Banana Bread Snack Cake.
What I’m sharing with you today is only the snack that I’ve fallen madly in love with… that I’ve made four times already… that I inhale the moment it comes out of oven, singed taste buds and all…that I can’t keep my grubby little paws off of.
You know… no big deal.
Except it’s a HUGE DEAL. Because it’s amazing. And so so so easy. And healthy! Fruit + whole wheat flour = pure unadulterated health.
I should be a doctor or something.
Even my mom – who worships at the altar of enriched breads and all-purpose flour – could not get over how good this tastes. Now that’s saying something.
Must I really tell you more?
Banana Bread Snack Cake
makes 9-12 squares
1 large egg
1/3 cup loosely packed brown sugar
2 teaspoons vanilla extract
3 ripe bananas, mashed (about 1 1/2 cups)
1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
3 tablespoons unsalted butter, melted and cooled
Preheat oven to 350 degrees F. Spray an 8×8 baking pan with non-stick spray
In a large bowl, whisk egg and brown sugar until smooth. Add in vanilla extract and mashed bananas, mixing until combined. Add in flour, baking powder, cinnamon and salt, mixing until the batter comes together. Add in melted butter and mix until evenly distributed.
Pour batter in the baking pan. Bake for 20 minutes, or until center is no longer jiggly and edges are golden. Top with a cream cheese glaze, if desired.
Note: you can definitely sub in all-purpose flour, but I would not use regular whole wheat.
Oh wait, yes… I must. Cream cheese glaze. Get it!

I am always looking for other ways to use old bananas and I love this one! Knowing myself, I would probably have to make a “healthy” snack unhealthy by adding chocolate chips, but dark chocolate is practically a health food, right??
I was thinking the same thing, the addition of chocolate chips would make a good thing even better!

I love that this is whole wheat. Because that makes it healthy. Which makes it perfectly acceptable to eat the whole thing, obvi ;)

Here’s what happened in the past 2 hours. Woke up. Saw this. Made it. Ate it. No cream cheese though, but yogurt spread did the trick! I didn’t have pastry flour so I put in 1 cup – 1 T white wheat flour, and added 1 T cornstarch. Did the trick! Super moist and light! happy friday!

I just finished making this. I used regular unbleached white flour because I only had regular whole wheat, no whole wheat pastry. Absolutely amazing. Seriously.

OMG. this snack cake looks incredible jessica! I absolutely LOVE banana bread (well, anything banana-y!). I’ve never made banana bread myself, but I think this snack cake is a good way to start b/c it looks incredible AND easy. AND it’s pretty healthy. :)

Ohhh lovely! I love banana bread but hate all the crumbles, and how much I love cream cheese with it but the bread never withstands the spreading. This looks like a much better vehicle for toppings :)
Yummm! This looks awesome. And that cream cheese glaze sounds dangerous. Also love that it includes whole wheat flour…that means you can eat about 5 x more, right?? :)

Nope I do not, but a few comments up someone posted the nutritional info for these. But you can always take the ingredients and plug them into an online calculator!

So I realize that this recipe does not require a stand mixer, but I had to share that I got one for Christmas. The Raspberry Ice Kitchenaid Mixer to be exact! DO YOU KNOW WHAT THIS MEANS????? I can make ANY recipe you have on here now! Before, I had to refrain from making some of the ones I wanted to make until I went to my dad’s house (he has a mixer)! Ok, I’m going to calm down now. I can’t wait to make this one, sounds yummy! Healthy you say? Well then, I’ll make a few batches!
