Peanut Butter Pretzel Granola Bars.
Here… have one of these. I made them just for you.

But at least I know how to share.
Peanut Butter Pretzel Granola Bars
[inspired by my little Clif bar addiction]
makes one 9 x 13 pan
1 cup old-fashioned rolled oats
1 cup puffed rice cereal
1 cup crushed salted pretzels
1/4 cup ground flaxseed
1/4 cup brown sugar
1/4 cup whole wheat flour
1/2 cup chopped dry roasted peanuts
2/3 cup creamy peanut butter
3 tablespoons butter, melted
2 teaspoons vanilla extract
1/3 cup + 1 tablespoon honey (agave should work too)
2/3 cup mini chocolate chips
Preheat oven to 350 degrees F.
In a bowl, combine oats, flour, puffed cereal, pretzels, brown sugar, peanuts, and flaxseed, and stir to combine. Add in peanut butter, and mix with a spoon to break it up and create a “dough,” mixing it in as much as you can for at least 5 minutes. Mix melted butter with vanilla extract and add to dough, then mix. Add in honey and stir to moisten completely. Fold in chocolate chips.
Spray a 9 x 13 inch baking dish with non-stick spray and press the dough into the pan. Bake for 20-25 minutes or until the top is golden brown. Remove and let cool completely before cutting – there may be minimal crumbling but they should hold together completely. If you find they are crumbling, stick them in the fridge to chill for a few minutes and try again.

pb pretzel is my fav mojo bar too!!! its so good. like no only are there pretzels and peanut butter chips, but also peanut butter FILLED pretzels!! haha im sure you know that but felt like emphasizing it. haha yay!! :)

I was staring at my pantry the other day with the realization that I have ingredients for granola bars – in bulk (this is why they shouldn’t let me go to Trader Joes). These bars sound great – peanut buttery, chocolaty, crunchy!
um, yeah…this was so not necessary on the first day of my “diet”. You are a Saboteur, my friend…

Two of my favorites, pretzels and sugar! Sweet! This will be great for lunches next week! How do you do it? You make all these wonderful dishes, how do you not eat them all? I like to cook and bake, and I eat one or two, and give the rest away, but I’m afraid that one or two is going to my hips. It’s so hard! Do you workout a lot to compensate for the sweets? Just curious, I’m trying to figure out my own way of dealing with sweets and staying in shape. It’s so hard, when there are so many good things out there to eat!
I bake and cook every single day, so I really am not tempted to eat every single thing. Sure, sometimes there are things I want (like the croissants) but other things don’t really tempt me, just because I am constantly around them!

Why is sweet and salty so, SO delicious? My college had chocolate covered pb filled pretzels in bulk bins at the dining hall. It was dangerous. I usually used “women’s troubles” to justify taking a bag the size of a chihuahua home with me.
