I know it doesn’t look like much.

In fact, it looks pretty darn boring.

But would I ever disappoint you with something bland and boring?

No.

Mainly because I’d never eat anything bland and boring. Hence the vegetables.


It looks harmless, but it is dangerous.

I’m telling you, this is not just plain white rice.

It is actually jasmine rice, and until 8 minutes ago I had no idea what jasmine rice was. How did I ever live before Google?


A few weeks ago we were at dinner with our friends Cindy and Nick, and Nick ordered fajitas that came with a sweet, coconutty rice. I only had a bite, but I was hooked. I knew I had to make it.


Next time I would probably add some caramelized onion for even more sweetness. I doubt I’d add pineapple or any other tropical fruit, because I like the simple vanilla-coconut taste. As you know, I also am not a fan of chunks.

In my food or my thighs.


So, while it doesn’t look like anything special, I urge you to make it. Especially if you like your food a lil’ sweet.


Island Rice

1 cup jasmine rice

1/2 cup coconut milk

1/2 – 1 cup water

1 teaspoon vanilla extract

contents of 1/2 vanilla bean

1/4 cup finely shredded coconut

1/4 cup chopped sweet red pepper

Combine water, milk, and vanilla in a saucepan and add rice. Bring to a boil, then cover and simmer until rice has absorbed liquid, about 15-20 minutes. This may depend on the brand of rice you buy, so double check the directions.

Stir in coconut, vanilla bean, and red pepper.



This is basically Mr. How Sweet’s worst nightmare. Sweet food that is not dessert?

He’d rather eat feet.
