Roasted Potatoes To Change Your Life.
As an awkward adolescent I was many, many things.
I was the proud owner of many silk shirts. Purple being my favorite. Paisley vests too… they went over top of the shirts. It was nice. For the 80s and 90s.
An avid, obsessive fan of Elizabeth and Jessica Wakefield. I may or may not have planned my entire life around theirs.
A spiral-bound notebook hoarder, in which I would write tons of tween novels involving porch swings and hidden lakes and boys named Todd who wore rolled-up jean shorts.
The owner or three consecutive horrific perms. I know I’ve told you this 8 billion times, but I’m gonna tell you again: my mom told someone I looked like Roseanne Barr with that hair. Uhh… pretty sure that is not a compliment.
Know what else I was? A potato lover. I was a PO-TA-TO freak. Loved ’em. I mean… really loved them. If you asked my 14-year old self what my favorite food was, I’d tell you potatoes. Back then I really only ate them mashed, baked with butter, salt and pepper, and in a casserole that my mom topped with potato chips… and they rocked my pubescent world.
Then again… what casserole with potato chips wouldn’t rock someone’s world? Really… did we really stop serving those?
So you know… I loved these potatoes until I ate a school lunch one day. Not even joking, it scarred me. I remember seeing ‘parsley potatoes’ marked on the coral-colored paper that my mom had sticky-tacked to one of the kitchen cabinet doors. Score one for me and my hideous hair! Potatoes for lunch… I hadn’t been this excited since tye-dyed fruit roll ups were invented.
Too bad they were the most disgusting food to ever cross my lips. True story. They were mealy and cold and flavorless and that parsley? Ugh. Add that to the list of green things I won’t touch with a 10-foot pole.
And that there ended my love affair with potatoes. A repulsive school lunch… a sad day. Eventually I started to love them again, but they’ve never topped my favorite-foods like they once did.
‘Til now.
When I shared my Instagram-obsessed weekend fun with you on Sunday, I included a lil’ pic of these potatoes that my uncle made. THEY WERE SO DARN DELICIOUS. I had to scream that. Otherwise you might not get the point. I made them yesterday because I couldn’t stand one more day without them. We had them with roast chicken… mmmmmm.
Hello potatoes… you complete me… again. Except this time my hair looks better.
Roasted Potatoes with Bacon, Gorgonzola, Cilantro and Other Stuff
Ingredients
- 3 pounds baby yukon gold potatoes, quartered or halved
- 2 slices of uncooked bacon, chopped (he used canadian bacon, I didn’t have that on hand)
- 1/2 vidalia onion, chopped
- 1 teaspoon olive oil
- 2-3 ounces of gorgonzola cheese, crumbled (you can sub cheddar if you don’t like blue)
- 3 tablespoons chopped chives
- 2 green onions, chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- salt and pepper
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with non-stick spray.
- Add potatoes and onions to a large bowl and drizzle with a teaspoon of olive oil (do not use more as the bacon will release fat when cooking) and a bit of salt and pepper. Toss with your hands and try to coat most of the potatoes. Lay them on the baking sheet and top with chopped bacon. Bake for 15 minutes, flip, and bake for 15 more. Flip one more time and cook for 15 minutes longer. Bacon should be crisp at this point.
- Remove potatoes from oven and immediately sprinkle on crumbled gorgonzola. Let potatoes sit and cool for 5 minutes, then top with chives, green onions, cilantro and parsley. Serve right off the baking sheet so you don’t lose any gooey cheese.

Grr, stupid school lunches! I can almost not eat ranch dressing because I used to drown my salads in it at school. Ranch dressing and bacon bits…that kind of negates the good part of a salad, no?
And I am currently obsessed with roasted potatoes, love them in all varieties, so this recipe is getting bookmarked. :-)

My 9 year old HATES potatoes. Probably as much as you loved them. When I showed him this picture he had a little look of interest. I too am obsessed with potatoes, I love love love them. I remember when I was a poor college student I would buy a bag of potatoes and that is what I’d eat for the week. Fried, baked, boiled, roasted … need I really continue??? So, we’re going to try this recipe of yours and hope my guy will start not a love affair but some sort of a break through with his hatred of potatoes! Wish me luck :)

Ohmygosh! Thank you, Jessica! I’ve been contemplating what I’m going to make as a side dish with my Asiago Baked Salmon tonight (my husband and I LOVE this salmon, we eat it about once a week!). And I was thinking something potatoes…..PERFECT! I guess it will be a complete How Sweet meal tonight :)
PS. Sometimes I think we shared the same childhood lol, except I was in plaid instead of paisley. Oh, and I also have the pleasure of experiencing that dreaded perm. I’ll have to share some pictures with you when I dig them up….I had planned to hide them forever!

I have never had gorgonzola on potatoes. It sounds and looks mind blowing.

Another true story: I read every single Sweet Valley twins book my paltry middle school library had to offer. Twice.
Slightly more embarrassing true story: I once dropped one of the aforementioned SV library books down a storm drain when getting out of my car. Hysterical crying ensued. I then proceeded to use my allowance to buy the library another copy to replace the one I had so griveously lost.
Awwww! Hahaha.
Bah! Icky misspelling: “grievously.” That’s what happens when I’m illicitly on my office computer.
Also, for the record, the storm drain / hysterical crying incident happened *in* middle school. Not like…recently. Just sayin’.

Funny! The other day when I made your roasted potato salad – with lots of cilantro and no green beans, I very nearly reached for the tub of blue cheese (my favorite food), but I guess I just wasn’t adventurous enough. Will have to try these ASAP!
I never thought of adding cilantro to potatoes! I love that idea! And school lunch ruined French Toast for me for awhile…but it gave me Walking Tacos so I suppose I can’t complain.

Omg, I’m with you on spiral notebooks (and all stationary, pens, etc. really), and the Wakefield twins.. Not to mention the Babysitter’s Club and the Sleepover Friends (old school- I found them at the library when I was like 9 and became obsessed with finding the whole series!).
Paisley vests! I’m counting the days until they come back in. And don’t get me started on the Wakefields. I recently moved to Italy – aka, the land of amazing food and utterly baffling television – and they regularly show reruns of Sweet Valley High, completely dubbed into Italian. Imagine my surprise when I heard the theme song from the other room!

I love potatoes too, but usually only eat ’em raw. Nothing beats the heat like a freshly sliced crunchy chunk of potato. :)

I hope those silk shirts were firmyly tucked into high-wasted tapered light-denim jeans. Bc if they werent… well then you were definitely cooler than me. (Also had a spiral perm.)

What an awful school lunch story! It makes me sad all the foods people hate because school lunches made them afraid of them, or just plain grossed out. Lol.
Potatoes in all forms are awesome :) We love them around here, especially roasted like this. Although mine are never quite as fancy. These look amazing, I love all the flavors in there :D

Oh potatoes – I love them too! I’m excited to try this next time I make a nice beef tenderloin – I would imagine the gorgonzola would pair well with that too.

Oh how I love potatoes, let me count the ways. There is nothing like really good creamy mashed potatoes. A little butter, salt and pepper. Ultimate comfort food. Now I’m into roasted potatoes. Once had an ex who insisted that potatoes were nothing but starch and weren’t any use. And this from a guy who ate white rice at least once a week. (Notice that I said ‘ex.’)

I had that same issue with subs (although I never really lived for them in the first place).
One disgusting pre-made school cafeteria submarine sandwich and I have never been able to eat one again. I know they’re really just big long sammy’s, which should be delicious, but the experience scarred me. I can’t even smell a Subway restaurant without gagging a little. Much to my fiance’s chagrin because he loves subs but I refuse to go out and get one with him.
Oh well. It’s not like I need one more excuse to eat that much bread in a sitting…
