White Chocolate Peanut Butter Oatmeal Cookies.
Many moons ago I made you chewy oatmeal cookies.
Long ago and far away (what? not really.) I made you peanut butter cookies.
Most of you are smart (er than me) and already combined the two… and while I’m a little late to the game I’d like to ask you a question: can I come live at your house? I promise not to act like a total stooge.
These cookies are a complete copout because they are just a marriage of those other flavors I’ve made. Simple, easy, copy cat. But sometimes… sometimes I just can’t think of anything else. Sometimes my brain is mush. I walk around in a fog. I mix whacked out ingredients like cheese and something that doesn’t go with cheese. (Which, let’s be honest… is nothing.) Sometimes I just can’t think of anything to make. The ship has sailed.
I also whine about it a lot.
I definitely don’t hide the fact that I’m unequivocally annoying.
You’re so lucky you’re not here.
Sigh.
So.
I’ve been feeling a little lost in the baking department lately. My brain is devoid of any interesting creations and my last batch of cupcakes exploded then sunk in the middle. And the truth is, even though my teeth could not possibly get any sweeter, I prefer cooking over baking. I loathe… and I mean loathe… following directions. Hence my cupcakes’ sunken explosion. And last week’s sexy 1990s-inspired trifle, complete with Cool Whip in the instructions. And my copout cookies that I only made for you… my invisible internet friends. Oh! I guess I also made them for my visible friends (read: blood relatives) during game day yesterday… but here in Pittsburgh can we even say we watched a game?
That’s what I thought.
White Chocolate Peanut Butter Oatmeal Cookies
[adapted from the giant rainbow cookies]
makes about 18 cookiesÂ
1 1/4 cups all-purpose flour
1 cup of old fashioned rolled oats
1/2 teaspoons baking soda
1/4 teaspoon salt
8 tablespoons of unsalted butter, melted and cooled
6 tablespoons of creamy peanut butter, melted and cooled
1 cup brown sugar
1/2 cup granulated sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 cup white chocolate morsels/chunks
1/2 cup peanut butter morsels
Preheat oven to 325 degrees F. Add butter and peanut butter to a microwave safe bowl, and heat in 30 second increments until melted. Let cool completely.
Mix the flour, oats, salt and baking soda in a bowl and set aside. In another bowl, mix the cooled butter/peanut butter and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add dry ingredients and mix until a dough forms – it will look crumbly at first, but it will come together. I even used my hands to bring it all together. If necessary, add 1-2 teaspoons of milk, but I did not need this. Fold in white chocolate and peanut butter chips.
Shape the dough into a ball the size of a golfball. Place on a baking sheet two inches apart and bake for 10-12 minutes or until the edges are slightly brown. The centers should be soft and slightly puffy. Do not over bake. Let cool completely then dig in!
Oh and P.S.: these cookies taste good.

I don’t know how you can say “My brain is devoid of any interesting creations” — omg you are one of the most creative cooks out there! I’ve often wondered, if she’s been blogging for 365 days per year x 2 yrs++ and most days of the year she comes up with a new recipe…I could NEVER come up with that. Most people couldn’t! I am constantly amazed by how many NEW things you make. Daily.

There isn’t a doubt in my mind that in a few days time you will concoct an absolutely amazing baked good – you’ve got the creative juices, girl; you’ve proven that time and time again! These cookies look divine – I’m a total sucker for white chocolate, and both peanut butter and oatmeal are basically food groups in my kitchen ;).
Yum! I hate (loathe) chocolate chips in my cookies but white chocolate chips are an entirely different story. These are Kelly cookies for sure! :)

For Pete’s sake! Combining two wonderful varieties of cookies is not cheating! It’s like…augmenting! I mean, do you think the guy who invented peanut butter and jelly was like “I mean, I know these two things are already pretty good on their own…it wouldn’t be all that innovative to smush them together…OH WAIT!”? Exactly.

This is such a coincidence because yesterday I made white chocolate chip oatmeal peanut butter brown sugar bars! My blog on it won’t be up until tomorrow though! My friend from work saw your post and then saw what I had made and asked me if I got the idea from your post. I didn’t but totally random! I say…it’s always a good idea to throw peanut butter in…makes everything better! :)

I see in this recipe you also melt the PB. What is the advatage or reason you prefer to melt the PB before adding it to the batter?
Honestly I have no idea – I adapted these from the giant m&m cookie recipe (which was sent to me by a reader) in which the butter is melted. So I just melted the peanut butter with it. But actually – since there is no electric mixer involved there would be no way to mix in the peanut butter thoroughly without melting you know? When I use a mixer for cookies I never melt the peanut butter or butter. So glad you made the puffy PB cookies! :)
I think with the amount of amazing recipes you come up with you’re allowed a few days of “un-creativeness” which, if these are the result of, I would barely call “un-creative!”

Thanks for letting me know they taste good. ;) As if I doubted it. You can tell from the photos that everything is right about those cookies. I’m all over the place when it comes to recipes. Some weeks I make 5 new dinner recipes…last week, I made all quick, throw in a pan dinners and was more into breakfast + baking. I know you’ll have some good baking recipes up your sleeves with fall around the corner!

I love your creativity, your sense of humor and your photos. everyone is entitled to a brain freeze evey now and again. Jess, I know I can always count on you for a wonderful recipe to make me feel better after yesterdays “game”….maybe they still thought it was pre-season? Ah well, here’s to the next 15 games – we go the first loss under our belts so the rest of the season we can concentrate on being present! I think I’ll make these and eat the entire batch before my DH gets home from work…..that should make me feel better about the game (maybe not so much for the already-tight jeans)!

I’m with you. I love to bake and I love to experiment and the two often do not get along very well. But your blog is the most exciting and appealing and creative and funny and honest food blog I read, I love everything you come up with and how you write about it! Especially now that I am in Paris I am living vicariously through you in the kitchen because I am trying to only eat very healthy at home so that I can taste lots of amazing French pastries on your behalf. I know you would want me to be eating croissants and baguettes and chocolate, flaky, sweet, creamy, deliciousness daily, so I’m doing my very best.
