Blueberry Muffin Bread.
Well… not much.
Except maybe a giant loaf of bread… that tastes like a blueberry muffin. It’s like a muffin times infinity.
Especially when you only tend to eat the muffin tops, and your loaf of bread tastes like one massive muffin top. Huge win.
Even though it’s like 60 thousand degrees outside, it’s totally okay to turn on your oven for one humongous muffin. It’s ideal for breakfast, for an after-pool snack, and as excellent nourishment while self-medicating yourself during a Girls-a-thon. Thank you very much, HBO.
Although I have no idea what any of that is like.
I also definitely did not consume two slices of blueberry muffin bread at one in the morning during an intense viewing of Crazy Stupid Love. For the 32nd time.

Let’s make it acceptable to go on a streusel diet? Because I think I’m there.
Warm blueberry bread.
Soft butter.
Your weekend. Done. Listen to me. I know what I’m talking about.
Blueberry Muffin Bread
[adapted from triple fudge banana bread]
makes one 9×5 loaf
2 1/2 cups whole wheat pastry flour
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2 large eggs
2/3 cup brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla extract
2/3 cup milk
1/2 cup butter, melted and cooled
1 1/2 cups fresh blueberries, tossed in a spoonful of cornstarch
streusel
1/2 cup loosely packed brown sugar
1/2 cup all-purpose flour
1/4 teaspoon cinnamon
pinch of salt
1/4 cup unsalted butter, softened
1 tablespoon milk
Preheat oven to 350 degrees F. Spray a loaf pan liberally with non-stick spray or grease with butter. In a bowl, mix together flour, baking soda, salt, cinnamon and baking powder, then set aside.
In a large bowl, whisk egg and sugar together until smooth. Whisk in vanilla extract, then add in milk and mix until combined. Add in dry ingredients slowing, mixing with a spoon until batter comes together. Add in melted butter and mix until incorporated, then stir in blueberries.
Mix together the streusel ingredients, bring it all together with your hands. Sprinkle over the bread evenly. Bake for 50-55 minutes, or until bread is golden and a toothpick inserted in the center comes out clean. Serve warm with butter!
Plus it’s whole wheat. This is total health food!

This bread is definitely in my future…it looks soo good!! I love anything blueberry-related. I just watched Crazy Stupid Love for the first time a couple weeks ago when I was home recovering from knee surgery (good excuse to watch movies!). I don’t know what I was waiting for…I loved it!! I want to buy it so I can watch it a bunch more times. I was quoting lines of it to anyone who would listen :)

Jordan Marsh Blueberry Muffins …the best in the world! My mother used to take me into Boston all the time and we would go to the basement to the bakery ,the sugar was so crusty and mixed with blueberries on the top.

that looks oh so good. i always make banana bread (always have bananas in the house!), so I should probably switch it up a bit. blueberry muffins are my favorite, and the streusel on top makes it even better!

I made this cake today and I make a lot of cakes/loaves. This is now a new favourite! It was exactly how you describe it. Muffin top all over and absolutely perfect inside. Can’t wait until breakfast!
Really great recipe! I also like michelle above make a lot of cakes, loaves, cookies and I really like this! The combination, I guess of the cinnamon, the whole wheat, the vanilla create a beautifully nuanced result as if there’s a secret spice in there! I love it!

This looks amazing. I just bought some really yummy fresh blueberries, and this looks like a perfect use for them. I tried out your recipe for yellow cake. I’m think about making it as yellow cupcakes with a sprinkle of blueberries mixed in. Sort of a blueberry muffin idea but in cupcake form.

Midnight is approaching here in California and I would really like this as a midnight snack but was bummed to find out that it isn’t on my kitchen counter–weird. I’m pretty sure the pictures implied it was like, magical or something since it’s an entire bread dedicated to a muffin which is totally amazeballs and everything, but like, where is my buttery slice of muffin top bread? I made this a few days ago and it is FANTASTIC!! I am a sucker for streusel topping, so I added about 1/2 cup old fashioned oats to the mix and it was to.die.for!! Even my husband, who can take-it-or-leave-it when it comes to bread, said this was delicious. I originally made it with my kids in mind, but too bad for them because mommy and daddy hogged it all. :)
I don’t have whole wheat pastry flour on hand. Can you advise on just using AP flour?

I thought I’d ask you if you have a recipe for Chocolate peanut stacks?? Pretty please… I’ve trawled the net for one but nothing has come close to the devilishly delightful morsels I put in my mouth last Sunday afternoon. I’m just praying you might come up trumps – as we say in uk!
It was a chocolate brownie base with a fairly solid peanut layer sort of creamy flowed by another layer of brownie and more peanut layer topped by brownie and soft caramel and peanuts and chocolate…..OMG it was heaven on a plate…Help please please please!
