Chocolate Chip Cookie Pie.
When my mom got me a recipe box a few Christmases ago, I immediately went scrounging through all of her recipes to find some to add to my own collection.
She has many recipes saved from years past that she has never made, and this is one of them. I decided to take on the difficult task of making this pie, because it must be just terrible to eat chocolate chip cookies in pie form, right?
When I first saw the recipe, I assumed the crust would be made from graham crackers or cookies. But it actually called for a regular pie crust.
This gave me the perfect chance to try Mother Lovett’s perfect pie crust. And when I say try, I really mean fail miserably 14 times before not even coming close to her crust.
She did not measure any ingredients when baking her crust, nor did she follow a recipe for the last 20 years. She just knew when it was ready. Kind of how she knew it was appropriate to stand on a step stool washing walls at age 86. Or how she knew that one of her loving grandchildren would buy every embarrassing item possible in the grocery store at once, including, but not limited to maxi pads with wings, stool softener, Mylanta, and oatmeal cream pies, just because she asked.
My crust came out ugly, but edible. Once I have the recipe down pat, I will share it with you.
That is, if I don’t commit myself to an insane asylum first.
But really, who cares about the crust when the top of the pie resembles a buttery, crispy chocolate chip cookie?
I’m not really a pie person, most likely because they don’t always include chocolate, bacon or cheese.
I should change that, shouldn’t I? I’ll get on it right away.
This pie, however . . . it changed me.
It made me a pie person.
At least for the time being, when I was shoveling 6 pieces into my mouth.
Know what makes this pie even better?
Topping it with ice cream while it is still warm.
The ice cream melts into the crevices of the cookie topping, and seeps all the way down into the pie. It is such a sin.
Â
Chocolate Chip Cookie Pie
2 eggs
1/2 cup flour
1/2 cup sugar
1/2 cup packed brown sugar
1 cup butter, melted and cooled to room temperature
1 cup chocolate chips
1 unbaked pie shell
whipped cream or ice cream
Preheat oven to 325. In large bowl, beat eggs until foamy. Beat in flour, sugar and brown sugar until well blended. Blend in melted butter. Stir in chocolate chips. Pour into pie shell. Bake for 60 minutes.
Serve warm with ice cream.
If you make this pie and eat it warm with an entire gallon of ice cream, I won’t tell.

i love warm choc chip cookies, so this recipe looks devine!!
We grew up on a pie similar to this one. We baked it in a graham cracker crust. I made it this year for Thanksgiving and it was completely gone that day. I had to make another one the next day since everyone was looking for it to go with their leftovers. I am not a pie person either, but how can you go wrong with a huge chocolate chip cookie??? Looks delicious!
Im not a pie person either, but I am a chocolate chip cookie person. That looks divine!!!
Kelly has been telling me about your blog for months and I’m so glad I finally came over to it! Joey’s birthday was last weekend, and we’re celebrating w/ my family tonight and b/c he is a dessert hater I had no idea what I was going to bring for dessert! He loves chocolate chip cookies, and I can’t wait to try this! I’m going to try and time it so that it will still be warm when we get to my parents house!
why must you post things like this in the MORNING! ahhh this looks good good. Yes I will eat it with a gallon of ice cream, you don’t have to ask me twice!
I would hardly call that crust ugly! omg its beautiful!
Pie crusts are hard – my mom never measures either and they are light and flakey – mine? Not so much!
Definitely think you pie and icecream are insulin worthy!!
Chocolate chip cookies are my ultimate favorite… there’s no reason why I shouldn’t dive into this pie :)
It always amazes me to hear when people bake without recipes, how do they do it? This chocolate cookie pie looks absolutely wonderful!
Is this Kentucky Derby Pie? My mom makes something similar but the recipe calls for bourbon and it’s my FAVORITE!!!
I’m not sure what Kentucky Derby pie is?? I’ve never had that!
You always make me want desert for breakfast Jessica! This looks wayyyy too good!
Oh my God. Awesome.
I’m going to sub in peanut butter chips. Drool. This might be the best thing ever!!!!
I feel as if when I reach the appropriate age, I shall be like Mother Lovett and make my grandchildren do all sorts of embarrassing things. Then, as a reward, we can all go home and have an Old Fashioned.
Also, when you say “treats” for FitBloggin, does that include this pie with my name spelled out in chocolate chips? Because it should.
OMG…this looks FANTASTIC! Must…made…soon… Pie crusts are hard, but the one big secret is to make sure all of your ingredients are completely mixed together and that you can’t tell the difference from one item to another, THEN add your water. That’ll turn out a perfect pie crust every time!
I knew when I saw this title in my Reader that I should not have clicked on it. Oh. My. Goodness. That looks amazing. I’m pretending I never saw it b/c I will be trapped in the house due to snow which I hate (don’t karate chop me -lol!) and will be very tempted to make this. And eat it. All. By myself. :)
Wow, cookies combined with pie? Talk about making something that is worthy of being on Thisiswhyyourefat.com lol.
And I mean that in a good way :). Yum!
This is me drooling, and not having a damn clue whether or not you spelled anything correctly in that post ;)
hahah i LOVE THIS! oh my gosh!! cookies in a pie is like the best thing ever-and ice cream is def needed with this
Yeah, you should be SO ashamed of that crust. ;) Seriously, Jess- it looks amazing. Sometimes I wish I could jump into the computer and eat some of the stuff I see on food blogs. Your site is a constant tease!
Hope you got my email! xo
I think I just died and went to cookie heaven! I bet this would be phenomenal with homemade vanilla bean ice cream. Yum!!
Chocolate chip cookie PIE??? I didn’t even know such a thing existed! Ummm hello yummy, nice to meet you :P Looks great, as does 99.99999% of everything I see here (okay okay, 100% ;) )!
Yes! This looks exactly like my mom’s kentucky derby pie. The only pie I will eat simply because it’s like a giant chocolate chip cookie! Delicious though.
ooh this reminds me of mrs. field’s cookie cakes :) Have you ever tried one of those?? I can never get the right consistency–too fluffly.
I just had a foodgasm! I’m not a huge pie fan, but cookies….I LURVE them! My fav is oatmeal chocolate chip. This looks so yummy, I wish I had a piece at my desk right now. Can you please teleport the pie through the computer screen? Thanks.

i LOVE the way you share stories with your recipes.
you have this ability to make my heart thump with your words, my eyes fill with one (or perhaps two) tears, and laughter noises to appear even when im reading when I should be listening to something someone of importance in some sort of meeting is saying and i should not be laughing out loud.
and then you tie it in with this yummy food.
it ALWAYS looks yummy.
yummy to the millionth power.
yummy to the infinity power.
when you open up a catering company (and by catering company, i mean move in with me and cook for me every day) lets call it Infinity Yums.
yumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyumyum!
i want to hug you after reading this blog…..and not just a side hug and a pat on the shoulder. side hugs and shoulder pats are given for vegetable recipes with no entertainment value….. your funny, sweet, honest, fun, post with a PIE PLUS COOKIE recipe…that deserves a HUGE loving like i’ve known you forever (yeah, but doesnt it seem that way? i mean, guuuuuuurl, you have got some DIRT on me!) taht a “bear hug” does not even possibly come close to describing, because seriously – who wasnt to be hugged by some grizzly, anyway…..a hug that is undefinable in term of words and titles …. which should be entertainnig considering im like 7 feet taller than you.
apparently i ahve stopped writing my own blogs and just plan on writing essay sized comments for the remainder of 2010. arent you lucky ;)
this looks so good! my college made something like this – tollhouse pie they called it. it was incredible.

But what if I eat the whole pie by MYSELF? With the gallon of ice cream? Does it count if I don’t tell anyone? This looks like a great recipe- I’m very impressed!
My mom made this pie, too! But she hasn’t for years and I’ve been dying to replicate it. Thank you for this recipe. :)
I can’t believe what I’m seeing. You are one good ‘n crazy woman.
Oh my, my my! This looks sooo sinfully delicious!!! It made my mouth water the moment I saw the cut piece. ( I have a real problem with warm, soft, still dough-like type goodness. YUM!) I’m not a big pie eater myself but this one… sure looks delish!!! I will definitely have to try it! Thanks for the great recipe!!!
I’ve never drooled this much over a food blog… EVER!! I want it NOW!! :)
