I have dinner!
And it includes fresh fruit and vegetables, seafood and avocado. Can’t go wrong there, right?
Especially if your shrimp is already clean – this meal should take you less than 20 minutes to throw together.
I was so excited when I found mangos at my grocery store on sale this week: 10 for $10! Are mangos in season? I have no idea. But I found a squishy, soft one (in my experience those are the best) and also bought a firmer one which I am sure will die in the crisper drawer.
I’ll probably find it in May.
I knew exactly what was happening to one mango though. It was perfectly ripe and I quickly chopped it with some red onion and tomato – easy, fresh salsa right there.
And I’m pretty sure I won’t ever make shrimp another way. With a quick dredge through flour, it comes out so flavorful and crispy.
I think I like these better than regular tacos. Maybe even better than pork tacos? Which is wild, considering me and pork are likethis.
And they are just so pretty and colorful. I love bright food. Except the vegetable kind.
We enjoyed this so much that I’m planning on making it again Friday. It was bursting with more flavor than I ever thought possible. I really loved the crunchy textures of the crispy shrimp and even the shredded lettuce.
In fact, I don’t even think I can wait until Friday. Pretty sure I must make these again today.

Crispy Shrimp Tacos
serves 2
1/2 pound raw, deveined shrimp (tails removed)
1 tablespoons olive oil
2 tablespoons flour
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 mango, chopped
1/4 tomato, chopped
1/4 red onion, chopped
1/4 cup chopped avocado
4 corn or flour tortillas
1/4 cup grated cotija or cheddar cheese
1 lime
shredded lettuce
cilantro
Make sure shrimp is clean and completely dry. Combine salt, pepper, garlic and cumin and sprinkle it over the shrimp. Add the flour to a small bowl, and dredge the shrimp through the flour to get a very light coating on it. Heat a skillet on medium high heat and add the olive oil. Once hot, add the shrimp and brown on each side, about 2-3 minutes per side. Remove the shrimp and let drain on a paper towel.
Combine chopped mango, onion and tomato together in a bowl, adding a bit of salt and pepper. Assemble tacos, adding lettuce, shrimp, mango salsa, avocado, cilantro and cheese. Spritz with lime juice.

Yum, beautiful! I have been making tons of baked/broiled calamari dredged in Trader Joes ground almond meal mixed with a bit of nutritional yeast, salt and lots of pepper, instead of flour. You get the same crunch but with extra flavor and health! I think you would love it. I just realized, you could even throw a bit of unsweetened coconut into the mix…

Have you tried La Tortilla Factory’s whole grain white corn tortillas? They are fantastic – soft, chewy, incredible flavor – they make the perfect fish/shrimp taco!

Oh. so. good. I LOVE shrimp tacos!! My favorite are the Bang Bang Shrimp Tacos at Bonefish Grill. If there’s a Bonefish in your area you should definitely try them!

I’ve had bad experiences with mangos…I’ll be waiting and waiting for it to become ripe…and finally I give up and eat it slightly green because it seems like it won’t ripen anyway.

I’ve had the same issues! I find that if I buy mangos and let them sit until they are squishy (sometimes 2-3 wks) that is the only way they are good. I have honestly only had 2 good mangos before in my life.

:) we made these last night with corn tortillas! i don’t know what’s with me and dredging food though cuz I always mess it up…so the tacos didn’t look nearly as wonderful as your photos show but they sure nuff tasted *awesome*! the mango with the red onions was the BEST part! though slicing mangoes is another skill I lack…had quite a lot of mango mush on the countertops, but i just poured it on top of the tacos with the lime juice. yum! thanks for another great meal!!!!

I made these last night and OMG…so awesome!
In addition to the mango salsa I made PW’s pica de gallo, a chili cream sauce and jalapeno lime sauce that I use with fish tacos and instead of the lettuce we used shredded napa cabbage.
We are seriously eating this again on Friday. Thanks for posting such a delicious and easy recipe.

Made them tonight and they were fantastic! The kids loved them too even with the mango salsa. BTW, if you like mangoes, look for Honey Mangoes! They are smaller and all yellow and even sweeter than regular mangoes. Thanks for all your amazing recipes!

Just wanted to let you know that I made these last night and they were FABULOUS! I make recipes from blogs quite often and have to say that sometimes I’m disappointed due to lack of flavor, etc. I’ve probably made 4 of your recipes to date and have loved every one! P.S. I get so jealous when you talk about Trader Joe’s. I went to my first one in California last week (on vacation) and fell in love. Wish we had them in Jacksonville!

Made these tacos for dinner on Saturday and they were awesome, especially when topped with a little homemade guacamole! We just got back from Mexico, so this was the perfect meal to remind us of our trip.

We tried this out last night! SO happy with the results. We used Tilapia and did the cumin, garlic, salt, pepper, cilantro and lime flavorings—It was so flavorful and colorful! I even added a little pepper jack cheese to mine and MMmm I felt so good eating the first one, I had two! I’ll be passing this recipe on for sure! Kudos!!!—dk
