Dinner and Dessert.
Sometimes I like to be domestic. [When “domestic” doesn’t mean doing laundry or cleaning bathrooms.]
Aren’t your vegetables supposed to take up like, half of your meal or something? Whatever.
Tonight we had chicken, whipped sweet + yukon potatoes, and blueberry balsamic brussels sprouts.
Guess what?! This week, I’m going to show you how I roast my chickens. You know, since I’ve been roasting them practically once a week. I am pretty obsessed. It will probably bore you to tears. Oh! And that blueberry balsamic syrup I mentioned the other night? It is just blueberry balsamic vinegar reduced in a saucepan. I didn’t make my own with blueberries and actual vinegar. I’m lazy.
But not too lazy to make dessert. Which was probably the best dessert we’ve ever had.
Whole wheat cookie cups with vanilla ice cream.
I sort of threw it together at the last minute… but if you’re intrigued I will try to remake it again and share. It was the most delicious thing ever but now I feel like I have to go run 20 miles. I should probably stop eating like I’m about to hibernate. This week I will eat apples. Lots and lots of apples.

Question for you….why roast your own chicken when you can get a fully roasted chicken at the store for like $5 bucks? It saves in money, as I would imagine buying a chicken for roasting would be more than $5. Plus it saves in the energy to cook it on your utilities, which would save you more money. I try to cook good meals too but any way to save time and energy I’m all for. I also love the frozen veggies in their own steamer bags. So easy. Just a thought and question.

I need to get over my chicken roasting fear. I’ve bought two, only to discover how incredibly freaked out a raw, whole chicken makes me…so my boyfriend has made two roast chickens. They are really, really delicious!
I agree! I totally want the cookie cup recipe! It looks to die for! And have you ever made brussel sprouts sauteed in bacon? I have made them with pancetta, and they are probably one of my most favourite dishes for thanksgiving. But actually, I’ll eat brussel sprouts with bacon anytime of year…;)

Oh I wish I had the guts to try brussel sprouts. I can’t stand the smell of them. Maybe the blueberry balsamic would take away some of that so I coudl get it close to my face.

Late to the game here, but my fav for brussel sprouts is to halve fresh sprouts, saute in butter and olive oil on low-ish heat until just tender, then I crank up the heat and sprinkle about a cup of parmesean cheese that I grate with a micro-plane grater and continue cooking until the cheese melts and browns on the sprouts. I could almost make a meal out of them.
