Thai-Style Chicken Pizza.
I’m not exactly sure just how to get my point across.
But this pizza is GOOD.
Like, reallyreallyreally GOOD.
It’s a fabulous change of pace from the heavy and sweet-’til-your-teeth-hurt treats that run amuck this time of year. It’s super fresh, light and quick + easy to throw together. Use some pre-made pizza dough and it will be even EASIER! Score.
And while you’re at it, can you make me another?

I love sweet chili sauce! I first discovered it in Australia where they serve it with baked potato wedges and sour cream. So good! Also while in Thailand I learned how to make a really good sauce to accompany curries but I think it could be good on the pizza as it includes a lot of the elements already used. It is a sweet spicy sauce with peanuts, chili, and cilantro that helps cut the heat of spicy eats.

Nice looking pizza! I like to do something similar but with a Thai style peanut sauce.
I have made this pizza twice in two days. It is absolutely amazing!!! I added some fresh spinach on top of the zucchini that was hanging out in my refrigerator. My husband said it was better than any restaurant could make and easy peasy!
I made this pizza last night and followed the recipe EXACTLY and it was AMAZING! I would not change a thing. As I was making it I kept telling my husband, “This migh be really gross. This could be an experiment gone wrong.” But it totally wasnt and came out so pefect we ate the entire thing, just the two of us.

I also made this exactly as written – okay, a little light on the red pepper flakes (I cook for a French man and the French don’t like things as spicy). He ate two pieces toute de suite, then asked if he could have “another pieces.” I replied “one pieces or two pieces?” and he smiled and said “two pieces, si je peux.” Oh la la! Great recipe! Reminds me of what I’d eat at the California Pizza Kitchen. Yum.

I have been a faithful reader for the past couple years and have made many of your wonderful recipes. Last night, I had a dinner party and may have gone a little crazy… Made this pizza, your greek pizza, and your cheesy spinach and artichoke pizza. All three were DEVOURED. I’m talking gone. People even picked every last little bit of fallen topping off of the pans! This Thai rendition was by far the hit; we all were in love at first bite. I just can’t get over how it tastes so perfectly sweet and spicy from the sauce, salty from the peanuts, and bursting of freshness from the chopped herbs. Followed the recipe exactly, except I sauteed the zucchini/onion for about 5 minutes, used leftover baked chicken that I had from the Thai Crunch Chicken Salad, and offered the marinade/dressing as an extra dipping sauce.
