BBQ Chicken Quesadillas.

June 25, 2010 · 87 comments

Quesadillas are one of our go-to meals.

Well, at least one of my go-to meals.

I’m not sure that Mr. How Sweet could assemble a quesadilla, especially if he has a case of hungry-angry husband syndrome.

So I usually make them for us in order to avoid any kind of 2-year-old-tantrum that may take place.

My favorite part about quesadillas?

You can use anything. You can make any flavor. Toasted, fried or grilled, they taste incredible.

This specific quesadilla is loaded with caramelized onions, chicken, two kinds of cheese and barbeque sauce, with a little extra for dipping.

I think it is my favorite one so far. In fact, I’ve had a version of this for lunch almost everyday this week.

I had mine with some kale chips on the side, since, you know, they are still the only vegetable I can stomach. Especially after I drown out all the kale flavor with nutritional yeast.

Speaking of veggies, I tried to serve Mr. How Sweet a side salad the other day and he refused. Am I rubbing off on him?

I asked him about it, and he said that he didn’t want to ‘waste the calories’ on a salad.

What?

I don’t think he was joking either.

I’ll just put this in my jar of other wacky things he believes. Then I’ll bring it out in times of war.

BBQ Chicken Quesadillas

Serves 2

4 whole wheat tortillas

6 oz chicken, grilled

1 small vidalia onion

1 tablespoon olive oil

2 oz shredded, low-fat monterey jack cheese

2 oz shredded, low-fat cheddar cheese

1/4 cup barbeque sauce

Heat a skillet on medium heat and add 1 tablespoon olive oil. Slice the onion, sprinkle with salt and add it to the pan to caramelize – about 10- 15 minutes. Transfer onions to a bowl when finished.

To assemble quesadillas, add 1 ounce of cheddar cheese on the bottom. Top with 3 ounces of chicken, a drizzle of barbeque sauce, caramelized onions, and another ounce of monterey jack cheese on top.

Heat the same skillet you used for the onions on medium heat and spray it with cooking spray. Add quesadilla to the pan, letting cook on each side about 5 minutes, or until tortilla is crispy and cheese is melted.

I could eat quesadillas all day long.

Case in point: dessert quesadillas, cheesy chicken quesadillas, and crab-avocado quesadillas.

Drool.

Lol…that salad comment is funny. I’ve thought the same thing before…but never about a side salad :-)

Quesadillas are my favorite “go to” meal also!! They’re so easy to make!

haha love the “waste the calories” thing..i make choices like that… mostly in favor of pastry and alcoholic beverages. hahaha either way – this quesadilla looks amazing. BBQ chicken is probably my favorite (aka it’s the best pizza ever, too)…so yeah, this will definitely be making an appearance in my kitchen.

Caramelized onions and bbq sauce are an amazing combination! I haven’t made quesadillas in ages and these look amazing! Must try!

That made me laugh out loud the husbands comment about ‘wasting calories on a salad’. What a goof!

I love any and every quesadilla, you really can’t go wrong. These look great!

vidalia onions make my heart sing. not just because they taste amazing, but because you can pronounce it “V-eye-dayle-ya”.

that is all.

I <3 quesadillas, too! I think you just answered my question "what the heck should I make for dinner tonight?" :)

Quesadillas are a gift from above.
And everytime I eat them I think of Napoleon Dynamite for some reason. haha. :)

Mmmm. I used to cook at a bar, and the only food that never got old was quesadillas. Now THAT’s saying a lot.

Yum! We make quesadillas a lot, too. Believe it or not, my husband makes the best! I let him treat me with one every now and then.

Yum, I haven’t made quesadillas in ages. I like to put the bbq inside and then dip them in ranch dressing!

Reply

Jessica June 25, 2010 at 6:39 am

I love that too! I don’t even like ranch dressing, but when it is mixed with bbq sauce, I LOVE it.

We love quesadillas here! I too love that any combination goes! It really is the perfect food. My son accidentally got bbq sauce on his apple the other day and that it was such a happy accident! Oh and my husband, while I wasn’t here yesterday to make lunch, made himself a sandwich with lettuce on it and a side of cinnamon apples! Now, the sandwich was a massive about of ham and cheese, but the fact that he put lettuce on it…that was HUGE! Apparently my boys are starting to get into the fruit and veggie thing!

Ah…Hungry-angry-Husband syndrom…know it well! lol Love bbq and chicken together! I make a nacho version of this, SO yum! bbq sauce instead of salsa, chicken, BACON, onions and anything else you’d like, then topped with cheese! My brother’s FAVORITE dish and he requests it everytime I’m home!

Jenn AKA The Leftover Queen June 25, 2010 at 8:19 am

OH MY! My husband also has hungry-angry husband syndrome. In fact I am sending him a link to your post about the syndrome. I can so very much relate. So inconvenient at times!!! :)

I have gotten my husband to eat a quesadilla and consider it a meal, but that was a close one. He literally thinks he needs 3000 calories a day, but it also matters what form it comes in! Soup? NOPE. A Ginourmous salad with meat cheese, etc. NO WAY! Too too funny! By the way I adore this quesadilla!!!!

Man, I love quesadillas in ANY form, as long as it has melty cheese and crispy tortillas. Mmmmm. Delish. :D

I could also eat quesadillas every day. In our house, we pronounce them “keysa – DILLA”, like the grandmother in Napoleon Dynamite.

I especially love this combination – we have more BBQ chicken ‘dillas than any other flavor… I’d love to try buffalo. never even thought of that.

Mmm, quesadillas. This post is making me want quesadillas now. But I have no tortillas. Looks like I’ll be making a trip to the grocery store this weekend to make copious amounts of yummy quesadillas! (I think I’m going to have to try the Crab Avocado Quesadillas first! Well, if lump is on sale that is, haha).

BBQ sauce, chicken, and tortillas…what more could you ask for? Sounds so yummy! I must try this! I think that I’ll slap it on my grill since it’s going to be 95 here today… Thanks for the recipe!

This post was hilarious! I totally stock up on P’s funny beliefs and use them in battles too! I cannot stop laughing over “times of war.”

“Times of war” CLASSIC. Dave admitted to his parents (in front of me) that he “likes to stir the pot” and says things JUST to get reactions from people. Yea, that’ll be my A-bomb in times of war!

Jessica June 25, 2010 at 10:16 am

Oh…Mr. How Sweet is a giant antagonist. He has also admitted it like Dave. Boys are weird.

You’re right about quesadillas- there’s something so satisfying about the crispness of the tortilla and the gooey center that I just adore. Yours looks to die for- barbecue sauce makes everything better.

Try putting cheese on both sides of the quesadilla – it acts like glue!
