Chewy Chocolate Chunk Marshmallow Cookie Bars.
I have no sense of direction. Like… absolutely none.
Hold up, let me check just one more time…
…yep. None. At all.
Yesterday I was driving home from a friend’s house and tried to take a shortcut and ended up lost during rush hour for 45 minutes. I was GPS-less and all my iPhone has is that maps thing (who can read those and city-drive?) and after glancing at that a few times I almost killed myself and half the city of Pittsburgh on wheels. Well, at least I think that is all my phone has but last time I checked, technology wasn’t my strong point either.
And one time (at band camp), as I was driving to the same friend’s house to watch the VERY important Dawson’s Creek series finale (team Pacey fo’ life!), I went across the wrong bridge. Then I got in the wrong lane. Then I ran over one of those giant orange cones. I would have kept going, except the owner of that giant orange cone (a hefty police person) flagged me down. Any other wise person would have just kept going… the man was on foot for gosh sakes during rush hour traffic on a BRIDGE. Over WATER.
But no. I pulled over like a nice girl and he gave me a ticket and screamed at me for destroying his orange cone (uhh… pretty sure you can get another one of those) and almost crushing his toes. I mean… it’s not like I MEANT to do it.
I was still lost and had no idea how to get to my destination and I wasn’t dare asking Mr. Orange Cone so I called my mom and just screamed and cried and threw a massive tantrum and acted like it wasn’t my fault, because really, why should I need a sense of direction? ANNNND now I was going to miss the beginning of the Dawson’s finale.
This is also sort of reminiscent of what happened this past Sunday when I asked Mr. How Sweet what nine times twelve is and he just stared me down like my brain was full of mush. I flipped out and told him that “I don’t need no stinkin’ math skills” and who cares if I don’t know what 30% off of $79.99 is because seriously, when will I ever need that?! Besides when I want to buy a top that is $79.99 and 30% off. Then I was all, “Seriously, don’t even look at me that way because you don’t even eat things that taste good, like avocados and coconut. I would much rather eat really good food then be good at math.”
Yeah.
Well… I have no point, except for the fact that after I finally returned home last night (um, 3 hours later), I soothed myself with three of these cookie bars. Doesn’t chewing chewy things relieve stress or something? I’ve got that covered. My jaw got a workout. Chocolate works miracles.
Chewy Chocolate Chunk Marshmallow Cookie Bars
[adapted from the giant rainbow [+cook’s illustrated, I think] cookies]
makes one 9 x 13 pan
2 cups of all-purpose flour
1/2 teaspoons baking soda
1 1/2 sticks (12 tablespoons) of salted butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 cup chocolate chunks
3/4 cup marshmallow fluff
1/2 cup crisped rice cereal
Preheat oven to 350 degrees F. Butter and flour a 9 x 13 over-safe baking dish.
Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the butter and sugars until they are mixed. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. Fold in chocolate chunks. Gently fold in marshmallow fluff until you have a thick “ribbon” throughout the dough. Finally, fold in rice cereal.
Press dough in the baking dish evenly. Bake for 30-35 middles, or until edges are golden and middle is just a little jiggly. I covered my dish with foil about 25 minutes in so the top would not get too brown. Let cool for 30 minutes, then cut!

Those bars look awesome and just yesterday I cooked with a jar of fluff, cereal, and chocolate chips. I posted a teaser pic to my blog but havent gotten all the pics edited so recipe isn’t up but these bars of yours look great!

Oh- and I think there is a free Mapquest app for your Iphone that speaks directions out loud for you so you don’t have to look at the map! ;-)

I 2nd that app! It is way more effective than what comes standard on an iPhone. Especially when you live in a heavily populated city, which I do…LA, CA.
Jessica-You MUST get that app. In addition, there are new apps available that don’t allow you to receive text messages until you stop at at a light, and also today I heard about a new app that let’s you listen to your text via bluetooth, ect., and allows you to respond in text by talking…no texting?! What???AMAZING!
My best friend from high school and I should not be allowed to drive together. I swear, everytime we do, we end up in the completely wrong place. Like the time we were so busy gabbing, I missed my exit and we ended up 30 miles past our destination. Yeah, that happened. Or the time I realized I did not want to turn right, and backed out of the turning lane. I’m pretty sure that’s illegal, so we’re going to pretend that one didn’t happen…

I have no sense of direction either….to this day, the only way I can tell right from left is to make an “L” shape with my thumb and pointer finger….the hand that looks like a backwards L is the right and the one thats a normal L is the left hand. Sad, I know.

Tell me about not having a sense of direction… I’m not allowed to navigate the group when we go diving because I don’t understand compasses. Even WITH a compass, I get lost. Everything looks the same down there! Great bars, I used to LOVE fluff as a kid!

LOVE that FLUFF!!!! Originally being from Rhode Island and now living in Arizona, you can’t get the stuff out here and that’s all my son wants for lunch. I order it by the case and have 10 tubs of the stuff sitting in my closet.

Those look so yummy, I totally agree about trying to use the Iphone maps while driving alone, and I was a huge fan of Pacey too! I started watching Fringe just because Joshua Jackson is in it :)
It’s not you, it’s this city! Pittsburgh makes no sense as it is and then you throw in all the construction and Batman traffic and you might as well just give up. Go across the wrong bridge and you’re screwed/ stuck in traffic for 2 hours. There are even times when I am driving downtown and my GPS won’t get a signal because of all the tall buildings. That being said, I would never leave here. Lol. It’s just a driving nightmare at times.

Is there another product this is a “marshmallow cream”? If so, you could use that, or you could add in mini marshmallows (maybe about 3/4 cup) or leave it out completely!
If I do recall, my father actually bought orange cones to teach me how to parallel park (I was THAT good), so yes, you in fact, CAN buy those cones easily. As far as math is concerned, ha! I have no use for it, that’s why I have a calculator on my phone, right???

Jessica, I LOVE you and your blog! When I read ‘team Pacey fo’ life’ I had such a flashback to my hatred for Dawson and constantly messing up the Joey Pacey dynamic! And who could forget, how I (perhaps a little meanly) laughed as Dawson crumbled on the bridge in tears as Joey raced to find Pacey on the boat and sail away!

My sense of direction is also terrible. My husband always wants me to navigate. Can you already see a problem? Oh, AND I always get my left and right confused. I will be saying right as I point left. Or vice versa. When we lived in Germany, we tried to visit Nuremburg a few times, since it was only 45 minutes away. After the first trip, we never drove again. We always took a train, and the taxi to get to the train. And celebrated with Jager shots, but that’s a whole ‘nother story.
Chocolate and marshmallow, in a bar? That is almost as good as the Jager…..
I am TERRIBLE at left and rights. I attribute this to teaching Les Mills classes in which I had to face the class and do the movement with my right arm but say “left” so they mimicked me and vice versa. It’s bad.
