For Your Eating Pleasure.

I have finally updated the RECIPE INDEX! I know I have been sluggish with this, so you can just imagine how Mr. How Sweet feels about the current state of our bathrooms. Take procrastination times forty. Then multiply it by sixteen. I’ve never been great at math but I’m pretty sure that yields a high number. Just in case you are looking for any extra-delicious recipes for Thanksgiving week, I’ve listed a few of my favorites below. However, I must admit – I am not one to want any “new” or “unique” recipes for Turkey Day. Give me turkey, stuffing, mashed taters and a gallon of gravy. Chunky Cinnamon Balsamic Apples.

Easiest side dish slash snack ever… only 3 ingredients: A few apples, cut into big chunks. Then doused in cinnamon. And finished off with some red apple balsamic. Then served warm so one can devour in peace… possibly with some ice cream. And nuts. Someone save me from death by almond. Chunky Cinnamon Balsamic Apples serves 4-6 4 large apples, peeled and chopped into 1 1/2-inch chunks 1 tablespoon cinnamon 2 tablespoons balsamic vinegar (I used red apple balsamic, I also think cinnamon pear would be delicious!) Heat a skillet on medium-low heat. Peel and chop apples, then toss with cinnamon. You can also add a pinch of salt to bring out the sweetness if you’d like. Add to skillet and let caramelized for a full 20-25 minutes, stirring occasionally. Once soft and caramelized, add balsamic and stir. Serve hot with ice cream, yogurt, oatmeal, or as a side dish. Sometimes You Feel Like a Nut.

That is pretty much how I felt the last 2 weeks when my server was down. I was super frustrated and feeling completely nutty. Yesterday, I got this package in the mail from the lovely Heather. Luckily, my server issues are resolved, but she still sent some love to cheer me up. She included some adorable neon mini muffin cups too. These almonds are incredible. Within an hour, I made a giant dent in the jar. Thank you Heather for being so thoughtful and sweet! And I’m not even mad at you for the massive stomachache that kept me up until 2 am. I’m pretty certain that has to do with consuming 2 cups of nuts after an entire brick of Gouda. Live and learn.

Peanut Butter and Jelly Cookies: 2 Ways!

It’s pretty hard to practice self restraint around something like this. I am quite hypocritical, posting my love for peanut butter and jelly baked goods when I don’t really love peanut butter and jelly itself. It’s definitely delicious, but if I’m having a sandwich, I usually want it to be stuffed with cheese and bacon. But I do enjoy a good piece of toast slathered with peanut butter and jelly. I say that counts. This process was quick and painless. I actually found the recipe scribbled on an index card in an old recipe book of my Mother Lovett’s. I had never tried it before, and you know I love to try different recipes. So into the kitchen I roamed with my big bag of sugar and tub of peanut butter. I may have also been carrying a spoon. A large, peanut butter-covered spoon. Oh well. The finished product barely made it from the oven to the table. A few fell and tripped right into my mouth. Silly cookies. Some were salvaged. Juice Me.

I have a sore throat. And what’s so great about having a blog is that I can whine and complain to the masses about it. Isn’t that fantastic? Not really. I’m just fibbing. I rarely complain on the screen here. I save it all up for Mr. How Sweet when he gets home from a long, tedious day of work. Aren’t I thoughtful? So, I’m not really sick, but I do have somewhat of a sore throat and sinus issue going on. It’s just annoying. And calls for lots of chocolate. And Kleenex. The first thing I did this morning was bring out the juicer. Remember, when I told you I was really terrible at using gift cards? Well, this past summer I stumbled upon a gift card that we had left from our wedding. I’m not going to tell you where it was for, for fear that the gift-giver is reading and I will be forever humiliated. But I did use the gift card to buy this juicer. And I love it. Cheesy Chicken and Rice Bake.

Mr. How Sweet is a man of many moods. He is not a man of many foods. He likes to eat a lot of the same foods. Surprisingly, he likes to eat a lot of the same foods together. In casserole form. If his food does not come in casserole form, he has been known to mix and mash it together until it looks like it did. I think I’ve heard of other people doing this… other people who are 3-years old. Don’t mind this slop-pile mess of ugliness. It may not be pretty, but it has a… delicious personality. Some of the most unattractive foods are the tastiest. Just look at chocolate-covered bacon. It really doesn’t get much easier than this. You can throw any ingredient in that you would like. I’m willing to bet that you will throw in more vegetables, but I won’t hold that against you. In fact, I bet you can hide lots of veggies in here for veggie-haters. Except for me, of course. I’m a vegetable sleuth. You can’t fool me. Chocolate Cinnamon Scones with Vanilla Sauce.

The sun rises and sets on these scones. I promise. While I usually prefer chewy, gooey cookies and fudgey brownies and fluffy cake and dense milk chocolate that melts in your mouth for dessert, sometimes a perfect scone fits the bill. And by dessert, I mean breakfast. Because it doesn’t matter how much vanilla sauce you pour on or how many chocolate chips you stuff in, a scone is a scone is a scone, and a scone equals breakfast. So please, go have dessert for breakfast. I used my tried and true scone recipe that can convert even the biggest scone-hater. Trust me, I was one of them. I always had it in my head that scones were dry, crumbly and plain. Do you feel the same? Search no further. These scones are like a triangular slice of dense cake, but super moist and bursting with melted chocolate. And I hate to admit this, but they aren’t super sweet either. After Dinner Snacks.

This may come as a shock, but there is not an endless supply of cookies, cakes and treats in this house. Trust me, you would be disappointed. Most people are. This is probably a good thing since there is a lot of one thing in this house: snacking. You might think I’m exaggerating when I tell you that Mr. How Sweet eats 8 or 10 meals a day… but I’m not. I wish I was. Oh… I so wish I was. But that guy never stops eating. Unless we eat a very filling dinner, there is always room for dessert or a snack. For Mr. How Sweet, this usually happens precisely 7 seconds after he has taken his last bite of steak. And his snacks are boring. They usually consist of a few handfuls of these: Because according to Mr. How Sweet, pretzels are “like air and don’t have calories.” Fair enough. I also think that snack is quite age appropriate for him, since my dad snacks on them too. Pretzels are not my snack of choice.
