This is like the… quadrjiliionth recipe for a mash up of chocolate chip + oatmeal cookies I now possess.

So what?

I like cookies.

I like chocolate.

I just, uh… sort of love brown butter.

I don’t really like oatmeal… unless it’s in cookies with chocolate and brown butter.

I like things that taste a lot like chocolate chip oatmeal cookies but aren’t chocolate chip oatmeal cookies at all. But whatever.

Huh. This just seems like it’s going to work out perfectly.

Why yes… I will accept this rose.

I mean, these cookies seriously are TOTALLY different than other oatmeal cookies because of the brown butter. Just look at the specks in the dough. Just smell them. Just eat them!

They are diverse in so many ways.

Or not.

But we all know I’ve talked ’til I’m blue in the face about how much brown butter improves, well… life in general. So the depth of flavor in these cookies? The caramelness, the toffeeness, the butterness? It’s life ending. And totally worth it.

Brown Butter Oatmeal Chunk Cookies

[adapted from my chewy oatmeal chocolate chips]

makes about 15-18 cookies

1/2 cup unsalted butter

1/2 cup granulated sugar

1/2 cup loosely packed brown sugar

1 large egg

2 teaspoons vanilla extract

1 1/4 cup all-purpose flour

3/4 cups rolled oats

1/4 teaspoon salt

1/2 teaspoon baking powder

1 1/2 teaspoons cinnamon

1 cup chocolate chunks

optional: 1- 2 tablespoons milk, if dough is crumbly

Heat a small saucepan over medium-low heat and add butter. Whisking constantly, cook butter until bubbly and until small brown bits appear on the bottom of the pan – about 5-6 minutes. Watch closely and immediately remove the butter from the heat, whisking for an additional 30 seconds or so. Set aside and let cool COMPLETELY. Note: It does not need to solidfy at all, but it should not be warm to the touch.

In a bowl, combine flour, salt, baking powder, oats and cinnamon, mixing, then set aside.

Once butter has cooled, add to a large bowl. Whisk in sugars, stirring until smooth. Add in egg and vanilla, whisking until smooth once again. Slowly begin to stir in dry ingredients, using your hands if necessary (I always do) to bring dough together. If you find that the dough still won’t come together, add in milk 1 tablespoon at a time (I rarely have to do this.) Fold in chocolate chips, distributing them evenly. Refrigerate dough for 30 minutes.

Preheat oven to 375 degrees F. Using an ice cream scoop or your hands, form dough into 1 1/2 inch balls. Place about 2 inches apart on a nonstick baking sheet, then bake for 10-12 minutes, or until bottoms and edges are golden. Let cool before serving. [/donotprint]

    I love that there’s barely any oatmeal (visible). Awesomely huge chocolate chips as well. Anything with brown butter is a winner in my book.

    Through your recipes and others I realized that brown butter was something you did on purpose instead of leaving in the pan too long. Now I just love it. I’m sure it adds a great flavor to these delicious cookies. Love that cinnamon is used in this recipe.

    OMG Jessica you are tempting me bad! I have had a serious cookie craving ever since I polished off the last crumb at the bottom of the box of Girl Scout Thin Mints but have been trying to be good and hold out for at least a week before I broke down and either 1.) purchased store bought cookies or b.) made a big ole batch of homemade cookies. I think “B” wins and these are the cookies to fill that hole in my life!

    JEEEEZ, really?!?! Because you know I have no willpower and no generosity when it comes to stuff like this so I’d hoarde these and eat them all by myself in less than two days. Mean. Seriously, I would not think of something this ridiculous if left to my own devices. Now I’m not going to be able to focus on anything else today and the sad diet-y lunch I packed today is going to be totally miserable. Excellent. Shoot me now.

    I just made these as a sort of Grandmother’s day gift (although with dried cranberries and raisins, as she’s not much of a chocolate lady these days!) and they’re absolutely delicious. Really getting on this browned butter wagon too. Looking forward to making these again (and with chocolate I think) so I can actually eat them myself!

    YUM. i just ate one of these while it is still warm out of the oven. Great flavor, and I love how thick they are from chilling the dough first. The spice in these reminds me so much of a spicy oatmeal raisin cookie, but better (duh) with chic chips. I bet this recipe would be amazing without the cinnamon also to be more like a regular chocolate chip cookie, but with texture from the oats.
    (Basically, another excuse to brown some butter. I wonder if they make a candle with that scent. So amazing!)

    Delish! I reduced the amount of cinnamon to 1tsp and it still had a strong flavor. I think next time I would add just a sprinkle for a hint of cinnamon. My batch also made quite a bit more cookies – I guess my balls were just a bit smaller.

    I was really excited to try these…but unfortunately they left me kind of disappointed. I guess they’re great if you like a crispier cookie, but I tend to only like soft in the middle kinds of cookies (even tried severely under baking them and they were still crispier than I would like)…the flavor also seemed sort of off to me, I think adding a bit more salt would help bring out the flavor of the chocolate chips a little more

      K.S. I totally agree. I was really excited for these cookies and made them tonight. The texture of mine is fine (I had 1 1/2 – 2″ balls and baked for 11 minutes), but the taste is so bland. I know everyone’s tastes are different, so I wouldn’t want someone else to not make these based on my review, but for me I prefer my normal homemade chocolate chip cookies and day over these. They aren’t sweet enough or salty enough. I would probably use salted butter next time. The cinnamon also over powered the taste of anything else. Oh well, there are so many other great recipes on this blog, so on to the next! :)
