Pumpkin Apple Muffins.

You know how annoying it is when you walk through the stores and see Halloween paraphernalia right now?

Or how ridiculous it is to see Christmas decorations on October 15th?

 

 

Well, this kind of feels like that.

But I just couldn’t help myself.

If pumpkin in August is wrong, then I don’t want to be right.

I just couldn’t stay away any longer.

I want Fall and pumpkin and 50-degree weather and pretty leaves to hang around all year long. Just call that my utopia.

Luckily for me, I have 6 (well, had 6) cans of pureed pumpkin in the pantry just begging to be used.

I must have inherited the hoarding gene from Mother Lovett. But don’t worry, my pumpkin doesn’t expire until 2012. Mother Lovett’s would have expired in 1994.

And she still would have used it.

 

 

I used my non-expired pumpkin and combined it with juicy, sweet apples and whole wheat flour for some super moist and fluffy muffins. They are oh-so delicious. Even if they are a bit… orange.

You never know when you may have a pumpkin emergency.

Last year I went to bake with pumpkin and couldn’t find any on the shelves due to the shortage.

My mom came to the rescue with a can, but only later did I realize that it had expired the previous year. Clearly she inherited the expired-goods gene.

 

 

After that incident, I went out and bought all the pumpkin on the shelves. Yes, I have it all. I’m the jerk that bought it all at the store before you could get there.

I’m sorry.

But not really.

 

 

Pumpkin Apple Muffins

makes about 12 muffins

2 cups whole wheat pastry flour

1 1/2 teaspoons baking powder

1/3 cup sugar

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1 teaspoon sea salt

1 egg

1/2 cup grated apple

1 teaspoon vanilla extract

3/4 cup pureed pumpkin

1/4-1/2 cup milk

3 tablespoons melted butter

Preheat oven to 350.

In a large bowl, combine flour, sugar, salt, baking powder, cinnamon and pumpkin pie spice. In a smaller bowl, combine pumpkin, egg, apple and vanilla. Add wet ingredients to dry and stir until combined.

Begin with adding 1/4 cup milk and stir. If batter is still thick, add additional milk. Stir in melted butter.

Spoon batter into muffin cups, about 3/4 way full.

Bake for 15-20 minutes.

 

 

 

 

It is quite apparent that I need to be sent to muffin rehab.

If you think I sit here day after day, trying to come up with as many different flavor combinations as I can, well… you’re right.

I’m worse. I baked with pumpkin in July, I think (maybe not July. Okay, August, but early August!) but the modifications I made to the recipe were a bit of a bust. This looks absolutely delicious.

The ONE thing I’m excited for about Fall is pumpkin. I have found literally one can in the food store and I’m like savoring it…it may have to be used to make muffins.

I wish I had hoarded more pumpkin since it is so hard to find now a days. I have one giant can in the pantry (unexpired) and I am saving it for when the craving hits. I make my own pumpkin pudding. I take about a half a cup of pure pumpkin mix and add either sugar free pudding cup (chocolate I think goes best) or even some greek yogurt. I also am sure to add a dash of cinnamon. :)

I had a panic attack when I couldn’t find canned pumpkin on the shelves last fall too, so when I finally did find some, I bought it all up. You’re now making me think that I need to check the expiration dates….LOL

Ha! But at least you KNOW you’re a little ahead of the curve. What I laugh about is people who don’t actually realize. I don’t ‘get’ cranberries right now … or even chocolate.

A farm in my area is already selling pumpkins that they grew this summer – so actually, pumpkins are in season! :)

Yay! I’m so glad that pumpkin season is here, and the color of these muffins is perfect for celebrating the beginning of fall. I need to bake these TODAY so I can smell that pumpkin spice smell for the first time of the year:-)

I saw Christmas decorations at Costco last week, which is completely ridiculous. How about letting us get through the summer first? Nothing wrong with pumpkin all year round though! These look delicious. :)

I also have a pumpkin storage, due the the pumpkins SHORTAGE. I could not find it anywhere, so I ordered a case from Amazon. Yep. I did… and I’d do it again. ;)

That means that I have the capacity to make these, and I think I will. The muffin is a wonderful thing.

As you saw, I made pumpkin muffins yesterday too! I can’t stay away from delicious pumpkin. I can stay away from cooler weather though (I love the heat). These look gorgeous. Love the apple addition!

Those things annoy me too. I think Christmas decorations shouldn’t be out in full force until after Thanksgiving.

Although I do think pumpkin is good to have year round. Love pumpkin. :D

Woohoo! Fall foods. Your are so not wrong with this post. Definitely not comparable to Christmas in October. I had a crisp juicy apple this morning and it was the best thing ever. These muffins look delicious.

pumpkin and apple muffins are totally autumn reminiscent which i love!!
yea i see HALLOWEEN everywhere around here! reminds me of how crazy commercialism stuffs holidays down our throat (when they should really stuff these muffins down our throats instead lol). right after halloween they go christmas crazy.. dont want to lose that extra dollar they could make i guess… ha

Looks good! I don’t really like pumpkin (I know!) but I do like it in muffins. Especially when said muffins are smeared in cream cheese.
