S’mores Cake in a Jar.

Judging from the above picture, you can assume I’m doing well. I’m not going hungry, that’s for sure.
Guess what? I had a lovely dinner recipe to share with you today. Obviously, these s’mores jar cakes are not dinner. Unless your name is Jessica and you avoid skinny jeans like the plague and you still sleep with a baby blanket each night, even though you’re married.
S’mores jar cakes clearly top dinner recipes. You told me so. I asked you on Twitter. If you’re upset that you don’t have dinner for tonight… not my fault. If you’d rather see dinner than these s’more jar cakes… we obviously aren’t friends.
Let’s talk mason jars. Do you have any? If not, you can probably stop by a crafty store and pick some up for well under $5. I did that, even though I don’t do crafts. Mason jars are fun. They make me think of fireflies and moonshine and hot summer nights, although insects freak me out, one swig of the hard stuff and I’m out like a light, and spending every waking moment in air conditioning is my life. I sweat.
More on mason jars? I was a little scared, this being the first time I have baked with glass since I made you all glass shard brownies on super bowl Sunday. Mmmm… those were tasty. A little crunchy, but tasty. Not.
Just so we’re clear, s’mores jar cakes have buttery graham crusts covered with fluffy double chocolate chip cake and pillowy marshmallow toppings that are so perfectly browned and bubbly you can taste the campfire and smell the midnight July breeze.
Need more convincing? I think not.
S’mores Cake in a Jar
makes 4 16-ounce mason jar cakes
for crust:
1 1/2 cups graham cracker crumbs
1/2 stick butter
pinch of salt
Preheat oven to 350 degrees.
Melt butter and mix in graham crumbs and salt. Mix until moistened. Spray 4 mason jars with non-stick spray and press graham crust into jars. I began by adding a tablespoon to each, and repeating until graham crumbs were gone. They don’t need to look perfect. I pressed the crumbs down firmly with the flat bottom of a clean screwdriver.
for cake: (from peanut butter hot fudge cupcakes)
1 1/8 cups all purpose flour
1/4 cup dark cocoa powder
1 1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup milk
1/2 cup + 1 tablespoon heavy cream
1/2 cup butter, melted
2 tablespoons sour cream
for topping:
1 bag of large marshmallows
In a bowl, whisk egg and sugar until smooth and no lumps remain. Add milk, cream, butter and vanilla, and mix until combined. Stir in sour cream. Sift dry ingredients together and add to wet mixture. Mix until batter is smooth. Using a 1/4 cup measure, add batter to mason jars one scoop at a time. You only want to fill them up about half way, and the batter should work evenly for 4 jars. Again – don’t worry if it is perfect. Place mason jars in a baking dish and add about 1 1/2 cups of water to the bottom. Bake for 30 minutes, or until cake is set.
Remove cake from the oven and press large marshmallows down on top, being careful not to burn yourself. There is no set number of marshmallows to use, I pressed down as many as I could, about 4-5 each. Heat the broiler on your oven and watching carefully, brown marshmallows for about 1-2 minutes, or until golden brown. Do not take your eyes off them! Serve immediately.
Notes
*The recipe looks really long, but it is actually really easy! *When you put the marshmallows on top and broil, they may sink down below the edges of the chocolate cake. This is normal. The cake it still more than halfway to the top. *These are pretty rich and sweet, and make a really great dessert for two people to share with two spoons… but can still be eaten by one. *You can use other sizes of jars, just use your eye to decided how much batter to use, never going over half way. If you have too much batter, just make a few cupcakes.
Perhaps tonight’s dinner should be more… balanced? Nah.

Fabulous! I made these in small, 8 oz jelly jars. They cooled off soon enuf and were a huuuuge hit. So fun. Love the graham cracker crust at the bottom (loved it so much, might layer it next time). NOw… what to do with the rest of the marshmallows in the bag :) Thank you!
Did you put the mason jars in a glass or metal pan with water in the oven? I’m making these for 40 people and I don’t want to have to start over if the glass breaks!!!
I put them in a glass pan with the water!
I put mine on a cookie sheet and just made sure when the water dried up i added more but i have mine in for over an hour but i used a huge mason jar…..Just make sure to always have water in the pan…..
I have made this recipe twice in the past four days. It is amazing! I have gotten nothing but rave reviews from my friends and family.
It might just be my oven, but I had to bake the cake for about 15 minutes extra than the recipe indicates. They were absolutely worth the extra time!

Ok so how would you hold these hot glass jars after they come out of the oven? does everyone get a spoon and a glove? :)
Hahah well that is an option… but no, as long as you set them aside for a few minutes, they will cool down. A commenter above had the same concerns, made them, and reported back that they are cool enough to handle in a matter of minutes. :)
I’m making these RIGHTTHISSECOND, and I am at a loss for a *clean* screwdriver. However, I’ve found that the head of a stainless icecream scoop works swimmingly. Can’t wait to bring these to my parents’ BBQ tonight.. I know my dad will LOVE them.
Hi Jessica – I would love to make these. Can you just tell me where the chocolate chips are, as your post says the cake is “double chocolate chip cake batter”. Do you just add chips to the batter, and bake as is? Is it worth adding the chips, or do you find it just as good without? Thanks for the input, I can’t wait to make these for my son!

YUMMMM – Do you think these would work with a regular chocolate cake mix or fudge brownie? I’m thinking of making them in small jars to a camping party favor but also to pack on camping trip….while I know warm s’mores are ALWAYS best, do you think they could be packed up for the road?

I think they would work, you are just going to have to adjust the cooking time (and possible temperature?) based on the mix you use. And yes, they could be packed, but they are really best warm. The marshmallows would probably be too sticky to eat unless you have a way to warm them?

Hot Dang…this looks sinful! I am in love with chocolate, and this just looks too good.
These look awesome. I have the same question as another poster: this is called double chocolate chip cake but there are no chips listed as an ingredient or in the directions. Do you stir the chips into the batter or sprinkle on top before they are baked?

And how about those jars. Can I use any glass jar? I just bought an 8 oz jar for a trial version :) but came home to find a little tiny sticker on the bottom telling me I can’t put it in either the microwave, dishwasher or oven. But I can be very stubborn, ignore such signs and try it anyway. I’m just a little scared for a glass explosion…
hmmm… if it says NOT to put it in the oven, I probably wouldn’t. But I’ve also had this happen: http://www.howsweeteats.com/2011/02/how-to-make-glass-shard-brownies/. And that was with a glass pan that could go in the oven. Either way, always use the water bath. But I can’t tell you for sure that it won’t shatter!
FYI, if a glass jar says not to use it in the oven etc it is probably because it contains trace amounts of lead. Not a good compliment to what looks like a more than awesome dessert!

Well, since I’m terrifed of putting glass objects in the oven other than my glass baking dishes….I’ll make this, but make it in a big glass pie pan or something along those lines. I’ll just have to serve it on plates rather than eating it from the jar….but I”m sure it’ll still taste just as yummy! My husband and 3 kiddos will love this! We just roasted marshmallows over the grill on Sunday and it was my 3 year old daughters first time roasting her own marshmallow :D

hey I made that s’mores pie for a “The Help” Girls’ Night In party a few weeks ago and it was fabulous! I have made it 3 more times since then by request and am making it again tomorrow for a nephew’s birthday. Yeah….the people love that pie :-)

I too must try these in short order. I have read and re-read the ingredients and directions and am looking for the ‘chips’ in the double chocolate chip cake. I only see the cocoa, but nothing for the ‘double’ part. Am I missing something?……oh, I just read through the comments and see someone else had asked, but I don’t see your response. Thanks, Kathi
Totally a typo on my part – I meant chocolate cake not chocolate chip. But I do think adding chips to the cake batter would be delicious!

What exactly do you mean by broiling the marshmallows? I am confused… you add them to the jar, then how do you do it exactly?
You should have a “broil” setting on your oven. You set them underneath that!
Has anyone tried to use a torch to toast the marshmallows? I’m wondering if that would work.

I love this concept! I’m thinking of doing this in 1/2 pint jars and cutting the baking time accordingly. Then I wouldn’t have to shop for sturdy long-handled spoons, although the idea of sharing one with someone is really charming. I’m also thinking of adding a layer of chocolate chips on top of the baked cake before adding the marshmallows, then sticking everything back in the turned-off oven to melt the chocolate and marshmallows, then just torching the tops for that yummy golden color.
um. sign me up for these eight thousand times!!
Saw this and fell in love. Hubby is army and deployed, and the one treat he misses is smores now I can make this and maybe in a slightly larger jar so I can put a lid on it…do u think it would travel we’ll…about a week
I wonder if you could “seal” these with a lid while hot, after baking put marshmellows in while hot and put on the lid. I am always looking for home made treate to send to the troops while deployed. My daughter is a chocolate nut and liked the mason jar cakes and pies.
I haven’t tried but I honestly don’t think they marshmallow part would hold up – it would get too sticky and hard to chew. Maybe if you did the graham cracker + cake, then topped it with marshmallow fluff? Not positive, but I think that may work better.
