May 2010

Shoulders are one of my favorite muscles to train.

Results can be seen quickly, and I love the shape they have in tank tops. Did you know that if you shape your shoulders with a bit of muscle definition, they can make your waist appear smaller?

Yep. So get on that while I finish eating my 16th Memorial Day brownie.

I love adding in a bit of plyometric or functional work in my shoulder workouts. It keeps my heart rate up and makes the burn that much sweeter.

Homemade BBQ Sauce

Perhaps one of my favorite things to make, this tastes better than any bottled BBQ sauce I’ve found. It’s possibilities or endless. And you can also just eat it off a spoon like I do.

Whole Wheat Orzo with Grilled Chicken and Roasted Veggies

This can be made ahead of time and is delicious served hot or cold.

South of the Border Burger

A burger that is kicked up a notch.

The Ultimate Marinade

Perfect for marinating steak, chicken or seafood before it hits the grill.

Chocolate Chip Cookie Pie

Refreshing with a giant scoop of vanilla bean ice cream.

BBQ Ranch Shredded Chicken Sliders

Who doesn’t love sliders at a party?

Cobb Salad

Make a party-sized version of this salad. It has bacon.

S’mores Brownies

Start summer with a classic – s’mores!

Parmesan Roasted Potato Wedges

A crispy, crunchy, healthier version of french fries.

Lightened Up Four Cheese Mac and Cheese

This healthier mac and cheese can be made ahead of time and heated right before the party.

Kiwi Mango Salsa

What’s more summery than salsa? Just hand me a margarita. Or 6.

Happy Memorial Day!

Well, well, well…look at who is in the driver seat yet again.

Why it’s none other than Mr. How Sweet himself.  Why am I posting today, some of you may be asking?  What you are really thinking is that this blog is for people who cook.  Well guess what?  I cooked.  And I’m here to brag about my culinary skills.

I mastered dippy eggs. I moved on to filet with lobster sauce. So what is my latest creation?  Since I am a Grill Sergeant, I tackled strip steak.

Let me clarify that.  On my way home from a hard day’s work I get the following text: “I’m going to SATC 2…you need to fend for yourself tonite.”

That means several things:

  • Mr. How Sweet is spared from seeing that wretched movie.  Don’t get me wrong…I loved the show.  But aren’t they closer to Golden Girls than Gossip Girls at this point?  Just sayin’.  Not hatin’.
  • That I better eat before I start handicapping races for tomorrow night’s card at the Meadowlands or I’ll forget to eat.  Which means my darling wife gets to come home after the movie she has been waiting 2 years to see to a very hungry angry husband.
  • That since no meal was prepared for me, I took that as a clue that I need to get back to my Introduction to Husbanding: Happy Wife = Happy Life lessons.  I must be slacking.

(Note to self: some flowers and a card might be in order for the weekend to smooth over anything I may have  done wrong.)

(Further note to self: make apology vague so it covers whatever you may have done but doesn’t implicate you in anything she doesn’t know about.  For example, apologizing for losing this week’s pay at the video blackjack machine is way worse when (1) she had no idea you went to the casino in the first place and (2) she may not have even been upset in the first place.)

Fortunately, I was prepared for Memorial Day weekend.  If there’s one thing that Mr. How Sweet loves more than steak, it’s remembering those who died in service to this great country.

When I got home, I fired up the ole’ grill.  I then pulled out the 4 pounds of steaks that I purchased at Sam’s Club yesterday.  3 choice cuts were selected and first slightly sprayed with Olive Oil Pam.  Why, you ask?  Because my good buddy (and lifting partner for life) Ol’ Budweiser Bob (OBB) told me that olive oil has a high flash point and it sears the steaks, keeping the juices in.  OBB learned this trick from Bobby Flay.  The steaks were then lightly seasoned with cracked black pepper and sea salt.  Good steaks don’t need marinated.  They don’t need a lot of seasoning.  Just a tad to bring their natural tastes out.

While the steaks cooked at about 650 degrees, I set the mood.  That’s right – country music.  Not just any country music, but Alan Jackson and George Strait.  Can you get any more American than steak and good country music?  That twang.  That slide of a steel guitar.  That is classic, solid-gold music right there.  A little Good Time by Alan.  A little Amarillo by Morning by George Strait.  That was the fastest 10 minutes of my life as I waited for those steaks to cook, flipping them after 5 minutes on the grill.

I heated up some wild mushroom risotto (the Target brand), ’cause all you long-time readers know I need to have a side with every meal.  Sometimes that side is mac & cheese.  Sometimes it’s sweet potato fries.  And even other times it’s been a chicken breast.  Nothing compliments a steak like a barbeque chicken breast just to make sure you aren’t skimping on the protein.

Enjoy your weekend and the 1,100 miles of racing on TV Sunday. Let us also remember those that helped keep us free.

Menu: The Break-Up Meal.

Remember a few weeks ago when you cooked that delicious meal on your 3rd date for the soon-to-be love of your life? Well. . .you broke up. Yep. Sorry ’bout that one. Drown in some delicious food and worry about it tomorrow. Enjoy eating your emotions tonight. Starter: Roasted Apple and Brie Bruschetta. Because you have to have some form of a vegetable fruit in this artery-clogging meal. Salad: Salad? No salads here. Who wants to eat a salad after a break-up? Let’s be real. Main Course: Crispy BBQ Chicken Fingers and Smoked Cheddar and Bacon Mac. Nothing screams ‘comfort’ like chicken fingers with mac and cheese. Dessert: Quadruple Chocolate Loaf Cake. Because anything with the words ‘quadruple’ and ‘chocolate’ are suitable for a break-up. And to prepare the night before for morning: Creme Brulee French Toast. Because you will desperately want some sugar and grease to cure your massive hangover. Bottoms up.

Not Chocolate Dipped Strawberries.

I clearly remember my first chocolate-covered strawberry experience. My mom and I were at the mall (Greengate Mall to be exact, for you Pittsburghers), and just about to go up the escalator to the next floor. I imagine that it was in Hornes (remember Hornes turned Lazarus turned Macy’s?) and they still had candy counters inside the department stores. There was no one at the counter, but there was a dish of chocolate on the counter. My mom got so excited and grabbed one for each of us, and I couldn’t understand why. I even declined it. She looked at me like I had 6 heads and told me it would probably be the best thing I had ever tasted. It was not a fresh dipped strawberry either. It was one of those fully-covered chocolate ones that was dripping with sugary syrup.   It really was one of the best things I had ever tasted. I can still remember eating it with the syrup dripping down my chin as I was riding up the escalator. I’ve been hooked ever since. It’s not a cheap addiction either, especially when you prefer Godiva.   Years later, I tore a page out of [...]

Afternoon Delight: Gettin’ My Greens.

In order to eat them, I need to bribe myself. I have some greens, I get some bacon. That is roasted kale, which is basically drowning in nutritional yeast. I could eat it everyday, and I usually do. You won’t find me eating any other vegetables though, so don’t get too excited. It’s companion is a toasty hummus, avocado and bacon sandwich. It doesn’t get much better. Unless you add chocolate.

White Chocolate Mocha Cookies.

Check out my blog at Whirl Magazine! Coffee tastes like dirty water. Plain and simple. The only coffee I will drink has to be loaded with sugar, cream, whipped cream, chocolate, caramel, bacon. . . You’ve heard it all before, I know. I’ll spare you the details. Anyway, I love white chocolate mocha frappuccinos from Starbucks. You know, the artery-clogging, thigh-plumping, creamy concoctions that are incredibly addicting? I wonder if they are secretly laced with heroin to keep me coming back. Well, my wallet and my waistline don’t love them. Not that these cookies have any significance when it comes to my waistline, except for making it bigger. They aren’t healthy. They are just delicious. And I don’t feel as guilty baking them and eating a dozen as I do buying frappuccinos everyday. I wanted to inhale the entire batch. I really loaded up on the white chocolate chips, so the cookies were packed with white and dark chocolate flavor. This just enable my coffee-flavored dessert addiction. Add it on the list right next to tiramisu and coffee ice cream. In fact, it may be higher on the list because these were so simple and quick. For the cookie, I [...]

Fresh Watermelon Salsa.

My distaste for vegetables goes as far as salsa. I remember as a child dipping a chip into salsa and allowing all the veggie chunks to slide back into the bowl, and then I inevitably ate a chip that was covered in salsa ‘juice.’ Things still haven’t changed – I am not a fan of chunks in salsa. The only difference is that these days I’m usually 3 margaritas deep while scooping the salsa. Makes the chunks a lot less painful.   Anytime I can, I am going to replace vegetables with fruit. Because let’s be real – no one but me considers bacon an appropriate substitute for veggies. Sweet + savory is a must-have combo in my daily life. Ideally, it wouldn’t come in the form of fruit and veggies, but I can’t afford a new wardrobe. I need too many new pairs of shoes.   Another reason I love this salsa? It is pink. Give me sparkles and glitter and a crown on my head. Anything glitzy catches my eye. And I’d be lying if I said I don’t pray every night for Sarah Jessica Parker and Chris Noth to have a relationship in real life.   Fresh [...]

Fitness Kick Start: Functional Fun.

It’s no secret that I adore functional workouts. In my opinion, there is no workout tougher than throwing your own weight around. Even though I am usually on the verge of vomiting post-functional workout, nothing makes me feel better or more in-shape. Functional workouts make everyday activities easier and can help to prevent sport-sustained injuries. Many functional workouts can be customized for specific sports. I enjoy making up my own combos to keep things exciting. I must be delusional. Functional Fun 5 minute jog 30 seconds high knees 30 seconds jumping jacks w/ kicks 20 walking lunges w/ medicine ball twist 10 burpees 15 overhead presses w/ band 20 squats 10 push-ups 30 seconds mountain climbers 5 tuck jumps 30 seconds russian twists w/ medicine ball 60 second plank hold REPEAT

Grilled Corn Salad with Lime and Cilantro.

Oh, Monday, why must you come so soon? This weekend was spent celebrating my youngest brother’s college graduation, which reminded me how old I am and that I really despise growing up. It included a plethora of fried food, giggles, and one-too-many Irish car bombs. Oops. Recently, Mr. How Sweet and I have been having a delicious dinner on Sunday evenings – just the two of us. It is also usually something that Mr. How Sweet helps prepare, which is a feat in itself. For instance, last Sunday night I stuffed my face with pulled pork and butter-laden mashed potatoes while watching the Miss USA Pageant. I thought that was the appropriate meal for me to inhale while watching beautiful bikini bodies strut their stuff about a stage. Made me feel fabulous. And a bit stuffed-sausage like. Many Sundays, our dinner consists of some form of meat (to keep Mr. How Sweet’s whining at bay) and some form of comfort food (to keep me sane). Comfort food is my crack. Months ago, my friend Cindy told me about this fabulous corn salad that her husband was making for the holidays. It includes cotija cheese, which is one of those items [...]
