Bacon Stuffed Avocado.
In honor of being reunited with my lover (bacon) this weekend, I wanted to share this to-die-for recipe with you.
What is ironic is that I stumbled upon this recipe on the 2nd or 3rd day of Lent.
Pure torture.
It has been weighing heavily on my mind ever since.
Especially because at this moment, avocado’s are about $2.50 a piece instead of $4.00.
Could there possibly be a better combination in my extravagant, dramatic, hungry, expensive mind?
A smooth, buttery avocado topped with crispy, applewood smoked bacon.
When I die, I hope my Heaven is filled with bacon-stuffed avocados. I hope I have a house made out of bacon.
And once I eat through it, a house made of cheese.
Because I am pretty sure you don’t gain weight in Heaven. Awesome.
The sweet and savory sauce drizzled over the avocado is perhaps more sinful than the dish itself.
A mix of butter, brown sugar, garlic and soy sauce – it doesn’t get more decadent than this.
Bacon Stuffed Avocado

8 slices crisp bacon, crumbled
4 medium avocados, ripe and unpeeled
Lemon juice
½ cup of butter
¼ cup of brown sugar
¼ cup of white wine vinegar
¼ cup of minced garlic
1 tablespoon of soy sauce
Slice the avocados in half, then remove pits and brush with lemon juice.
Fill the avocado with bacon.
Combine all of the remaining remaining ingredients and heat to boiling to produce the sauce.
Drizzle sauce over avocados and serve as desired.
Mr. How Sweet didn’t have any of this treat.
He thinks avocados are slimy and tasteless, and would probably rather go meatless for a day before eating one. But if he went meatless for a day . . . he’d have nothing to eat.
Mr. How Sweet took the day off from work. He thought it would be ‘fun’ for him to be around in the morning while I was getting ready and eating breakfast.
He drove me bananas. Thank goodness retirement is a while away.

Now THAT is a decadent combination. I usually love balsamic over avocado alone, but I think I can sneak a little bacon in there ;) At least, I know my husband won’t object!

My husband has a mild allergy to avocados but still loves a good guacamole! I have to take it easy on him though. I LOVE avocados and this looks to die for !

Just wanted to let you know that i stole the sauce from this to drizzle over a savory salt & pepper french toast i made, and it was spectacular! the stack was braised greens, french toast topped with a grated soft cheese, crispy bacon, and your sweet/savory sauce on top. fantastic! thank you for helping to inspire a new favorite breakfast.
