Bacon Stuffed Avocado.

In honor of being reunited with my lover (bacon) this weekend, I wanted to share this to-die-for recipe with you.

What is ironic is that I stumbled upon this recipe on the 2nd or 3rd day of Lent.

Pure torture.

It has been weighing heavily on my mind ever since.

 

Especially because at this moment, avocado’s are about $2.50 a piece instead of $4.00.  

Could there possibly be a better combination in my extravagant, dramatic, hungry, expensive mind?

A smooth, buttery avocado topped with crispy, applewood smoked bacon.

   

When I die, I hope my Heaven is filled with bacon-stuffed avocados. I hope I have a house made out of bacon.

And once I eat through it, a house made of cheese.

 Because I am pretty sure you don’t gain weight in Heaven. Awesome.

 

The sweet and savory sauce drizzled over the avocado is perhaps more sinful than the dish itself.

A mix of butter, brown sugar, garlic and soy sauce – it doesn’t get more decadent than this.  

   

Bacon Stuffed Avocado 

from avocadorecipes

8 slices crisp bacon, crumbled
4 medium avocados, ripe and unpeeled
Lemon juice
½ cup of butter
¼ cup of brown sugar
¼ cup of white wine vinegar
¼ cup of minced garlic
1 tablespoon of soy sauce 

Slice the avocados in half, then remove pits and brush with lemon juice. 

Fill the avocado with bacon. 

Combine all of the remaining remaining ingredients and heat to boiling to produce the sauce. 

Drizzle sauce over avocados and serve as desired. 

  

 

Mr. How Sweet didn’t have any of this treat. 

He thinks avocados are slimy and tasteless, and would probably rather go meatless for a day before eating one. But if he went meatless for a day . . . he’d have nothing to eat.

 

Mr. How Sweet took the day off from work. He thought it would be ‘fun’ for him to be around in the morning while I was getting ready and eating breakfast.

He drove me bananas. Thank goodness retirement is a while away.

Yum, yum, and more yum! Ah, I’m dying. I love avocados and I love bacon. My hubby doesn’t like avocados either! I tell him he is CRAZY!

A house made out of bacon – can I move in with you?? I sincerely believe the world would be a better place with bacon lollipops.

BTW, Whole Foods Applewood Nitrate Free bacon is possibly the best piece of pig that has ever passed these lips.

avocados are expensive where you are! i picked up one for $1 at whole foods last weekend, they were 10/$10 and organic?

ah well, worth every penny either way. the man “hates” avocado too – funny that he likes guacamole though ;)

You know what’s weird? I love guacamole but can’t eat regular avacados. They make me gag. Ben eats them all the time with a spoon and salt and I almost die.

I did a taste test today that had avocado as a topping and people either LOVE ‘em or HATE ‘em…passionately. I’m all for Team Avocado, however. And bacon in one of those babies…la la la! I’m in heaven with you (minus the undesirable weight gain).

I don’t like bacon, but that looks awesome. I’m so excited to reunite with chocolate this weekend. Oh wait, I never left it. Because I’m a big, fat cheater. Fail!! Still, I’ll probably eat chocolate at every meal for two weeks just to make up for the times that I did pass it up in honor of Lent.

Soo..I am probably the only woman out there who doesn’t get her panties all in a twist over avocado. I mean, it’s kind of, um, flavorless? And I feel like I am either a) eating pure fat or b) fearing my mouth to produce Garnier Fructis bubbles (I think there’s an avocado on the bottle?)

I just can’t get into it. I can’t.

This looks positively divine! I LOVE avocado! My boyfriend is the same way about meat. He would basically jump off a building if I didn’t incorporate meat into every single meal.

i have a confession. i dont think ive let you in on this little secret before now, but if i have, just pretend like you havent heard it already, okay?

i dont like bacon.

i know, i know. you dont want to be friends anymore, i understand. trust me. i UNDERSTAND. when someone tells me they dont appreciate the wonders that are SJP, I HONESTLY have to consider if they are worth my time & kindness. And i have a feeling your love for bacon is a lot like my love for SJP. other than the fact that SJP is a living being who has graced the stage and screen in many a wonderful role, and is a pop culture icon reaching unparelled power to women who love shoes (like, um, YOU.) and bacon is, well, pig. but whatever.

anyway.
i should say, i used to say “i dont like bacon.”

and then i met you.
well, of course, by met you, i mean, somehow we became blog-aquaintences and eventually blends, and now i cant honestly picture my life without you even though ive not yet seen you in person – but yeah. i met you.

and now, i find myself CRAVING freaking bacon.
I dont even LIKE bacon.

i BOUGHT bacon recently.
PURCHASED IT.
with my OWN MONEY.
BACON!? seriously. WTB!?!?!?

[yes. what the bacon.]

okay, so maybe it was TURKEY bacon – but still. im working my way up, right?

anyway. this looks completely SINFUL and I am terrified to admit that I want to eat this. now. and possibly also for breakfast.

Oh wow… I honestly don’t know what to say. Amazing! This is the most perfect little dish I have ever seen… all the good parts, none of teh extra stuff! I always order turkey sandwiches with bacon and avocado from my favorite deli – but who needs turkey and bread? Yum, yum yum.

i cannot believe that avocados are typically $4 for you! they are usually $1.25 here and $0.70 if we are lucky. i dont love bacon like you, but i DO love bacon and avocado together. this looks so tasty!

havent had time to read over that thread, been SLAMMED but the trainer sesh was great. 10% was my #. So I am pretty well good to go, just have to add some lean muscle and lift.

Bacon is one of those foods that the smell just is not good. Same with garlic :)
