Welcome to the ugliest recipe I’ve ever posted.

Oh… hey there.

You know that potato soup that you love so much? The one made with glugs upon glugs of heavy cream and cheese, only to be garnished with more cheese, crunchy bacon and green onions? At least you got some vegetables there.

 

Yeah. Well, I love that soup. Like, L.O.V.E. that soup. I want to eat it every freaking day. Wait… does someone out there not like that soup? Because if that’s the case, I really don’t know how much longer we can continue this relationship.

So.

I made a version with sweet potatoes. Clearly. I don’t know why I act like I have to spell everything out for you. I think you’re pretty smart.

My “loaded” idea of sweet potato soup comes bearing a dollop of mascarpone, crumbled goat cheese, crispy, caramely shallots and obviously… bacon.

Duh. It’s not like I was abducted by aliens or anything.

But the actual soup itself is fairly heathy,  which always means one thing… more room for toppings! Did you expect anything less of me? I think not.

Loaded Baked Sweet Potato Soup

serves about 4, can be easily multiplied

3 large sweet potatoes, peeled and cubed (I had 2lbs total after peeling and cubing)

2 tablespoons butter

1 1/2 tablespoons flour

1/2 sweet onion, diced (about 1/2 cup chopped)

2 garlic cloves, minced

2 1/2-3 cups low-sodium vegetable stock

1 1/2-2 cups low-sodium chicken stock

1/2 cup milk

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 teaspoon smoked paprika

for garnishes: bacon, mascarpone cheese, crumbled goat cheese & crispy shallots

Prepare potatoes: peel and cube sweet potatoes, then add to a microwave safe bowl. Microwave on high power for about 10 minutes or until fork tender, tossing 2-3 times during cook time. If you do not want to use the microwave, throw the potatoes on a baking sheet with a drizzle of olive oil, salt and pepper (you can omit/add less salt and pepper later if this is the case) and roast at 400 degrees for about 35 minutes. Using the microwave will help this soup come together in 30 minutes. Roasting the sweet potatoes adds a bit more “caramely,” deep flavor.

Heat a large pot over medium-high heat. Add butter and diced onions and cook for 5 minutes. Stir in garlic and cook for 1 minute more, then add flour and whisk continuously to create a roux with the onions. Cook the onion roux for about 2-3 minutes, until it starts to golden in color a bit and smell nutty. Add in stock, milk, smoked paprika and potatoes, then bring to a boil. Simmer for 15-20 minutes over medium heat, stirring often – especially scraping the bottom. The potatoes will begin to bread down at this time – if they are not as broken down as you’d like, mash a bit more with a fork. Turn heat down to low and add salt and pepper. Taste and adjust seasonings according to preference. If you’d prefer a thinner soup, add more stock to thin it out. You can also throw the soup in the blender to make it super creamy.

Serve hot with garnishes of crumbled bacon, mascarpone cheese, goat cheese, and crisped shallots.

Note: to crisp the shallots, I sliced 2 whole shallots very thinly, add a little canola oil over medium-high heat, and once hot added the shallots. I cooked them for about 2 minutes, then removed with a slotted spoon and let drain on a paper towel. So good.

Don’t hate it because it’s [not] beautiful.

    Sometimes an ugly recipe can be the best darn tasting thing ever. I totally think this soup would be awesome – but then again, I’m not new to ugly food.

    PS – I don’t really think it’s ugly.

    Beauty is in the eye of the beholder, and I think that garnished bowl of soup is a beautiful thing! Leave it you to make a healthier sweet potato version of one of my favorite soups…yum!

    Sometimes the ugliest dishes are the tastiest! I made pumpkin chili a while ago (http://wp.me/pSUCS-2F0) and it looked incredibly ugly…. sadly, pureed pumpkin (or anything pureed for that matter) just doesn’t look that visually appealing! Like the chili though, I’m sure this soup tastes amazing!

    This sounds so perfect now that the temperatures are getting chillier here in D.C… and because I have a mild obsession with sweet potatoes. And I usually think the foods that are ugliest to photograph are the yummiest.

    Ok, I’ll be honest. The first picture is not too appetizing except for the bacon, but that last picture sucked me RIGHT in and I was thinking that the cheese could also be marshmallows.
    I REALLY need to get myself one of those immersion blenders.

      I must tell you that I’ve had an immersion blender for about 8 years and don’t see the hype. But that could be because if I want my soup creamy, I want it SUPER creamy, and that can’t happen with an immersion blender. If anything, I prefer my regular blender or electric hand mixer. I have made some good smoothies with the immersion tho!

    I remember a few years ago Sheetz had a slogan “Don’t look at it, just eat it!” which to my 17 year old eyes was HILARIOUS. But I still think about it today when I make foods that aren’t necessary worthy of the cover of Bon Appetit, but are still delicious.

    I posted a broccoli soup today with crispy shallots. Are they not the best topping ever? (ok besides bacon maybe?) This looks delicious, I love the idea of sweet potatoes instead of white, definitely makes me at least think it’s not that bad for you ;)

    Yep soups, stews, lentils, beans… not too photogenic but its the recipe that matters! This incorporates all my favorite fall flavors and I think I might love bacon almostttt as much as you do! Nearly half my recipes on my blog incorporate bacon in some form.
