Cheddar + Brown Sugar Cornbread Muffins. {Dinner Tonight: Part 2}

I know you. I know what you’re thinking. Specifically you there… who is eating breakfast while reading your screen with glazy eyes and wondering why.the.heck I’ve gone and ruined cornbread. Hush.
By the way, you have milk on your chin.
Same goes for you, with your eyelids drooped halfway because it’s Friday and… well, you just want to get out of work. Is it the happiest hour yet? Let’s start early.
But no. These are not weird. Trust me.
See that little golden brown jacket the muffin below is wearing? That’s a caramelized coating of mixed brown sugar, sharp cheddar and… crunchy cornbread stuff. I think that’s what it’s called. You bowl of chili is begging for one.
Plus, we all know that muffins are just cupcakes without hats.
Cheddar + Brown Sugar Cornbread Muffins
[adapted from my fluffy delicious cornbread]
makes 12 muffins
1 cup whole wheat pastry flour
1 cup finely ground cornmeal
1 tablespoon baking powder
½ teaspoon salt
3 tablespoons brown sugar
1/4 cup creamed corn
1/2 cup butter, melted
1/2 cup milk
1/3 cup heavy cream or half and half
1 egg
1/3 cup freshly & finely grated cheddar cheese
Preheat the oven to 425 degrees F.
Combine flour, cornmeal, sugar, salt and baking powder together and mix with a spoon. Add the egg, corn, heavy cream, melted butter and milk, stirring until smooth. Fold in cheddar cheese. Spray a muffin tin with non-stick spray (or use liners) and using a 1/4 cup measure, spoon batter into each muffin tin. Bake for 15-18 muffins, or until tops are golden and muffins are cooked through. Serve hot with cinnamon or honey butter.
I think the wisest thing you could do would be to spread these muffins with some of this.

I think these sound fantastic! To me, cheese can definitely be paired with sweet flavors (after all, don’t some people put cheddar on their apple pie?) and these muffins are proof of that.

Hahahah. You are right, I am reading this while eating breakfast, my eyes half closed. But I like the idea of cheddar in the cornbread. Cheddar makes everything better after all right? I just made chili last week, have some frozen in my fridge. When it comes out next I think I’ll need to make these muffins to go with it. Happy Friday!

I am a big fan of sweet and savory combined in one great dish!! I can have corn muffins three times a day! this look very very delicious, I just have the finish first the corn casserole that is sitting in my fridge :)
I freaking love corn. I could eat it 3 times a day too.
and if there is cheese and brown sugar involved I would say 5 times per day – I should have my 2 daily snacks!!

When I read your chili post yesterday I was hoping for cornbread today! I love creamed corn in corn bread. It adds some much needed texture and creaminess. And cheddah makes it bettah

Mmmmm, corn bread and chili might just be about the best combo ever. (Well, I mean. There’s chocolate and peanut butter. And chocolate and marshmallow. Chocolate and anything? Except chocolate-dipped cornbread might be weird. Must think on this.)

Sugar and cheese in corn bread sounds like the most amazing combo ever! Sweet, savory, and cheesy all in one little muffin that would sop up chili, sign me up! This whole cheesy and sugary thing should catch on, that means these totally work for breakfast, lunch, snack, dinner and even dessert. Logic.
I don’t know. This goes against the whole mornin’ muffin thing. I am sure it tastes great but me likes my muffins sweet, loaded with erm…sugar and 10,000 calories :p Although this makes for good bite sized pieces of dinner bread. Gotta try.

I love how many different versions of cornbread there are out there. And I’ve never met one I didn’t like! I don’t think sugar and cheese is weird at all, but then again, that could just be my inner fat kid talking.

Oh yea! Just mix pb and your favorite syrup to desired consistency and shmear on bread. Dip in chili or just eat straight :) It’s an Indiana specialty!

Those would be so perfect for brunch! I could see my bf loving them with little country ham bites mixed in and slathered with cinnamon butter. I might have to remember that one next time I have bad news. Corn muffins w meat in them while watching football sounds like the perfect way to slip in the fact that I spent our whole grocery budget on one trip to Whole Foods – whoops.
