Homemade Weekend Brunching.
Less than 24 hours after returning from vacation and one rushed load of laundry later, my husband had to jet off for a work trip. I decided to surprise him with a big brunch when he got home yesterday afternoon, complete with whole wheat blueberry pancakes, bacon, toast, sweet potato hash browns, eggs cooked in bacon grease, cantaloupe, fried pancetta, warm syrup and orange juice.
Then after we ate, I asked what he had for breakfast at the airport, to which he responded with “ummm… eggs, hash browns, pancakes and bacon.”
Of course.
[P.S. clearly I’m still trying to like coffee. A pile of sugar and giant pour of coconut milk later, still wanted to choke it up. It’s cool though. I have other plans for that flavor. Grand plans.]

this belongs in a spread in Bon Appetit! GORGEOUS images and story telling via photos – and hello, amazing food at that! The coffee ( and I know you’re not a fan of coffee but with white choc, coconut, and enough coconut milk or cream – anyone could like it, right!) .

Did you mix sweet potatoes with regular potatoes? Looks delish and I have never thought to do that. Sometimes we have breakfast for dinner and this one looks so worthy to have for dinner.

Nothing is better than a weekend brunch at home. My favorite part is that it is perfectly acceptable to eat 6 or 7 different meals. Pancakes AND eggs AND bacon AND fruit AND hash brown? Sure, don’t mind if I do!

All of the food looks amazing! Weekend brunches are quite possibly one of my favorite things in the world. Breakfast is my favorite meal of the day, so when you extend the time of that and add on lots more food plus friends and family, it is basically the best thing ever.

OMG!! My kids just asked where you live……….lol. Looks wonderful! I’m certain that his airport food was no where as yummy as this all looks!!!! I love coffee but have been having tummy troubles lately so coffee has not been my friend……but I SOOOO wanna try this one….I’m a little unsure about coconut in coffee but its chocolate so I am willing to give it a whirl!

Do you ever get sick of cooking? Just curious…I love to cook too, but especially in summertime, I feel a huge lack of motivation to do it. You seem to crank out tons of great food weekly, and I’m curious how you keep your mojo.
