Squash and Cheese.
Meet squash and cheese:
Squash and cheese is mac and cheese’s slightly lighter, more yellow, and less cuter cousin. I didn’t really think we’d get along, but it turns out we mesh well. As long as no other vegetables spoil the party.
Sure, I may only enjoy squash and cheese’s company because of cheese, but who really cares about that? Details, details. That stuff isn’t important.
I made my cheese sauce with what I had on hand: skim milk and a shredded parmesan + asiago blend. It was divine, but if you have something different – make it your own! There are no rules when it comes to this recipe. Or any of my recipes for a matter of fact. I don’t like directions.
Just make sure you top if off with some fresh basil. And maybe even some tomatoes. I didn’t have any on hand. And the last thing I will ever run out to get is a vegetable. Or a fruit – whatever it is. But it sure tastes like a vegetable.
Squash and Cheese
1 spaghetti squash
1 tablespoon butter
1 tablespoon flour
1 cup skim milk
1/3 cup shredded cheese (I used a parmesan and asiago blend)
pinch of nutmeg
salt & pepper to taste
basil to garnish
Preheat oven to 375.
Slice spaghetti squash in half, and lay face down in a baking dish with a bit of water. Bake for 20-30 minutes, or until tender.
While squash is baking, combine butter and flour in a skillet over medium heat. Whisk to make a roux, add milk and nutmeg, and stir in cheese. Turn heat to low and constantly stir until thickened.
Remove seeds from squash (if you didn’t before) and scrape out squash with a fork, making spaghetti strands. Add to a bowl and pour cheese sauce over top, combining. Season with salt and pepper and top with fresh basil.
I must go comfort mac and cheese. I don’t want him feeling too left out.

I’ve never made cheesy spaghetti squash, just with tomato sauce. I love this idea… Maybe it will get my husband to eat it.
OH MY GOSH, I LOVE spaghetti squash so much! I used to make that ALL the time when doing low-carb (although I bribed Hubby to cut it for me!) Gosh, I forgot all about my yellow friend. I love spaghetti squash and actually cook it in the microwave! You poke some holes in it with a fork and stick it in for 20 minutes, turning a quarter turn every five minutes. I love spaghetti squash with cheese – its probably my favorite way to eat it. Sometimes, when I feel like actually spending the time, I like to bake it with even more cheese on top. Of course, Im not really the best example when it comes to cheese consumption. I will put it on anything.
I’ve seen several spaghetti squash recipes lately but have been hesitant to try it. Somehow knowing that you, a self-professed veggie hater, enjoyed it makes it seem less scary now :) Thanks for the recipe!

Ok, so after reading your blog and always saying oooh that looks good I should make that, I can say, tonight I actually made this!
My spaghetti squash took FOREVER to cook. After baking it in the oven for 30 minutes and it still being super crunchy, I scraped the squash out and put it in a bowl and microwaved it. Several rounds of that, still crunchy. So I took the suggestion of someone above and put it in a baking dish and sprinkled it with cheese and baked it. It softened up a bit but was crunchier than I thought it would be. The cheese sauce though was delicious!
But I’m wondering, is spaghetti squash always suppose to be so crunchy or did I do something wrong?
Cook times definitely vary based on the size of the squash! And yes – my squash always has a bit of a “crunch” to it, albeit a slight one. It is not quite as soft as pasta!
I don’t know why I bought a spaghetti squash at the farmers market because I hate them. Pretending to be pasta all covered in marinara. Yuck! Correction: I used to hate spaghetti squash. I’m loving this recipe for lunch right now. I used a locally made cheese in it too, and I used more sauce for my portion. Hehe.. Yummy! Thanks for a yummy recipe! :)

Ok, I think I’ve failed at this recipe..but not sure. Is the texture of the squash supposed to be just like pasta, or should it still have a bit of crunch? I baked for 40 minutes and my squash wasn’t as tender as I’d expected.
No – the texture isn’t quite like pasta. It still has some “veggie-like” crunch to it. If you can easily get it out with a fork, you baked it long enough.
