Whole Wheat Zucchini Banana Chocolate Chip Muffins.
Fruit AND vegetables on Monday? This is huge.
I desperately need it too, after a weekend that severely lacked nutrition (ummm except for frozen yogurt – twice – which is 100% healthy) and I will gladly take it in carb form other than… real form. Much more interesting eating green veggies this way.
What this weekend didn’t lack was really cold white wine, a Saturday spent grocery shopping (which uh, might be my favorite date – I’m easy) and an excellent night’s sleep because I just might have “forgot” to wake up my husband after he fell asleep on the couch and then covered him in a blanket, tip-toed out of the room, turned on a repeat of Fashion Police along with the ceiling fan on high and enjoyed a looooong, solid stretch of interrupted shut eye. I love playing that game.
And the next day? We seriously researched king-sized beds and are currently trying to figure out HOW we can fit a mattress up the steps and the actual headboard in our room. I’m up for all sorts of trickery with this.
I’m also attempting to figure out how I can manipulate this entire situation into a fully decorated Anthropologie bedroom paradise.
And apparently putting vegetables in my MUFFINS.
I might be losing it?
I haven’t made many baked goods with zucchini in them because, well… I’d think the reasons were obvious. But last week I had some super delicious zucchini lemon bread and I didn’t think that there was any way I could top it sooooo… I took the easy way out and made muffins. And added chocolate because that makes everything – especially vegetables – better. Oh and brown butter glaze. If you want it.

Whole Wheat Zucchini Banana Chocolate Chip Muffins
Ingredients
- 2 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/3 cup packed brown sugar
- 1/3 cup low-fat milk
- 1 1/2 teaspoons vanilla extract
- 1/4 cup unsalted butter, melted and cooled
- 1 1/3 cups freshly grated zucchini
- 1/3 cup mashed banana, 1 small-medium banana
- 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees F. In a bowl, whisk together flour, baking soda, salt and cinnamon. Set aside. Line a muffin tin with liners.
- In a large bowl, whisk egg and brown sugar together until smooth and no lumps remain. Add in vanilla extract, butter and milk, whisking again until smooth, then stir in zucchini and mashed bananas. Gradually add in dry ingredients, mixing until just combined. Fold in chocolate chips. Fill each muffin liner 2/3 of the way full with batter (I use a 1/4 cup measure to get the muffins to be of equal size).
- Bake for 15-17 minutes, or until tops are no longer wet and become slightly golden. Remove and let cool until comfortable to the touch. Top with brown butter glaze if desired.

The chocolate totally makes up for the veggies. These look awesome.
And my favorite date is Saturday night at the grocery store. No crowds, freedom to peruse the aisles, and a whole Sunday stretched out in front of me with a full fridge!
I almost fell out of my chair, but then I saw the mount of chocolate chips and all was right in the world.
Zucchini + banana + whole wheat flour = health food. I approve.
If you want a king bed that will be a snap to get in your bedroom, get a sleep number bed! My boyfriend and I purchased one recently and I am in LOOOOOOVE! Plus, it comes in pieces so the bed can get into any room easily. On top of that, the bed is SUPER comfortable. Expensive, but we’ve never looked back!

uh, there is and I can’t read…would it substitute ok with coconut oil you think?
I tried coconut oil and omitted the banana. Also substituted maple syrup 1/3c for the br sugar. Worked really well!

Love that I can sneak some veggies into these muffins and my kids will steal eat them right up. Because of the chocolate chips. And the fact that they are muffins, which look a lot like cupcakes. Every kid loves cupcakes.
I am so making these next time I eat too much homemade cookie butter straight from the jar, per my favorite food negation theory http://www.amateurgourmet.com/2008/02/food_negation_t.html. I may also make too much delicious brown butter glaze…in which case, I’ll have to make more zucchini muffins, and so on…

question! i made these tonight and mine were delicious but stuck to my cupcake liners really bad. does the type of liner ever cause sticking for you? I used pretty thick, decorative paper cupcake liners from a novelty store. what do you think? thanks!

I have about 10 pounds of zucchini from my garden that I still need to use up, so this recipe looks WONDERFUL! I need to pretty much quadruple the batch and then some…and give tons of muffins away to friends/family/neighbors. Think I’ll definitely be everyone’s best friend after giving away these bad boys!

i have some frozen bags of pureed zucchini that i would loove to use up over having to fresh grate this year’s crop – think the consistency difference would change the muffin?
I think as long as you let it completely thaw and slightly pat it dry, it should be fine.

Go for a king tempurpedic! the box springis actually two twins, and will easily fit, and they will be able to fold the mattress to fit also. WE LOVE OUR BED, and swear it saved our marriage. He actually snores a lot less, and I don’t feel it when he gets up 85 times to go to the bathroom.

2 XL twins will get upstairs, no problem! That’s what we had to do the week we moved in because our queen wouldn’t fit up the stairs. We don’t have a headboard though.
I love the fact that there only one banana needed…I never manage to keep three bananas from the fruit bowl with a 4 year old in the house, let alone let them get ripe enough for baking with! And zucchini too! Yum :-)

These were amazing! I made 2 batches last night with and without the glaze. I actually used the glaze on another chocolate zucchini muffin that I made and it was fabulous!

These muffins are so yummy! I made them (without the glaze) for the weekend at the cottage and they were a HUGE hit! Even the banana haters loved them. I’ll be making these over and over again :)

Just got done making these, they are wonderful!
Made these for my kids who hate muffins. I grind my own fresh whole wheat flour in my grain mill which made it warm and fresh! My kids tried to lick the chocolate chips off to avoid eating the muffin at first and when that didn’t work and they finally bit into it. They ate four in one sitting!!! They loved these! Thanks for sharing!
I made these for my family this past weekend. My 20 month old son isn’t the best eater, but he’ll try everything. I am happy to say the past 2 mornings he ate almost the whole muffin! Thanks for sharing such a great recipe!
I cut down slightly on the chocolate chips and these muffins were pretty darn BAD…and not in a good way. Perhaps the only thing that saves them is the entire 1/2 cup. Maybe add more.

I doubled the recipe and make a dozen muffins and a loaf of bread. The bread is still cooking but the muffins are done and delicious!! I think my kids will love them as well. Any idea on health info?
