I couldn’t stay away from the muffins for very long.

But I have good reason.

It’s the peaches. They make me do crazy things.

I adore peaches. And I only get approximately 10 ‘good’ ones during the season. By ‘good,’ I mean they are ripe and juicy and sweet, but firm and not mushy. Those are my perfect peaches. They make my mouth water. There is nothing like a good peach.

There is also nothing like a bad peach. I have already had my share of those this year. But let’s not talk about those.

Adding handful after handful of succulent peaches to the batter was a challenge. I just wanted to shovel them into my mouth. I do not do well with self-control.

These muffins taste like pie. They also test my self-control, or lack thereof.

Maybe it’s the outrageous amount of peaches I added. Maybe it’s the cinnamon. Maybe it’s my imagination.

But I promise they are delicious. They are also creamy and sweet. Peaches and cream, anyone?

Peach Pie Muffins

2 cups whole wheat pastry flour

1/3 cup sugar

1 egg

1/2 cup unsweetened applesauce

1/2 cup vanilla greek yogurt

1/2 teaspoon salt

1/2 tablespoon cinnamon

1 teaspoon baking soda

1 teaspoon vanilla extract

1 1/2 cups chopped, fresh peaches

Preheat oven to 350 degrees. Place muffin cups in muffin tins.

Mix sugar, applesauce, yogurt and egg until creamy. Add vanilla. Add flour, baking soda, cinnamon and salt. Stir until completely smooth. Fold in peaches. Spoon the batter into the muffin tins. Top with course sugar.

Bake for 15-20 minutes, until toothpick poked in center muffin comes out clean.

Now if you’ll excuse me, I must go continue my peach binge. Peach season won’t last forever.

;) I don’t think I’ve ever had peach muffins before. Sounds tasty. I just bought a few peaches from the farmer’s market…but not enough to do any baking. Too bad!

I have a hard time sacrificing good peaches to anything baked cuz I love them fresh so much…but…I have some nectarines that I’m just waiting to get a bit more ripe. I think that they might end up in muffins! Yeah! I’m so excited to try these…and so excited they’re healthy! Thank you!

Wow, those muffins sound fantastic! I love peaches as well. My friend is allergic to peaches, an I feel so bad for him. What a tragedy!

I love that these are made with whole wheat! I’m supposed to be from the peach state but I don’t think there are any peach orchards around here…

Wow this recipe looks amazing. I also love peaches and almost let one go to waste a week ago. I had forgot I had bought one and was letting it get ripe. When I realized what had happened it was almost too late.

I followed this recipe to a T. My batter didn’t look anything like the one pictured above. It was very thick and dry. I added a 1/2 c of milk and my mixture turned out like the one in the pic. My muffins are currently baking in the oven now, hopefully they turn out as good as they look. The mixture filled 1 muffin tin (12), and 1 mini muffin tin (24). Probably could have filled 2 muffin tins but I prefer the mini muffins.

I mixed this recipe and found it to be extremely dry and crumbly. Therefore I added milk since it is usually in most muffin recipes.
Did you forget this in the lust of ingredients?
They are now in the oven; praying they come out tasty.

Just made these tonight. Followed the recipe exactly, except I used fat free plain greek yogurt (which worried me, because it means there was no fat content in these muffins) and I used freshly made strawberry applesauce, in the hopes of a fun extra kick to the flavor. The batter did not look the same as above, but the muffins do and turned out wonderfully. My only complain: They could use a little more flavor. I love the healthy taste, but perhaps they really needed the flavor of the vanilla greek yogurt. If you are looking for a fat free version, definitely go for it, though. They are delish :) Thanks for the recipe!
