Mr. How Sweet is always begging for ‘healthy’ chicken fingers.
The key is crispiness. The chicken has to be crispy and crunchy and good for the heart.
And here, we have clue #27 that shows how Mr. How Sweet’s actions resemble those of a child: I must decipher the phrase ‘I want healthy chicken fingers,’ to mean that they ‘must be healthy, yet taste like chicken that has been battered and deep fried. That is the only way I will eat them. ‘

Inspiration from this dish came from Active Foodie’s buffalo chicken strips, which Mr. How Sweet requests almost every single weekend.
I am telling you – the man would eat the exact same thing forever if I was not around.
The chicken tenders are super tasty, but they take a lot of patience – it takes a while to coat each chicken tender with breading. Patience I do not have.
It would not take as long if Mr. How Sweet didn’t require 16 tenders per feast.

I knew that Mr. How Sweet really loved ginger, so I thought this would be the perfect treat for him. Honey and ginger are such a delicious combination.
The ginger offers a slight tang to the chicken, while the honey makes it a bit sweet.

Crispy Honey Ginger Chicken
1 lb boneless, skinless chicken tenders
2 cups lowfat buttermilk
1/4 cup honey
2 cups panko bread crumbs
1/4 cup whole wheat flour
2 tablespoons ground ginger
1 teaspoon seasoned salt
2 teaspoons garlic powder
Combine buttermilk, honey, 1 tablespoon ginger and 1 teaspoon garlic powder in a baking dish. Cup chicken tenders in half or thirds and add to buttermilk. Marinate for 2 hours or overnight.
Preheat oven to 450.
Combine panko, ginger, garlic, seasoned salt, and flour in a large bowl. Coat chicken pieces in panko mix, then lay on a wire rack sitting on a baking sheet. Continue with remaining chicken pieces. Spray each pieces with cooking spray or olive oil.
Bake for 10 minutes, flip, coat with cooking spray, and bake for another 10-15 minutes.
When finished, drizzle honey over chicken pieces.

yay! I have panko bread crumbs that I didn’t know what to do with! I tried chicken fingers a few weeks ago and they had almost zero taste. I have been looking for a new recipe, and here it is! Can’t wait to try it! Maybe this week! :)
My husband is all about the chicken fingers. Now that he can’t have gluten, I have been in charge of full filling the request for the crispy little fingers! Luckily I have found a great gluten free bread crumb, so crisis adverted! No, your life it not crazy, cause if yours is…then mine is too!

I am pretty sure it helps keep the bread crumbs together and makes it crispier – since it is like an ‘oil’. I could be wrong – lol!

A helpful tip…..If your husband eats as much as Mr. HS, you may want to consider 8 or 9 or even 10 chicken tenders per serving. Because 7 is not enough. If it were, Mr. HS would not be eating a yummy lower sugar Detour protein bar 10 minutes after eating the wonderful lunch his wifey packed for him.
