The buffalo chicken obsession continues!

I was sent a boatload of Saucy Mama goodies, and obviously I chose to use their buffalo wing sauce to create a delicious recipe.

You can never go wrong with buffalo sauce!

So buffalo dishes are usually pretty manly, huh?

Well, Mr. How Sweet wasn’t too thrilled about the lettuce replacing a bun, but since I added cheese and peanuts on top, he ate it. It was delicious. Even he thought so. But he’s embarrassed to admit it because “real” men don’t eat meat out of lettuce cups. My rebuttal was that “real” men don’t have 4,321 diecast toy cars. Oh well.

 

 

Winner, winner chicken dinner!

 

Buffalo Chicken Lettuce Cups

serves 4

8 lettuce leaves

4 ounces grilled chicken, shredded

2 tablespoons Saucy Mama wing sauce + more for drizzling

1/4 cup shredded carrots

chopped arugula for garnish

2 tablespoons chopped peanuts

1 ounce crumbled blue cheese

In a bowl, combine chicken, wing sauce and carrots. Mix until combined. Spoon mixture evenly into lettuce cups. Top with chopped arugula, chopped peanuts and crumbled blue cheese.

Drizzled with additional wing sauce if desired.

    I grew up near Buffalo, NY, so I would definitely make some buffalo wings with the wing sauce! With a side of bleu cheese :). But now I can’t stop thinking about the cracked pepper marinade…

    Oh boy – I think I’d start with your lettuce cups. Then maybe some chicken buffalo wings in the slow cooker. Then maybe some spicy tuna. So many choices…yum.

    Those jalapeno stuffed olives would make the perfect dirty martini with a spicy taste. YUM! I also LOVE to make buffalo tofu to make into a wrap or salad.

    I’m not super creative, so I’d probably pour one of the sauces over chicken and cook it in my crockpot all day. I’ve done that with so many fun Trader Joe’s sauces and come home to a quick and easy main dish. Another thing I would do (if I won them all) would be to scroll back through these comments and try some other people’s ideas!

    I would use the buffalo wing sauce to make ribs! We marinate them for 2 days, slow cook them for 8 hours & then grill them. They are great & I would love to try a new sauce!

    I would use the Hot Wing sauce! Being from Buffalo, I’m always up for trying a new hot wing sauce or a new recipe like your Buffalo Chicken lettuce cups.

    Oh I would gobble up some marinated and grilled chicken. I even have visions of some sort of spicy pull pork in a slow cooker or something but I still need some coffee before this image can materialize…

    Yum, I’d make chicken or shrimp with the lime chipotle, preferably with corn on the cob… but I think I’m still stuck in summer food mode. The cracked pepper and sweet onion would be good for fall food.

    First, I would make Buffalo Chicken Pizza!!! My favorite. But I would definitely have to make something with the black pepper marinade. Also made your whole wheat double chocolate waffles this morning….YUM!!!

    I think I would definitely try marinating the steak in the cracked pepper… my husband is a big pepper guy and HUGE steak guy. I bet the stuffed olives would be super tasty in martinis too…!!!!

    Yummy! All the dips look amazing. I would use the sauce for shredded chicken, make a veggie dip, and to use on sandwiches or burgers. My family definately loves spicy so I would share with them on game night! Awesome giveaway!!

    Hmmmmmmm, tough to choose, but probably start with a chicken pizza, using a mix of sauces for the base and to cook the chicken…then some fajitas!

    I would use the chipotle mustard on my eggplant sandwichs that I have been making. Basically it is grilled eggplant with cheese and an arnold thin. I have been using hummus right now but I love spicy chipotle!

    My husband and I are obsessed with buffalo wings. He makes an amazing Buffalo Wing Dip…I think any of these sauces would be great for the dip, even to change it up a bit from traditional buffalo flavor!

    Since I’m not feeling overly creative tonight, the cracked pepper marinade sounds like it’d be fab with some steak. Medium rare steak. A big medium-rare steak. Yum!
