Whole Wheat Zucchini Banana Chocolate Chip Muffins.
Fruit AND vegetables on Monday? This is huge.
I desperately need it too, after a weekend that severely lacked nutrition (ummm except for frozen yogurt – twice – which is 100% healthy) and I will gladly take it in carb form other than… real form. Much more interesting eating green veggies this way.
What this weekend didn’t lack was really cold white wine, a Saturday spent grocery shopping (which uh, might be my favorite date – I’m easy) and an excellent night’s sleep because I just might have “forgot” to wake up my husband after he fell asleep on the couch and then covered him in a blanket, tip-toed out of the room, turned on a repeat of Fashion Police along with the ceiling fan on high and enjoyed a looooong, solid stretch of interrupted shut eye. I love playing that game.
And the next day? We seriously researched king-sized beds and are currently trying to figure out HOW we can fit a mattress up the steps and the actual headboard in our room. I’m up for all sorts of trickery with this.
I’m also attempting to figure out how I can manipulate this entire situation into a fully decorated Anthropologie bedroom paradise.
And apparently putting vegetables in my MUFFINS.
I might be losing it?
I haven’t made many baked goods with zucchini in them because, well… I’d think the reasons were obvious. But last week I had some super delicious zucchini lemon bread and I didn’t think that there was any way I could top it sooooo… I took the easy way out and made muffins. And added chocolate because that makes everything – especially vegetables – better. Oh and brown butter glaze. If you want it.

Whole Wheat Zucchini Banana Chocolate Chip Muffins
Ingredients
- 2 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/3 cup packed brown sugar
- 1/3 cup low-fat milk
- 1 1/2 teaspoons vanilla extract
- 1/4 cup unsalted butter, melted and cooled
- 1 1/3 cups freshly grated zucchini
- 1/3 cup mashed banana, 1 small-medium banana
- 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees F. In a bowl, whisk together flour, baking soda, salt and cinnamon. Set aside. Line a muffin tin with liners.
- In a large bowl, whisk egg and brown sugar together until smooth and no lumps remain. Add in vanilla extract, butter and milk, whisking again until smooth, then stir in zucchini and mashed bananas. Gradually add in dry ingredients, mixing until just combined. Fold in chocolate chips. Fill each muffin liner 2/3 of the way full with batter (I use a 1/4 cup measure to get the muffins to be of equal size).
- Bake for 15-17 minutes, or until tops are no longer wet and become slightly golden. Remove and let cool until comfortable to the touch. Top with brown butter glaze if desired.

Mmm my mom used to “trick” us by making zucchini chocolate cake. We’d gobble it up as fast as she could make it. I’ve even made zucchini cupcakes with orange juice and a caramel frosting that were amazing. I should make those again this fall. Love the idea of the mini chocolate chips in these. I am 100% in love with mini chips.

Banana and zucchini. Well, this is almost too healthy ;). Love both banana and zucchini when baking, but I’ve never tried combining them. Great idea. Unfortunately all I have right now is some cabbage…I just don’t see that working in cake.
I’ve been on a muffin kick lately – trader joes blueberry bran to be exact (have you had?) despite my love for those, these are on another level..the level where it’s actually worth it for me to bake instead of buy…unless you’re selling.

I’ve been weary of zucchini in my baked goods recently because.. get this.. I’ve never had zucchini bread before! I feel like an alien. :( But these muffins look so approachable and EASY and I can literally see how soft and fluffy the interior is, Jessica! The brown butter glaze tops it all off. I’ll only eat zucchini in baked goods by the end of summer. I’m totally over eating it in vegetable form. Pair it with chocolate chips and brown butter glaze and I’m in. :-)
I made something similar last year and was blown away at how moist they were. On their own zucchini and banana impart a goodly amount o’ moisture but together…heaven!

I think you’ve come up with the master muffin creation!! I made some zucchini muffins not too long ago, but now these would be the ideal replacement (or step up?). I just have one problem – I need to steal ripe bananas from my mother. She’s hoarding them in her freezer, which I don’t mind at all.
These muffins are everything I want to eat ever. The end.
How did you know that I have bananas and zucchini that I need to use up? I mean, seriously!!! Yum!
My fiance is 6’4″ tall and I am almost 6′ – a king size mattress is absolutely necessary. Costco has mattresses that come compressed in a little box (that weighs about 200 lbs or something), so you could fit that up your stairs. Then you unleash it and it expands into a giant mattress that is actually SUPER comfortable! For real, it is a very good mattress. They have an excellent return policy, too, and will come to your house to pick it up if you want to return it (so, again, you don’t have to worry about fitting it down the stairs).
Focusing on the important things, here, but the trick to getting the mattress up the stairs is ordering it from somewhere that delivers. When the people show up with the mattress, they also have giant…I dunno, like seat belts, but for mattresses! They fold the mattress in half, and a queen becomes smaller than a twin and goes right up the stairs, even in my hundred-year-old house with low ceilings and a 90 degree turn halfway up the stairs.
Unfortunately for us both, I have no idea what these magical devices are called, so if you want to do this without paying a hundred bucks in delivery fees, you might want to call around to moving companies, etc, and see if there’s a way you could rent one for a day.
If it means I can sleep in a king bed at night, I don’t even want to tell you what I’d be willing to pay in delivery fees.
Wow…those look amazing! My weekend was not shy on sweets and wine was well, so some veggies this morning are just what the MD ordered! I love zucchini breads and muffins but never mixed them in with banana (usually chocolate chips though!)
You are funny. Question – I know it’s not a huge diff but why do you put 2/3 cup milk in your whole wheat banana muffins and only 1/3 cup in these banana-zucchini muffins? Just wondering how you come up with the adaptations! :)
Hahaha I definitely don’t have a science to it… it’s really just based on trial and error! The zucchini seemed to add a little moisture when I made these and the 2/3 cup was just way too much!
Oh I love going to the grocery store as well…I thought I was a little weird, but it appears I am good company.

One more tip on the king size mattress – most places will give you the option of getting 2 twin size box springs instead of one king size box spring. That will make it much easier to bring it up the stairs. And as someone else mentioned, the actual mattress will flex and bend so you can manhandle it up your stairs. Macy’s has great mattress sales, so keep an eye out for those. (I think there is actually one coming up around Labor Day). We bought our King mattress from Macy’s at probably 70% off the original price. It was worth every penny!

My grandparents slept on the 2 twin beds and that’s how they made their king… I just can’t get into that idea!
Mine did the same thing, but only the box springs are split. The mattress you actually sleep on is still a king size mattress. It’s sneaky like that!
Those look awesome! Most zucchini breads/muffins have a crap-ton of oil and I usually end up subbing yogurt or sour cream, but only 1/4 c. butter in these? Me likey..

I can’t say for sure without trying it, but I would start with adding 1/2 cup oats and another 1/4 cup of milk. If the batter seems too dry, add another 1/8-1/4 cup milk. Without trying I can’t guarantee anything, but it’s where I would begin.
