12 Summer Recipes I Forgot About.
Because I whine incessantly about my life on this little random website, it means that I make a lot of food that I “omg! insanely!” love and then forget about. And you might ask that why, if it was really that “omg! insanely!” good then how could I possibly forget about it?
Well it goes like this… when I’m not trying to come up with something new because of my complete and utter boredom, the standbys like pizza or tacos come into play. And if it’s not that, it’s like melted cheese in a microwave quesadilla. And if it’s not that, then it’s a bag of those Snapea Crisps, which I have an intense obsession with and which is totally weird right? Because I don’t even like vegetables. But I can’t stop eating them and as of five minutes ago, I was… halfway through the bag. It says there are three servings in the bag but that is BS. There is definitely only one serving, and they are definitely healthy because they have three grams of fiber.
Anywho, I was looking through the archives of last summer, trying to come up with something new for dinner and came across a bunch more “omg! insanely” good recipes that I… (spoiler alert)… forgot about. These are my faves that I found… and I’ve already made seven of them. I’ve been busy.
Caprese Quinoa with Homemade Basil Oil

When you’re coming up with brilliant creations practically 365 days a year, it’s gotta be tough to remember them all! The salt and vinegar crusted fish is brilliant and the grilled corn dishes have my mouth watering.
And Snapea Crisps? Just, YES.
OK those last two sound amazing!!! I love the idea of using salt and vinegar chips to make a crust for fish. Too bad my husband doesn’t like salt and vinegar chips. That would have to be a meal just for me! ;)

All of these look great, and thanks for reminding me about them! The clams casino pizza is what inspired me to try my first ever clams last year! As for the Snap Pea Crisps, I think your soul mate shops at my Costco. Last week I saw a guy walk out with a FULL cart and it had absolutely nothing in it but Snap Pea Crisps!!

It is so great to rediscover old favorites. I think I could eat that Avocado Lime Fruit Salad all day… maybe with a couple of those Mocha coconut cupcakes for good measure. Thanks for the great summer inspiration!

It’s always a bad idea to look at your blog when I’m hungry… Now my mouth is watering and I want to make all these recipes- 5 minutes ago. This summer, I’ve been eating a ridiculous amount of garbanzo bean salads. It’s so simple to throw anything in and (bonus) there’s no need to turn on the oven. My favorite has been garbanzos with avocado, tomatoes, fresh jalapeno, cilantro. Just add garlic, lemon juice and s&p!
Hands down best part about having a blog is that it forces me to write down and organize my recipes. That and it gives me license to cook really rediculous food on a regular basis. :)
I remember that basil oil like it was yesterday. Sooooooo good!
Not sure if I will forget any of these anytime soon, they all sound so good!! Especially the hot fudge root beer float and salmon… OMG. I want to dive right into this whole post. :)
Um, I need that breakfast hash RIGHTFREAKINGNOW. And I forget about really good recipes all the time. We’re food bloggers. If it has cake batter or sprinkles in it, it automatically trumps any other recipes and then they become all lonely and forgotten in some random stray album on our computers until… until now. Yay!
So many delicious recipes. I need to eat them all. Like, now.

Mix loose-leaf lettuce, sour cream, and chopped scallions. Then add something sweet to it. My boyfriend says it needs something sweet (it’s a traditional Acadian salad, so my first instinct was not to mess with it). I don’t know where to start in adding sweetness. Then I thought, “Heeeeyyyyy….”
I know who to ask. She’s all into this sweet business.
Those all sound delicious.
One of our summer favs is to make a black bean and corn salad and add it to cooked quinoa.
you put like three of my all-time favorite recipes of yours in this list: the buffalo tacos, the greek chicken salad, and the mocha coconut cupcakes. they are all OMG INSANELY good.

Pork! I’ve been loving some grilled pork tenderloin lately. With a side of grilled cajun sweet potatoes and green beans. I actually just had a photo sesh to blog it but I hate all the pics so I’m making it again. Darn. One of your recipes that I love in the summer is a fruit roll you made in rice paper? Oh I adore you! TOTALLY making the fish sandwich for dinner tomorrow! We usually bake our cod the same way, but with boring old seasoned panko – those salt & vinegar chips will really kick it up a notch!
Hey- I’m a vegetarian but still want to make the breakfast hash. Should I just sub olive oil instead of the bacon grease? Any other subs that you can think of that will give it some good flavor?

Did you just say “salt & vinegar chip-crusted” fish???? Because that sounds SO. AWESOME!!! We did the potato chip crust thing on fish once on vacation when (of course) we didn’t have any bread crumbs, crackers, bread or anything similar. We did have 3 “empty” bags of chips about to go in the trash, though. Those were plain potato chips – I can’t wait to try this with S&V chips, or dill pickle chips!!! However, that would mean I’d have to BUY a bag… And we all know I can’t be trusted with chips in the house. Hm. Maybe I bet I could get my mom to buy a bag, crush up a cup or so and just bring me the crumbs. GREAT IDEA! Hey ps – it’s summer: why don’t you have some kind of brat or hot dog or something, or are you too healthy of a person to have anything that neandrathal-ish? Our local market makes some killer chicken-sundried-tomato-basil brats we love. Anyway, that’s what we’re having tonight. We get fairly creative with the toppings – blue cheese, avocado – you know. And really, we’re just having cocktails (gin, mint, cukes). The brat/dog thing is just there in case we get starving later. I mean, it IS summer. ;)
Amen on the blueberry bbq salmon. I made that last year and it was life changing, especially that barbecue sauce.
hello from australia! its winter here, but if it were summer, i would be making donna hay’s asian chicken slaw –
6c shredded chinese cabbage
2 carrots shredded lengthways
1c roasted unsalted cashews
1/4 snipped chives
1c mint leaves
1c cilantro
2 long red chillies, seeds removed, finely sliced
4 cooked chicken breasts, shredded
combine all ingredients and dress with:
lime&coconut dressing
1/2c coconut milk
1tbsp fish sauce
2tbsp lime juice
1tbsp sugar

At least you’re eating “peas”… I’m eating right now out of pure boredom and my go-to is definitely chocolate-covered pomegranates. Killing me slowly.

Lobster is only $4 a lb now and the fresh picked sweet corn is here! Made a Lobster Fettuccini Carbonara with corn, leeks, mushrooms for the veggies. Lobster & bacon marry very well!
Grilled Shrimp over Jalapeno Chedder Grits – it’s a recipe I made when I worked at a resteraunt this past summer. So – Good.
*Maque Choux is a Louisiana side-dish-esque. Has onions, tomatoes, peppers, corn, cream, white wine, s & p and fresh herbs. Delightful over this dish.
*A fresh roasted corn relish would also be really good on top.

Clams Casino pizza= my childhood in Connecticut! I always felt like a grownup when I shared the casino pizza with my parents, and my younger brother and sister ate pepperoni…Snap pea crisps are my sanity at work by the way, funny how a whole bag is just the right amount to get through the 8-hour work day…
