We loved these so much that they never even made it into the cookie jar. Well, maybe I loved them so much. I can only remember my husband eating one. Slacker.

I think they are a form of a meringue, but having never made meringues before (!), I can’t be sure. I just know that they came close to the chocolate chewies from Whole Foods, which I’m busy trying to replicate.

I also ate these like I do the chocolate chewies, shoving 4 in my mouth at one time because I just can’t get enough.

So simple – I just beat some egg whites, cocoa and sugar.

And folded in some dark chocolate chips.

See where I’m going with this?

Egg whites. Dark chocolate.

We have a healthy cookie here.

Well, close to healthy if I had omitted the entire cup of sugar.

Oh, well. :)

I plopped big dollops on a baking sheet, and into the oven they went for 8 hours.

For future reference: this is not a cookie to make if you are craving sweets now. They need to be in the oven for 8 hours, without the door being opened.

This is difficult since I’m an oven-peeper. If you’re like me, make them right before bed time.

See how pretty?

Sin City Cookies

2 egg whites

3/4 cup sugar

2 heaping tablespoons cocoa powder

1/2 cup chocolate chips

Preheat oven to 375.

Beat egg whites, sugar, and cocoa until stiff peaks form. Fold in chocolate chips. Spoon onto baking sheet and place in oven.

Turn oven off and let sit for 8 hours. Do not open the oven door.

Eat up.

But if you want 6-pack abs, only have a few. :)

Friday Trivia Winner!

My apologies for forgetting to announce the winner of Martha’s Cookie’s yesterday! See, I literally wrote each name down on a piece of paper and threw it into a hat. I figured it was the most fair way. However, it was a bit time consuming.

So who is our winner??

Those looks delicious!

I’ve baked a lot of cookies in my time, but never that took 8 hours ;)
Putting them in the oven before bed makes sense!
I should try them now that I have a working oven :)

Sooo annoying living with slackers who don’t eat their share of baked goods, forcing you to finish the batch!
I try to bake when my little sister is home. She grows like an inch every month and eats like a horse!

Mmmmmm, I love meringues! I always buy them at the store, but this is pretty inspring– maybe I’ll have to try my hand at whipping up some homemade ones!

I kinda cannot believe you have 3 posts up and I am just getting here. Been a long day. From hell. BUt i digress :)

Your cookies look amazing.
But I truly loved the Ab info. I dont do any special “ab work” and I still have a 6 or 8 pack. And Ive had a kid. There are no magic bullets, clean diet, lowish body fat percentage, exercise in general, but I dont spend hours or anything on my abs. The key is to be at a great weight for your frame otherwise no matter how great your muscles are, if there’s a layer of fat on top, you’re not gonna see the great ab muscles. May sound harsh, but it’s my own .02 :)

xoxo
great post!

Do you think I could put them for a few seconds in the microwave to make the chocolate melt a bit?

I would not be able to let cookies sit for 8 hours without a bite — that is will power, girl. I am going to mention these to my coworker who needs to follow a gluten-free diet. She is always looking for flourless baked treats :)

I think I had to read this three times before I understood fully how something could be in an oven for so long and not burn. It’s reasons like these I am not the baker! But yet another recipe I must file to try! Thanks!!

Jessica December 2, 2009 at 10:18 am

Hahah, I think EVERYONE is doing that.

People – the cookies go into the oven, then you turn the oven off!!!

I just had to make these and per recommendation did them late and went off to sleep. I forgot that my oven is inaccurate and heats at lower temperature than normal. Well next morning my cookies were nice mostly flat chocolate brown patties that popped right up off the cookie sheets and fractured in so doing. The insides were a nice gooey chocolate. Decision time: Do I toss this or carry them on to the office for the scavengers along with my Snow Ball cookies and Pumpkin Tiramisu? We were raised to never throw anything away if it was edible so off I went. My Sin City cookies looked more like Louisiana baked asphalt, but to my surprise were the first things to be gobbled up! The bottom line is while they were undercooked, they were still a hit, and next time I’ll just be sure and dial up the temp a little higher to get the correct end results. Thanks Jessica for a great recipe! I’m doing your Godiva White Chocolate Cheesecake next week and everyone is excited to have it.

Thought these cookies looked really good, but they didn’t turn out how they were supposed to… Is it important to beat the egg whites by themselves before adding the sugar and cocoa powder? If you beat the ingredients all at once, the mixture is very dark and very runny. They’re in the oven, but look like flat chocolate cookies? So I looked up some other meringue cookie recipes and most of them mention beating the egg whites, and gradually adding the other ingredients. I’m kinda new at baking, so I don’t know if this is just a “known” when working with egg whites… May end up trying this recipe again and seeing if that makes a difference!

Jessica December 20, 2009 at 7:21 am

Hey girl! So sorry they didn’t turn out. I know how frustrating that is, especially when you set aside the time and ingredients! I did mix all of the ingredients together, but it’s quite possible it would be better to add the others gradually. Did you beat the egg whites until stiff peaks formed? The mix really has to be beaten for almost 10 minutes. It should be very stiff and not runny at all. I know it can take a long time! Also, did you use egg whites or egg whites from a carton? I’ve never tried this with egg whites from the carton.

Hi again! Thanks for your reply! I did use egg whites from 2 large eggland’s best eggs. I also didn’t beat it for nearly 10 minutes. I’m wondering if I do it again, if I should beat the egg whites by themselves first until they get more how they’re supposed to be, then add in the sugar and cocoa powder? I don’t know if that would really matter or not. I probably only beat the mixture for about 2 minutes and it didn’t seem to be changing at all. Do you recommend different egg whites, or beating them by themselves first? I like this recipe because it doesn’t call for a whole bunch of different ingredients, and its pretty simple. Those ingredients are things you usually always have around. (Well maybe not the chocolate chips, but lately I’ve been having them around!=) Was hoping mine would come out looking as yummy as yours! Any other suggestions? Thanks for your help!!

It took me 3 tries to get it right too. Finally beat the egg whites to soft peaks, added the sugar gradually & beat to glossy peaks. Then gradually added the cocoa. My 1st 2 batches were also runny. They are in the oven as we speak. Only 7 hours and 55 minutes left….but who’s counting?

Reply

Jessica December 20, 2009 at 5:52 pm

You can try added the ingredients gradually after beating the egg whites, but I beat them all together and they are usually ok. I’m not sure if you’ve ever made a meringue, but the egg whites need to be beat until they stiff peaks form. It usually takes awhile for me – I use my kitchen aid mixer and I bet it probably took 8-10 minutes. It will differ for someone I’m sure on the speed of your mixer. The egg whites you use are fine – I doubt that was the case. Maybe see if you can google or you tube a picture of how stiff the egg whites look. I don’t think my egg whites had looked any different after 2 minutes either – it really took awhile. Maybe try beating 1-2 egg whites separately so you can see how the consistency is? That way you won’t waste ingredients if it doesn’t come out as planned. Keep me posted!! :)
