Snicker-Chip-Doodle Cookies. {Video!}
Why did I have to go and ruin perfectly good snickerdoodles?
At least that’s what my husband said with glaring eyes…
before he tried them.
And then pounded seven consecutive cookies with a Diet Coke and a half. Sink standing and all.
Trust me, I love classics just as much as the next person. But I also enjoy switching things up just a teeeeeny bit in order to come away with something delicious. Not as a substitute – but as an addition. You know… like in addition to the 4 batches of snickerdoodles I will bake for the holidays, I’m now going to add 4 batches of these too. I will then have something like 8 batches of snickerdoodle-like cookies, which will promptly be divided in 2 once we eat half the batch before Christmas actually happens.
Sounds like someone’s getting better at math…
These cookies weren’t my idea – they came from a reader, Natasha, who is basically becoming the most popular person on the planet because they taste like a little chew of heaven. Not even kidding. Make them. You will eat half the batch. It’s cool .. but share a few and you can be popular too.
Snicker-Chip-Doodle Cookies
[adapted from my snickerdoodles]
makes 16-20 cookies
1/2 cup butter, at room temperature
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
2 tablespoons milk
1/3 cup chocolate chips
1/2 cup toffee chips
1/4 cup sugar + 1 tablespoon cinnamon for dipping
Preheat oven to 375 degrees F.
Cream butter and sugar with an electric mixer until fluffy, about 5 minutes. Add egg and vanilla, mixing well until combine, about 2 minutes. Stir in flour, baking powder, salt, and 1 1/2 teaspoons cinnamon. Mix until dough comes together. Add in milk. If dough is still crumbly, add milk 1 tablespoon at a time until it comes together. Fold in chocolate and toffee.. Refrigerate for 30 minutes.
In a bowl combine remaining sugar and cinnamon. Remove dough from fridge and roll into big 1 1/2 inch balls. Dip in cinnamon sugar mixture and place on baking sheet. Bake for 8-10 minutes.
I, on the other hand, won’t be popular because I want to keep these all to myself.

I want to make these just so I can use the name of them, love it! I’m always up for the classics but adding chocolate chips and toffee is never a bad thing.

I don’t see this as messing with a classic but just enhancing it. The texture of these looks so awesome and they are full with so much yummy goodness. Delicious!
I see nothing wrong with changing classics – snickerdoodles with chocolate chips? No problem for me!

These are definitely nice additions to the classic snickerdoodles. Cinnamon goes really well with chocolate so these sound great:-)
I had never heard of Snickerdoodles (funny, funny name!) here in the Netherlands, but now I’m wondering why the original is made without chocolate or toffee. Everything is better with chocolate and toffee! Must. Make. These. Today.

These are my one of favorite cookies, next to chocolate chip! Reminds me of my dog Doodles who passed away two years ago. I used to call her snicker doodle!
What a clever idea!!! My family has a great snickerdoodle recipe too, however I NEVER would have thought to add chocolate chips and toffee chips. Now I’m thinking how could I NOT have thought about that?!!? I will for sure give it a try :)

These look sooo yummy. I love snickerdoodles and have added cinnamon chips on occasion but I think chocolate and toffe will be amazing. I have butter sitting on my counter getting soft and just waiting to be a part of this recipe. I am curious if you used the choc covered toffee chips or the plain ones? I would think the more chocolate, the better. Also,nominations for ….?? Have a missed something and does this involve readers votes for a win? If so, please let us know where to go to vote.

I’m all for mixing things up, but I LOVE snickerdoodles… just as they are. whoa, that made me feel like I was quoting Bridget Jones’s Diary. But I’m pretty sure I wouldn’t turn one of those down…
It’s my roommates birthday today, and I’ve been searching high and low for a great recipe to make. I also realized I don’t even have a spare minute to get to the grocery store today or tomorrow, and I just about have everything I need to make these on hand except the chips. Can’t wait to try these out, I’ll let you know how they come out!

ok, these have been added to my Christmas baking list! But maybe subbing cinnamon chips for toffee chips??? Thoughts? I actually don’t like toffee chips – too sticky. crazy, huh?

I am almost 50, live in wonderful California (which only means that we have just about “everything” here you can and also shouldnt have for baking, cooking, etc), and love to bake, but have never (repeat- never) heard of cinnamon chip. Chips? like in chocolate, butterscotch, mint, peanut butter and toffee chips? I have to go a-hunting this evening!
Oh yes – there are cinnamon chips! My store carries the Hershey’s brand, but if you go to a baking or kitchen store like Sur La Table they may have a few other brands. :)

I think it’s fine to tweak a perfectly good thing, you never know if it might be even more amazing than the perfectly good thing. I love this idea of adding chocolate and toffee chips to the regular snickerdoodles. Snickerdoodles are Isaac’s favorite cookie so I think I’ll have to try these.

One of my friends makes your cookie dough dip and instead of making choc chip, pb & snickerdoodle separately, she combines them all into the same dip. It’s really good! These cookies remind me of that, especially if you subbed pb chips for the toffee chips. Mmmm!
Oh man, that’s totally NOT what I was thinking.. I was thinking what a freakin’ fabulous name for a cookie.. or for anything really. In fact, I might start calling my boyfriend that- Snicker Chip Doodle. I’m sure being the manly military man that he is, he’ll greatly appreciate it.

Um, I definitely was NOT thinking that. And that story about your husband describes my boyfriend to a T! He will stand over my shoulder asking all kinds of questions about why am I adding that to the cookies and shouldn’t I just follow the recipe exactly? And then will proceed to eat half the batch before I’ve even plated them. MEN ;)
Great idea! Your snickerdoodles are one of my favorite things to make and I’m sure these will become the same! And, yes, I too will be making multiple batches of both for the holidays!
What are toffee chips? I don’t think I’ve ever seen them before. I’m going to try to find them, but if not (since I neeeeeed to bake them tonight), will they be fine with some extra chocolate chips?
Also, sidenote, I made your one bowl cupcakes for me and my friend and it’s dangerous, knowing I can make 2 cupcakes whenever I want!
They are usually in the baking aisle with the chocolate chips, I think mine are Hershey brand. But if you can’t find them, the chocolate chips will probably still be good!
My campus grocery store didn’t have them, but my housemates and friends LOVED these so I’ll definitely be making them again, and I’ll find toffee chips at a regular grocery store. They were still great with chocolate chips – my first snickerdoodle ever!
