Behold the beautiful burrito bowl.
Usually, my bowl contains chicken, but this time I had some leftover pulled pork.
You know, I have a thing for pork.
I would marry bacon if appropriate. Then cheat on him with smoked cheddar.
You may also notice a bit of green in the bowl.
Yes, there is some arugula in there, which I tend to enjoy in small (teaspoon-sized) quantities.
In the bowl: arugula, pulled pork, black beans, brown rice, fat-free refried beans, salsa, greek yogurt, avocado, and low-fat cheese. A tortilla on the side, as well as one toasted in the oven, cut into chips.
It’s a loaded-baked-nacho-wannabe.

I spray them with olive oil, add salt and pepper, and bake them on a baking sheet at 425 for about 15 mins or so.
These ones I used are La Tortilla Factory handmade yellow tortillas – they are really thick and work the best.

Basically anything with refried beans is a friend of mine!! :-)

This looks similar to the burrito bowl I get at Chipotle. No meat, black beans, rice, pico de gallo, guacamole and lettuce. It’s got to be the healthiest thing on the menu. I’ve read their tortillas are 1000 calories each!

only i cant swim.
i can kind of flail around and stay afloat for about 30 seconds at a time.
in about 5 feet of water or less.
i know this seems a bigger deal than it is to jess who is like, umm…short…but im 5’10. so 5 foot deep is the “shallow end”.
so i want to swim in this bowl. with floaties.
or just a raft.
i would like to lay on a raft in this bowl.
with a margarita in my hand.
and a sombreo on my head.
and some Ricky Martin playing.
or something.
