Blueberry Muffin Bread.
Well… not much.
Except maybe a giant loaf of bread… that tastes like a blueberry muffin. It’s like a muffin times infinity.
Especially when you only tend to eat the muffin tops, and your loaf of bread tastes like one massive muffin top. Huge win.
Even though it’s like 60 thousand degrees outside, it’s totally okay to turn on your oven for one humongous muffin. It’s ideal for breakfast, for an after-pool snack, and as excellent nourishment while self-medicating yourself during a Girls-a-thon. Thank you very much, HBO.
Although I have no idea what any of that is like.
I also definitely did not consume two slices of blueberry muffin bread at one in the morning during an intense viewing of Crazy Stupid Love. For the 32nd time.
Ryan Gosling… WHAT.
Let’s make it acceptable to go on a streusel diet? Because I think I’m there.
Warm blueberry bread.
Soft butter.
Your weekend. Done. Listen to me. I know what I’m talking about.
Blueberry Muffin Bread
[adapted from triple fudge banana bread]
makes one 9×5 loaf
2 1/2 cups whole wheat pastry flour
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2 large eggs
2/3 cup brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla extract
2/3 cup milk
1/2 cup butter, melted and cooled
1 1/2 cups fresh blueberries, tossed in a spoonful of cornstarch
streusel
1/2 cup loosely packed brown sugar
1/2 cup all-purpose flour
1/4 teaspoon cinnamon
pinch of salt
1/4 cup unsalted butter, softened
1 tablespoon milk
Preheat oven to 350 degrees F. Spray a loaf pan liberally with non-stick spray or grease with butter. In a bowl, mix together flour, baking soda, salt, cinnamon and baking powder, then set aside.
In a large bowl, whisk egg and sugar together until smooth. Whisk in vanilla extract, then add in milk and mix until combined. Add in dry ingredients slowing, mixing with a spoon until batter comes together. Add in melted butter and mix until incorporated, then stir in blueberries.
Mix together the streusel ingredients, bring it all together with your hands. Sprinkle over the bread evenly. Bake for 50-55 minutes, or until bread is golden and a toothpick inserted in the center comes out clean. Serve warm with butter!
Plus it’s whole wheat. This is total health food!

Oh..that first click of cornflour coated blueberries is amazing! Wholewheat..healthy…I am totally sold for this beauty.
Anything whole wheat is health food! Funny how we see blueberry muffins so much but making it into a bread? Warm from the oven with a pat of melted butter on top? Yes please.
I bet banana bread would be awesome with blueberries in it too. Now you really have me thinking. :)
I LOVE blueberry muffins and making blueberry bread is just awesome! The only thing about bread is I keep cutting slivers of bread off than the next thing you know I ate a whole loaf! Your bread looks amazing! Happy Friday!!

IwantthisIwantthisIwantthis. Now. Right now.
One giant muffin top? I’m totally on board with that!
Looks like the perfect way to start, finish, or celebrate your day. :)
Yummmmm!!! That streusel topping, omg!
Ohhh yum this looks gorgeous! Funny you should mention Crazy Stupid Love because yesterday I was bed-ridden with a migraine and that’s exactly what I watched (and by watched, I mean I think it ran a total of 3 times and I was probably awake for 20 minutes.) Too bad I didn’t have some of this bread in my kitchen, because I’m sure I would have felt better much more quickly with Ryan Gosling and blueberry bread. ;)
Now use this for french toast….I dare you!
A giant muffin top- YUMMM! I would be game (as long as it’s not over my jeans ;) )
Crazy, Stupid, Love— amazing movie…..Ryan Gosling! SUCH A HOTTIE! (like high school crush hottie!)
Apparently Ryan Gosling has expressed interest in starring in the 50 Shades of Grey movie… I might die.
Love this!
It’s whole-wheat and it has fruit in it. Blueberries at that. It’s not just health food, it’s super-health-food!
Oh my goodness — LOVE the streusel topping! Holy moly.
You are the only person who can make baking bread in the heat of summer seem like a good idea.
Yum…that would be so good with an iced coffee!! I’ll have to pick up some whole wheat flour today…I don’t keep healthy things like that in my pantry!
Awesome!! Look what I did a few weeks ago: http://recipesfromagirl.blogspot.com/2012/05/blueberry-bread-french-toast.html
I love what you consider health food. ;)
I might make this today! Yay!
This looks so delicious, especially with the addition of the butter. YUM! I really like the photo with the pouring blueberries.
Count me in for the streusel diet!!!!
Crazy Stupid Love = best movie ever. Ryan Gosling = !!!! This blueberry muffin bread = I want to bake this weekend even though my kitchen is tropical. You know how coconut oil is supposed to be solid at room temperature? Yea, mine’s a liquid now.
I’m listening to you and I’m a believer – that bread is divine.
P.S. – The show “Girls” is definitely amazing. So sad that the season is over!
I LOVE blueberry muffins! Love the bread idea. Also love the action shot of the blueberries!
i’m so down with the streusel diet. although i think we’ll need some variety – maybe throw some cheese in there too? for snacks?
you know, for the protein.
I once saw on Diners DriveIns and Dives a BlueBerry Muffin Bread French Toast, and I think your ‘healty recipe would be perfect for this! My mouth is watering as I try to lick the stussel off my computer screen :)
I have been making this recipe for my family because I love the tart lemony notes…

However, I must say that next time I have a hankering’ for blueberry bread, I think I will be trying your recipe!

you. read. my. mind. seriously i was just thinking i needed to make something blueberry, this is my answer!! once again you are the best. :) and totally agreed on it being a health food. with out a doubt.
I loved that movie. Almost as much as I love that bread. ALMOST.
Yum! This looks fabulous. I bet my kids would love it! (and so would I!)
I love blueberry muffins and streusel, of course, but waiting almost an hour for bread to be done instead of like 20 minutes for muffins is so hard! Obviously I have an urgency problem.
Oh wow this looks awesome. I could eat streusel topping all day.
I could also watch Ryan Gosling all day. I mean really. Dude looks photoshopped.
I’m all about a streusel diet..sign me up!
Streusel diet – I am IN!
I want a slice…ok, I really want the whole loaf!
YUM YUM YUM YUM YUM. That is all.
you had me at streusel topping.
Ohhhh gurrrrrl, you’ve gone and done it now. This looks So. Freaking. Good.
So good, in fact, that I just wrote “gurrrrl.” That may never happen again.
OMG I totally had a Girls-a-thon last night. THANK GOD for HBO On Demand. It completes me. This bread looks awesome too.
There are just not words for how delicious this looks.
You’ve been on a bread kick lately and I love that. And I adore streusel-topped things. All I really want when I see it is JUST the topping and cherry-pick it off. lol
These pictures are amazing Jessica! Totally drool worthy. I had to mix two giant batches of streusel at work today…it was all I could do not to face plant right into the bowl! Now I can make up for that with this bread!
Ok. That looks AMAZING!
SO need to try it!
Oh wow – this streusel topping puts this bread over the top. I know what I’m doing this weekend :)
Ugh, I want this so bad!
Looks good – and that first photo is phenomenal!
This is beyond beautiful! I love your photos.
I mean, your recipes area always wonderful, but I enjoy the photos nearly as much!
This would be great for breakfast. With a tall glass of milk!
