Time to play make believe!

First… donuts sandwiched in between quinoa and beans makes donuts a reasonable meal. No, not literally. That would be weird. And do you think I’m weird?

But like… technologically. If you eat quinoa on Monday and beans on Wednesday, donuts are totally acceptable – wait no… ENCOURAGED – on Tuesday.

It’s a life law or something.

Second… props to all these women in the crazy, crowded airports who are physically holding the PRINT version of 50 Shades of Grey in their hands, because unless it was my make-believe world, I wouldn’t have the guts. Even though I exploit my sad little life all over the internets. So there’s that. But I am still your terribly cliched whiney, needy chick who wouldn’t want to be judge by complete strangers. Trust this. Help me.

Third… when I ate these burgers… I definitely pretended like the avocado cream was made with Greek yogurt. Which it wasn’t. At all. I made it with thick and creamy full-fat sour cream, and ate it in amounts that would only be appropriate if it was plain yogurt. I’m loving being in my own dreamland right now.

Most people make bean burgers because they are trying to eat less meat, or in fact – they don’t eat meat at all. Not me. I make bean burgers because I am 100% super freaking in lust with beans. Torrid, serious love affair. I almost made beef burgers and added beans straight inside. It’s happening next, just you wait.

Okay so, the burgers are really incredible. I enjoy them more that those BBQ chickpeas burgers I made a few months ago, and they are packed with enough flavor that I’d MAYBE consider eating them without the bun. Maybe. Maybe not.

Alright, probably not. Whatever.

But the real winner here? It’s the avocado basil cream. I want to slather this on everything humanly possible. And as soon as I get home, I’m going to. Just tryyyy and stop me.

Easy Double Bean Burgers

makes 6 burgers

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can cannellini beans, drained and rinsed

1 large egg + 1 large egg white, lightly beaten

1/2 cup panko bread crumbs

3 tablespoons olive oil

3 tablespoons fresh cilantro, chopped

4 garlic cloves, minced or pressed

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon pepper

6 whole grain buns, toasted if desired

In a large bowl, mash beans with a potato masher or fork. Add in cilantro, garlic, paprika, onion powder, salt and pepper, mixing to combine. In a smaller bowl, lightly beat eggs and add in 1 tablespoon olive oil and panko, stirring to mix. Add the egg mixture to the beans, and mix thoroughly to combine, bringing it together with your hands if needed. Separate the beans into 6 equal sections and form patties.

Heat a large skillet over medium-high heat and add 1 tablespoon olive oil (or as much as you need). Add burgers and cook on each side until golden, about 5 minutes. Remove and serve with avocado cream on whole wheat buns!

 

Avocado Basil Cream

2/3 cup sour cream

1 avocado, chopped

10 medium basil leaves, chopped

1/4 teaspoon salt

pinch of pepper

Add basil and avocado to a food processor, blending to combine. Once somewhat smooth, add in sour cream and blend again until combined. Add in salt and pepper, taste, and season more if desired.

And now I feel so much better. Worthy of another donut.

    Funny you should mention the print version of 50 Shades of Grey… A little over a month ago I took a weekend trip and wanted a book for the ride. I had only heard the title and that lots of people were reading it, so I went into Barnes and Noble, scooped up a copy without reading the back (which I can’t figure out, to this day, why I didn’t. I live for the back cover recaps of books!), and was carrying it all over with me before I actually got to reading enough of the book to figure it out. Now I understand all the looks.

    Burger making is SO on my agenda this weekend! I haven’t read 50 Shades of Gray but I’ll admit that I’m ALWAYS self conscious about what other people are thinking about my choice of reading material! Usually it’s Womens Health or Oxygen, which is rather normal if you ask me, but the words “Look great NAKED” or “Get a HOT BUTT” are usually plastered across the cover, which I always figure people notice. Gah… I’m probably just working myself up about nothing!

    Hmmmm…avocado basil cream, hunh? VERY intriguing! I need to go get me some avocados and see if I can begin to acquire a taste for these things that are so good for you. AND, I’ve got a basil plant that is growing like crazy, so I’ve been looking for different ways to use it!

    I traveled to Colorado this past weekend and held the actual physical print copy of 50 Shades Darker in my hands on the way home. Trust me, I did the best I could to hide the cover from anyone near me. Clearly I failed because a 17 year old boy asked me what genre I would classify that book as. Not awkward at all…

    These look very yummy! I am so hesitant to make bean burgers again though because the last, and only time, I did make them, they were drier then an Arizona summer. I was so dissappointed. Maybe I overcooked them? I will try again!

    Yes that cream looks and sounds amazeballs. And I totally agree with you. While I will never read that book I am shocked that women are reading it out in the open. EROTICA… it is no longer romance novels. The text is trash and people call it “well written material.” Okay I am getting off my soap box. I need to make these burgers especially since I tried your chickpea BBQ burgers. YUM!

    These DO NOT cancel out the donuts. The quinoa did! Looks like you are all-a-go for another donut recipe! And…I love avacados. I would sprinkle them on cereal if I could! I’m thinking I may need to make this an avacado / cilantro cream. Then, I can call it mexican food. And I love Mexican food!

    I have basil in the garden and have never mixed it with avocado. I married an avocado farmer too…so I guess it’s time to give your sauce a whirl! It sounds like something wonderful. And I love the idea of eating doughnuts on Tuesdays.

    Just want you to know, your blog is one of the most amazing things I’ve come across. As a college senior, spending time to figure out what to make myself for dinner (if “making” is even constituted, most of the time it’s a frozen lean cuisine) is real hard to come by, and by the end of the decision making process I’m over the idea of cooking and ready to throw in another frozen disaster. This not only aids me in cooking, but all forms of procrastination from studying/writing papers/what have you. Also, my boyfriend thinks I’m a great cook with a multitude of recipes at hand (yeah right! ….i’ll keep him guessing for now).
    Can’t wait to try out this one!
