Chewy Chocolate Chunk Marshmallow Cookie Bars.
I have no sense of direction. Like… absolutely none.
Hold up, let me check just one more time…
…yep. None. At all.
Yesterday I was driving home from a friend’s house and tried to take a shortcut and ended up lost during rush hour for 45 minutes. I was GPS-less and all my iPhone has is that maps thing (who can read those and city-drive?) and after glancing at that a few times I almost killed myself and half the city of Pittsburgh on wheels. Well, at least I think that is all my phone has but last time I checked, technology wasn’t my strong point either.
And one time (at band camp), as I was driving to the same friend’s house to watch the VERY important Dawson’s Creek series finale (team Pacey fo’ life!), I went across the wrong bridge. Then I got in the wrong lane. Then I ran over one of those giant orange cones. I would have kept going, except the owner of that giant orange cone (a hefty police person) flagged me down. Any other wise person would have just kept going… the man was on foot for gosh sakes during rush hour traffic on a BRIDGE. Over WATER.
But no. I pulled over like a nice girl and he gave me a ticket and screamed at me for destroying his orange cone (uhh… pretty sure you can get another one of those) and almost crushing his toes. I mean… it’s not like I MEANT to do it.
I was still lost and had no idea how to get to my destination and I wasn’t dare asking Mr. Orange Cone so I called my mom and just screamed and cried and threw a massive tantrum and acted like it wasn’t my fault, because really, why should I need a sense of direction? ANNNND now I was going to miss the beginning of the Dawson’s finale.
This is also sort of reminiscent of what happened this past Sunday when I asked Mr. How Sweet what nine times twelve is and he just stared me down like my brain was full of mush. I flipped out and told him that “I don’t need no stinkin’ math skills” and who cares if I don’t know what 30% off of $79.99 is because seriously, when will I ever need that?! Besides when I want to buy a top that is $79.99 and 30% off. Then I was all, “Seriously, don’t even look at me that way because you don’t even eat things that taste good, like avocados and coconut. I would much rather eat really good food then be good at math.”
Yeah.
Well… I have no point, except for the fact that after I finally returned home last night (um, 3 hours later), I soothed myself with three of these cookie bars. Doesn’t chewing chewy things relieve stress or something? I’ve got that covered. My jaw got a workout. Chocolate works miracles.
Chewy Chocolate Chunk Marshmallow Cookie Bars
[adapted from the giant rainbow [+cook’s illustrated, I think] cookies]
makes one 9 x 13 pan
2 cups of all-purpose flour
1/2 teaspoons baking soda
1 1/2 sticks (12 tablespoons) of salted butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 cup chocolate chunks
3/4 cup marshmallow fluff
1/2 cup crisped rice cereal
Preheat oven to 350 degrees F. Butter and flour a 9 x 13 over-safe baking dish.
Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the butter and sugars until they are mixed. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. Fold in chocolate chunks. Gently fold in marshmallow fluff until you have a thick “ribbon” throughout the dough. Finally, fold in rice cereal.
Press dough in the baking dish evenly. Bake for 30-35 middles, or until edges are golden and middle is just a little jiggly. I covered my dish with foil about 25 minutes in so the top would not get too brown. Let cool for 30 minutes, then cut!
I might get lost more often.

Oh yes. I sure did. Until my parents told me that I wasn’t allowed to watch it anymore because I “didn’t need to be concerned with those adult situations.” Granted they were right (I think I was in like 4th or 5th grade) but I still found a way to sneak it. I love watching reruns!

PS I’m completely the same. I’ve worked in my building for 5 years and I still can’t make it from the elevator to my desk without getting lost.

Chocolate solves everything. Yesterday, I yelled at everyone in my house: my husband for having the nerve to take the day off work when I took the day off work to get stuff done WITHOUT HIM, my son for taking too long to get ready for his eye doctor’s appt (which was canceled, which led to arguments with the eye doc’s office and the health insurance company), and my daughter for running her blue slush thru our fridge’s ice maker because she thought it would be cool to have her own slush maker. It was a long day, but maybe these bars will make them start talking to me again.
Yikes. You had a DAY. Make these. Eat them.

These look really, really good. When I was a kid, we used to make sandwiches with marshmallow fluff and peanut butter. They were called “fluffernutters,” and they were awesome! Oh wow, may be peanut butter would work in this recipe too. It goes great with all of the other ingredients!

You read my mind today- I knew I wanted to make a bar cookie, something with marshmallows, and this is going to be it. Sometimes my boyfriend forgets that I have no sense of direction, and when I ask him which way to go, he’ll tell me “east.” Then I throw a fit until he specifies that he meant “left,” as if “east” is a useful piece of information…

Dawson’s Creek = Best. Show. Ever. I too was (and still am) in love with Pacey!! Like others have mentioned, I started watching Fringe solely to get my fix, but that show is kind of over my head and I never finished the first season because I had no idea what was going on. There just wasn’t enough teen love drama for me to stay interested. :)

That iPhone maps feature is a total joke anyway even if you could read + drive with it. One time it sent me completely in the wrong direction and into a hilly park instead of downtown. Scary. Just eat marshmallow fluff and avoid driving. It’s the safe thing to do.

How funny about your driving experience! I have a friend that I get lost on the way to her house everytime too! I don;t know why this happens but its always when I think I got it (without the GPS) silly me!

Totally feel you girl! I get lost all the time and can’t even tell my right from my left. There have been many times when the directions say ‘turn left at Main St’ and I turn right and can’t figure out where the place is.
By the way, I made your milk chocolate cupcakes yesterday. I haven’t tasted the baked version yet (their for a birthday party) but the batter was amazing. I may have had a small bowl of it.

You should try the Mapquest app! It gives you actual step by step directions on your iPhone…just like a real gps!
Same here…NO sense of direction at all…when I moved to Los Angeles I would go a half hour out of my way to start from a familiar place to get somewhere else. So embarrassing. I have such an arsenal of excuses I use for getting lost…it’s hilarious.
I think it’s genetic…no one in my family is good at it…and some people can just do it with no effort. Makes no sense at all…

I’m terrible with directions too! and sort of driving in general. The one accident I’ve been in was caused by me not even realizing I was on a one way street and making a left turn from the middle lane right in front of another (poor, unfortunate) person. Speaking of driving and directions, I’m making these for our 14 hour road trip next week.
Why must you always ruin my diet I’m trying to start but really keep putting off with your posts like this? You know I have to make this now.
You’re sense of direction sounds like mine. I managed to turn a 20 minute drive into a three hour one. I ended up in some small town that google maps didn’t recognize, my friend was trying to gps where the hell I was, and almost hit a deer. Needless to say I got a gps for Christmas that year, it’s made my life much easier, especially the re-routing option, aka when I don’t actually listen to the gps lady and still miss turns. :)

I’m curious how the fluff comes through in this recipe..I imagine it sort of melting into the cookie…does it stay marshmallow-y? Like marshmallow ribbons/swirls? I don’t use fluff enough to know!
It depends on how much you “swirl” it in. If your ribbons are really thin and you mix it a lot, it will melt into it and just get almost caramely and chewy and gooey. If you leave big ribbons, a bit of it will stay like “fluff.”

The Gps motion X drive app is awesome. It’s .99 last I checked and I couldn’t resist trying it when my tomtom died. It’s $20 to keep the voice after your trial week or month or something with it, but come on! Google maps app sucks, agreed. Worth a shot IMO.

I DO have the marshmalllow fluff,,,,but that wont help me. except if I have a spoon to eat it with, which Ill have to do until I get the rest of the ingredients. good thing a hurricane is hitting my area soon. yay…
