Holiday Appetizers 101: Bacon Wrapped Scallops.

I’ll tell you a little secret.
You can find frozen bacon wrapped scallops at Sam’s Club and Costco, and I’m sure a few other places. That would take the work out of it, but it would also take out the fun!
Plus, you have the feeling of acheivement you get from knowing that you made the bacon wrapped scallops yourself.
And they taste so much better.
I buy a few pounds of fresh scallops.
And season them with a little salt, pepper, and garlic powder.
I slice the pieces of bacon in half, or in thirds, depending on the size of the scallop. I use applewood smoked bacon – my fave.
Wrap a bacon slice around and secure it with a toothpick.
The toothpick may not look as fancy, but it serves a purpose. Your guests will be happy to pick these up and pop them in their mouth without having to wash their hands or use a fork.
I place them under the broiler for a total of about 10 minutes. You may need to broil them for a shorter or longer period of time. They bake so quickly that I suggest trying 1 or 2 in the oven for the time you think will work, and judge from there. You don’t want to ruin the entire batch!
The scallops are perfectly cooked – not chewy – and the bacon is crispy.
Bacon Wrapped Scallops
Ingredients
- 2 lbs fresh scallops I’m sure you can also use frozen ones and thaw them
- 1 pound of bacon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
Instructions
- Turn on the broiler. I use the ‘high’ setting.
- Season scallops with salt, pepper, and garlic powder. Take a few slices of bacon and cut them in half or in thirds, depending on the size of the scallops.
- Wrap bacon slices around scallops and secure with a toothpick. Lay on a baking sheet.
- Broil for 5 minutes, then flip over and broil for 5 more minutes.

This doesn’t take much more work than opening a bag of frozen bacon wrapped scallops and placing them in the oven. And your guests will be impressed. Maybe you’ll get an extra gift? :)

If you want to be really decadent, I suggest using diver scallops. You’ll use a whole strip of bacon for each scallop but diver scallops are huge and so buttery!

I’m thinking of making bacon-wrapped dates this year for our holiday party. I had them at a tapas bar and they were AMAZING! Have you ever made those? I’m a little nervous about it…since it’s something new, but how hard can it be? It’s the whole sweet/salty combo yummm

i found out a couple weeks ago that i’m allergic to scallops…like head-in-the-toilet-till-4-am allergic. they’re so yummy too! blah

we do these all the time.. well every 6 months or so.. mainly at Christmas time. We have an appy tradition and you are right not only do they taste better but you get more for your money. Those pre-done boxes are way more expensive than doing it yourself.
…. and I have to say it’s usually just the hubs and I eating them. ;)
