Blackberry Cobbler Waffles.
Waffles are totally underrated.
They get a bad rap as pancakes’ not-quite-as-fluffy and not-quite-as-simple ugly cousin, with nooks and crannies just deep enough that the glob of butter won’t melt and a front left quarter that frequently hogs all the syrup.
I mean, really. Waffle irons are kind of a pain. As if I don’t have enough pots, pants, mixers, bowls, lids, quesadilla makers, toasters, platters and other necessary items that I use twice a year, you’re telling me that I need to find a uniquely shaped space, somewhere between my cupcake-shaped cake pan and my never used must-have All Clad asparagus pot, for a 13-pound waffle maker that I might drag out on occasion?
Yes. I am. If only to make these waffles. Go buy one. I’ll take the blame. I listen well. Just try me. You can scream and yell and holler all you want at your screen and I will just… sit here and listen.
I would’ve been positively devastated if I didn’t get that asparagus pot, by the way.
Pancakes were much more accessible and commonplace when I was younger, so when it came time to register for wedding gifts, I was over the moon to spy a waffle iron and add it to the list. I once spent an entire summer burning the skin off each of my fingertips making waffle cones at Bruster’s, but it was totally worth it given the french vanilla aroma that I went to bed smelling of every night. And the banana cream pie ice cream that I used to eat by the bucketful. Back-to-school shopping was a blast that year.
Not only did I envision lots of waffle making, but I had grand plans to make waffle cones and maybe even cheese-soaked sandwiches and whatever else you could use a waffle maker for. Which is basically nothing.
Which is what I’ve used the waffle maker for. Nothing. I’ve made nothing about six times.
When I came across a dying pint of blackberries in our fridge, I decided it was high time to break out the iron. I don’t even know why I buy blackberries. I hate the seeds in my teeth. Seeds in my teeth make me lose.my.mind.
FYI: These waffles aren’t terrible for you. It’s not like I threw together flour and sugar with reckless abandon and dumped a gallon of Haagen Dazs atop. So you can drop the raised eyebrows. Sure, there is something creamy and vanilla beany on top, buuuut who doesn’t eat ice cream on their waffles? Not me.
Blackberry Cobbler Waffles
serves about 4
1 1/2 cups flour (I used whole wheat pastry, all-purpose is fine too!)
1/3 cup rolled oats
2 teaspoons baking powder
1/3 cup brown sugar
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs
1 teaspoon vanilla extract
1 1/3 cups milk
1/4 cup butter, melted
2 pints fresh blackberries
vanilla ice cream + maple syrup for serving
Preheat your waffle iron and spray it with non-stick spray. (I also sprayed mine before each waffle)
In a bowl, combine flour, oats, baking powder, sugar, salt and cinnamon. Stir in eggs, milk, vanilla and butter, mixing until combined and smooth. Fold in about 1 cup of blackberries. Make waffles per your iron’s directions.
Heat the remaining berries in a saucepan over low heat and mash with a fork until saucy. Serve waffles with warm mashed berries, syrup and vanilla ice cream.
Oh yeah… the title? They totally taste like cobbler. And that’s coming from someone who shoveled in three bowls of cobbler Sunday afternoon. I can’t tell a lie.

oh my goodness. When I saw the title of your post I thought “oh that sounds good.” Then I saw the pictures and thought “I want to eat that NOW!”
Waffles are underrated! The ice cream is not optional it is obligatory ;)
These look so amazing. DROOOOLING.
I just raced to open this! Blackberry cobbler waffles are a beautiful thing. I like the seeds crunching in my teeth :)
My husband got me a commercial grade waffle iron for christmas which at the time I thought was a bit excecssive. And then I used it. L.O.V.E.
maybe this recipe will be Sunday’s waffle experiment :)
I want one of those!
I can’t even count the wedding gifts I thought I’d use EVERY DAY and never even touched. I used my waffle maker twice and ruined the waffles. These look incredible and worth another try!
I know, I’m actually finding a bunch of them now that I forgot about and getting excited!
OMG these look insane!!!
Waffles! Ice cream! For my birthday, I always get a “super waffle” (so named by Kohy) which consists of a waffle smothered with peanut butter and topped with vanilla ice cream. Oh, and a candle.
I looove blackberries but I haven’t been able to part with the moneys to buy some just yet.
Good God – these looks amazing.
Omgsh! I want those right now! Simply amazing!
Oh wow…I officially want waffles now. These waffles to be precise. And bonus, I already have a waffle iron (that totally gets pulled out about twice a year…).
And as one who worked at TCBY for a few years in high school and college, waffle cones smell the BEST! But it does get old smelling like them ALL the time! ha! :)
Yes it does!
Umm, yes please! The messier stuff is, the better it usually tastes
Ummm… blackberries are amazing, these look incredible, and for the record I TOTALLY prefer waffles to pancakes, HANDS DOWN!! (…but never make them at home due to a total lack of money/space for a waffle iron)
Which reminds me, it’s Unitasker Wednesday: http://unclutterer.com/category/unitasker-wednesday/
Pancake’s Ugly Cousin? lol you crack me up. I think Pancake is Waffle’s Plain Jane Cousin. I love waffles and will always pick it over pancakes.
You put ice cream on top of your waffles. I love ice cream. I can’t wait to eat my next waffle so I can slap a gallon of ice cream on top!
I have always resisted buying a waffle maker for that exact reason: too many seldom-used gadgets! And I was sticking to my resolve until I saw this recipe. Now I am a broken-down woman. I must make these!
aren’t the blackberries just gorgeous this season? i still don’t have a waffle iron, i think the husband might have a fit if i buy one more “necessary” appliance.
OMG! This is too much. Too much deliciousness.
Must make ASAP!
I want to live your life.
Ohh these look amazing! Love the vanilla ice cream/blackberry combination.
I think I like pancakes over waffles. The all over crunchiness with the fluffy interior is just SO good!! Don’t get me wrong…I love pancakes, and I don’t have a waffle maker, so pancakes always win. Unless we’re talking French toast…because French toast will ALWAYS win. ;)
Yum! What a hot mess that I want to be a part of. hehe. :) Looks very tasty!
Mmmm I love me some waffles. They’re especially good when you get ice cream in every single square. Because we all know waffles and ice cream are made for each other :)
These look so yummy. I think waffles are super underrated and super delicious.
HELP NEEDED! Off topic but my best friend and her boyfriend broke up, she thought he was the one and I need a recipe for something that will “mend a broken heart” or as best as a baked good can. Any ideas? It would be so appreciated.
Aw man! So sorry for your friend. I vote these, hands down: http://www.howsweeteats.com/2010/08/better-than-crack-brownies/
I havent had waffles in forever!! These sound so incredible. Especially with the ice cream on top. Cant go wrong. :)
Oh my! So delicious looking.
If I buy the wafflemaker, can I send you the receipt? ;-)
HOLY WOW. I would like that for breakfast every day.
Hmmmm….I can’t tell what’s better. This recipe-or the fact that I can now honestly justify a new kitchen gadget! (um…if you have any use for a “dumpling maker” that would be appreciated as mine is still sitting in the box 4 months later…)
I love waffles because of all the nook and crannies hold ALL that syrup!
These look absolutely amazing! I’ve been thinking about trying my hand at sweet potato waffles, but I might try these first!
I love waffles, those I am making today, I don’t care when, they are getting made.
why is everyone making waffles today! you`re the third blog ive seen with waffles on the front page. i think it`s a sign, and it`s telling me to eat some waffles..kekeke
I love waffles! I got my waffle maker at Goodwill and use it quite often, actually!
Mmm, you need to make pumpkin waffles. Best thing of my life. I made this recipe (http://pumpkinwaffles.wordpress.com/ultimate-pumpkin-waffle-recipe/) a few days ago and it is SO GOOD.
Ice cream is a must on waffles. These look like messy, purple deliciousness.
wahhh i hate waffles but these look beyond! i would eat them in an instant! and seeds in my teeth are the worst.
I think I need to buy a waffle maker now.
Remind me that if I ever make these, I need to wear a bib. And stock up on Spray N Wash.
now THAT would be my ideal reward meal for after my show, Seriously…warm waffle, fresh berries and ice cold ice cream? HELLO FOODGASM
Haha I can’t lie, when I read the line “mash them with a fork until saucy” I couldn’t help but think of some blackberries with ‘tude. These look so painfully good.
Oh. My. I am actually salivating, despite having just eaten dinner.
Those look amazing!

Ice cream for breakfast sounds amazing!
These look awesome! I actually have two waffle makers, can you believe it? And I never use either one. Sad.
oh man thats looks awesome! I love blackberry anything! i was just eating some amazing homemade blackberry pie the other weekend…i think i need some waffles now!
I would eat that for breakfast, lunch, or dinner. Or more specifically, right now, when I could a combination of antioxident detox and comfort food if you catch my drift.
Yummm I could eat about twelve of these right now, no lie!!
You DO realize you celebrated Waffle Wednesday, right?? This is totally making the breakfast menu this weekend!
I would love to wake up to a plate of these beauties!!!
