Happy Easter!

This is the second time I have made this fantabulous strawberry coconut cake from Joy the Baker. It is full of vanilla, strawberry, and coconut deliciousness, and I plan on eating about 6 slices. Then I’ll wash it down with a slice of bacon since Lent is over. Rejoice! Mr. How Sweet is still pouting because there is coconut on the cake. He would rather give up steak, spend 6 hours locked in a small cell with me while I ‘analyze life’, or watch Gone With The Wind 8 times before eating coconut. You can find the recipe here. S’mores Brownies.

I have wanted to make s’mores brownies for months. Don’t ask me why. I just really love the whole s’mores combination, no matter what it may be. I knew that making these brownies would require me to eat the entire pan. This was way too complicated for Mr. How Sweet. He couldn’t be concerned with such a brownie. Sometimes he closet eats entire batches of cookies and brownies. Other days he is following the cabbage soup diet. Ok. Not really. But sometimes our house smells like he is following the cabbage soup diet. The thing was, I wasn’t quite sure how to make them. I knew I wanted a graham cracker crust – I could live off of graham crusts. Yum. But would the brownies bake on top of a crust? I ended up using a boxed brownie mix. It was simple, only required a few ingredients, and if I messed up, I could just get out another mix and try again! Plus, boxed brownie mixes are sent from the Heavens. They are fabulous. Bacon Stuffed Avocado.

In honor of being reunited with my lover (bacon) this weekend, I wanted to share this to-die-for recipe with you. What is ironic is that I stumbled upon this recipe on the 2nd or 3rd day of Lent. Pure torture. It has been weighing heavily on my mind ever since.   Especially because at this moment, avocado’s are about $2.50 a piece instead of $4.00.   Could there possibly be a better combination in my extravagant, dramatic, hungry, expensive mind? A smooth, buttery avocado topped with crispy, applewood smoked bacon.     When I die, I hope my Heaven is filled with bacon-stuffed avocados. I hope I have a house made out of bacon. And once I eat through it, a house made of cheese.  Because I am pretty sure you don’t gain weight in Heaven. Awesome.   The sweet and savory sauce drizzled over the avocado is perhaps more sinful than the dish itself.
