In my defense, I made this pumpkin coffee cake waaaaay before I attempted 14 batches of chewy! pumpkin cookies. I swear.
It’s the cake that made me fall in love with that brown sugar glaze.
It’s the cake that lasted 12 hours in our house… scary.
The recipe comes from Heather, and I bookmarked it in my Tasty Kitchen recipe box LAST YEAR. I waited forever to make it!

That last photo. Oh. Goodness. The last of the pumpkin, huh? I do remember you just bought a box of pumpkin pancake mix. mmmmhmmm ;) I’m not a big fan of nuts in baked goods either, but I don’t mind them on cakes or breads like this as a topping. Nuts in brownies or cookies…nothankyou!

I fell in love with that glaze too! I made pumpkin muffins and they weren’t the best looking muffins but they were delicious, the only thing better than that was the glaze!

We have a place in Waco called Katie’s Custard-they make a Harvest Cyclone which is a whole piece of homemade pumpkin pie crumbled into vanilla custard. It’s amazing to say the least!

Yum I am hungry now!!! The beautiful pics of nuts and gooey brown sugar is dangerous at seven in the morning as I sit her comtemplating what I shall have for breakfast. If you have a Super Target near you, they carry a Pumpkin Cheesecake (Target brand) that is to die for!! They only carry it during the holiday season and it is located by their bakery. I have started making room in my freezer so I can stock pile it- ha. I can’t wait- It should be arriving soon- yeah!!
