided to post my meals today to kick off my own challenge. This also gives you an idea of what I eat everyday, and more specifically Monday through Friday, when I’m on more of a schedule.

 

I had a huge green monster for breakfast, but didn’t take a pic since I was sooo out of it a bit rushed this morning. It was giant, and took me an entire hour to drink. I can never eat or drink cold things quickly – ice cream takes me forever to finish.

 

 

Around 10, I had some greek yogurt, Trader Joe’s Twigs, Flakes and Clusters cereal, dried strawberries and bananas, and 1/2 of Angela’s Renew bar. This was the first time I had a Glo-Bar in something, like yogurt.

It was incredible, and I thought it was my favorite way to eat it.

 

 

But then I had some oatmeal for lunch, and crumbled the remaining half of my Renew bar into it.

Now, THAT was incredible.

 

 

In the afternoon I had a protein shake,

an egg in some terribly burnt whole wheat Tuscany bread,

and then I sucked every last bit of juice and ate every aril out of this pomagranate half.

It definitely looked like a murder scene afterwards.

 

 

For dinner, I had a sweet potato, some spring greens, chickpeas roasted with smoked paprika, and a boatload of asiago cheese.

I covered my salad in my most favorite dressing ever.

I have never been a fan of salad dressings, most likely because I’ve never been a fan of salads, unless they are covered in fries and cheese. I usually just use vinegars because I love the tart taste, and this vinegar takes the cake. It is so good – especially in a salad with greens, walnuts, chopped pear, and goat cheese. 

 

I am craving something sweet (huge surprise), so I’m not sure what is going to come next.

 

My workout today consisted of about 20 minutes of yoga, because I am meeting Kema 3 days this week for some butt kicking workouts. Can’t wait!

 

As for some of my goals?

3 veggies: 2 cups spinach in my green monster, 1 cup greens with dinner + sweet potato

3 fruits: 1 banana, 1/4 cup pom seeds, 1/4 cup dried strawberries and bananas

water: 100 oz

25 Days of Workouts


Workout #1 – UPPER BODY BLAST!

Combo 1: Complete one set of each exercise, then repeat for a total of 2 sets.  12 repetitions of each.

Lat Pulldowns

Dumbbell Chest Flyes

Side Lateral Shoulder Raises

25 pushups

 

Combo 2: Complete one set of each exercise, then repeat for a total of 2 sets. 12 repetitions of each.

Seated Row

Dumbbell Chest Press

Triceps Overhead Extension

25 pushups

 

Combo 3: Complete one set of each exercise, then repeat for a total of 2 sets. 12 repetitions of each.

Overhead Shoulder Dumbbell Press

Triceps Dips

Biceps Curls

25 pushups

 

Remember to ask yourself:

Am I challenging myself?

Is the weight challenging enough?

If I can easily do 15 repetitions, I need to increase my weight.

If I can’t get 6 repetitions, I need to decrease my weight.

Am I using proper form?

Am I performing the exercise at the proper speed? A good rule of thumb for beginners is 2 seconds up, 2 seconds down.

 

Note: It is always best to work your largest muscles first, and do compound movements first. For example, you want to work your back and chest before your triceps. If you work your triceps out first, they are too fatigued to help with your chest and back exercises.

About push-ups: Feeling down and frustrated because you have no idea how you will do 25 pushups? I received the best piece of advice when I was 15 years old: do pushups everyday. Even if you can only do 1, do it every single day until you can do 2. Then 3. I set out to do 50 push-ups everyday. I did it in sets of 5, or sets of 10. But I wanted to get 50.

Set a push-up goal for yourself. Do some everyday. You will feel strong and your strength will increase. I suggest starting with 10 push-ups every day. And if you can’t even do 1, start with push-ups on your knees until you can do 1.

Before you know it, you will have those 25 push-ups! :)

Many of the appetizers I have posted have been pretty darn simple. And quick. This one takes the cake, though.

It doesn’t get much simpler than these olives and gorgonzola. And it is super classy, impressive, and deliciously mouth-watering.

 

I buy a container of seasoned, pitted olives.

After eating my weight in olives, I stuff a few with crumbled gorgonzola for the hungry guests.

So thoughtful, I know.

 

 

These are always crowd pleasers. The soft, creamy gorgonzola combined with the salty olive makes for the perfect combination.

This appetizer is also a nice size – guests can thoroughly enjoy them without stuffing themselves before the main course.

Gorgonzola Stuffed Olives

1 container large, seasoned, pitted olives

3-4 tablespoons crumbled gorgonzola

Make sure all pits are out of olives. Fill the olive opening with one large or a few small gorgonzola crumbles.

Serve with crackers, cheese and fresh bread.

Oreo Balls.

Remember the pumpkin spice balls dipped in chocolate? They are the offspring of these Oreo balls.

If you’ve never had Oreo balls before, they can be described as ‘cake-like,’ truffles, or the-best-thing-you’ve-ever-eaten-in-the-entire-world. 

 

Not only do they taste incredible, but they are SO EASY. All you need is a package of Oreos and one block of cream cheese. How simple is that?

 

 

I use my large food processor for this one, and mix the Oreos into crumbs first. You get less Oreo chunks this way. But it’s not like oreo chunks are a bad thing.

I cut the cream cheese into chunks before adding it. It just mixes more easily.

Once the Oreos have warped into crumbs, I add the cream cheese chunks and let the food processor go to town.

It creates an Oreo ‘dough.’

This dough is

1. easily eaten in one sitting

2. easily pliable to rolls into balls.

 

I would advise using Option 2 if you’d like to please others. Use Option 1 if you’d like to to buy a new wardrobe. 

 

 

After I roll them into balls, I pop them in the freezer for an hour or so.

I melt some chocolate in a double boiler and dip the Oreo balls in.

I have also dipped them in peanut butter and white chocolate. The white chocolate is always very popular, and the peanut butter is just fantastic.

 

 

Once they are dipped, I throw into the freezer again. They are so good when they are cold.

 

Some I decorate after they freeze (the red icing) and others I decorate right after dipping them in chocolate (the peppermint pieces). Others I don’t decorate at all because I consume them like I’ve never seen food before.

Oreo Balls

1 package regular Oreos

1-8oz block of cream cheese, softened

 

In a food processor, mix Oreos until they become crumbs. Add cream cheese in chunks and process until you have a dough. Roll into balls and place on a baking sheet. Set in the freezer or refrigerator to harden for 1-2 hours.

Once Oreo balls are set, dip in melted chocolate – chocolate, peanut butter, white chocolate, etc. Add any decoration on top.

Store in the freezer and serve cold.

These are great to take to a party and can be made rather quickly. If you love Oreos, you also most likely have all of the ingredients in your house!

A December to Remember: *25 Days of Workouts* Challenge

Good evening.   With all of the holiday treats, parties, and temptations in December, I figured it would be the perfect time to challenge myself. January is right around the corner, and you may already have your resolution planned out for the 1st of the year. I say we make this a December to Remember, and start living our best, healthiest life now. There is no reason to be scared – no restrictions, no crazy diets – just a month early to start living your life to the fullest. For any of you who have made a lifestyle change, you know that it does not happen overnight. It is a gradual process with many mistakes. It is a learning experience about yourself. It is a lot of trial and error. It can be frustrating and emotionally draining, but in the end, I think it is worth it. While I have some healthy habits of my own, I also let some slip during these cold, festive months. I haven’t been working out as much as I used to, and haven’t been preparing my meals like I should.   This goes hand in hand with my plans to stay fit this holiday [...]

Holiday Appetizers 101: Traditional Bruschetta.

Update your readers! http://feeds.feedburner.com/howsweeteats/smSp     Who doesn’t love a slice of toasted french bread with olive oil, garlic, cheese and tomatoes?      Ok, I mean besides that size 2 skirt hanging in your closet.   There are so many variations of bruschetta, and this one can be made in under 30 minutes.     I chop the tomatoes coarsely, and the garlic finely.       I use French bread. I think it is best to use day-old bread. Regardless, it is going to get toasty!    (and if you don’t use it all, you can dip the rest in olive oil mixed with spices and parmesan cheese. but shhh. I didn’t tell you that.)     Make sure to slice it into nice, even, thick slices.     And brush with a bit of olive oil for toasting purposes. And flavor purposes.   And eating purposes. Black Saturday.

  Last night, we all went out to eat at a little Italian restaurant, because we apparently didn’t stuff ourselves enough on Thursday. I had an incredible meal.   Cheese ravioli in a gorgonzola cream sauce with walnuts and artichokes.   Are you drooling yet?   The meal was incredible, but as you can see it was drenched in sauce. It was a bit heavy so I only had a few bites and brought the rest home. So delicious, though.     Remember that cheese bread I wrote about on Thanksgiving morning? We’ll it’s obviously gone, since I ate it all in about 5 minutes. But do you know what made that cheese bread better?   More cheese.       Today, I was so excited to go shopping with my mom and our friend, Barb. I grabbed some Starbuck’s before since they were late, as usual to make my spirits bright.     I am pretty sure that the peppermint white chocolate mocha is my fave. Gorgonzola Smothered Chicken with Pancetta.

Trivia Friday #6

With the risk of sounding like a broken record, I have the MOST amazing family in the world and am so incredible blessed.     At my parent’s house, we had an extra guest this year.         This is Opus. He is incredibly cute, devilish, and loves table scraps.       He and Winnie fought over the dropped goodies.       My uncle started the evening off right by filling the fruit bowls full of Chardonnay instead of fruit.     Fruit? Chardonnay? Same thing. It’s all going to the same place. Bottoms up.     I managed to hold myself to one plate at each of my Turkey dinner’s. This here was vegetables, vegetables, more vegetables, and a side of carbs.       It was fantastic, and my belly button and elastic-waist pants are getting quite friendly at the moment.   I gorged myself on desserts, including this mini slice of pumpkin pie.     Then devoured 18 cupcakes.     My fruit dish wine glass was empty by this point, so I moved on to my husband’s. Pumpkin Shortage Victim.

I spent last night and the majority of the morning making some goodies for today and the holiday weekend.   I made vanilla bean cupcakes:       Chocolate fudge cupcakes with bailey’s frosting (got this idea from Gina):       Pumpkin chocolate chip cookies with marshmallows:       And pumpkin spice balls, covered in milk chocolate instead of white.     I am now off to make Maria’s apple galette.   Oh, and on a serious note, do you think I have enough powdered sugar?     I waited until the last minute to begin baking last night. I was sure I had canned pumpkin in my pantry. Wouldn’t you think it was somewhere in there?     Luckily my mom came through and had 3 cans. Good thing she taught me how to hoard items.   One good thing came out of the no-pumpkin-left-grocery-trip last night.
