Quick + Easy No Bake Oatmeal Peanut Butter Bites.
I love today.
It’s Monday, but it’s really Tuesday and even though it feels like Monday and smells like Monday and tastes like Monday, it’s really Tuesday. So perfect.
Let’s do this every week.
I also made you a snack. A snackity-snack, if you will.
And guess what? I can’t stop eating it. You’re probably expecting me to be like OMG! I’m so obsessed with this! and guess what? I totally am.
OMG. I am so obsessed with this.
Soooo I wanted to make my oatmeal peanut butter snack squares for my husband… and as I started gathering ingredients I realized that I had no flour. Zero. None. No whole wheat, no all-purpose, not a drop. Not a sprinkle. Which meant I had to get creative, but it couldn’t be *too* creative since he just wanted some “normal” food. Sometimes he just wants spaghetti and meatballs.
He rarely gets it. Because I’m always shoving something new in his face, something much too “foodie” for his liking. I decided it was time to be nice.
Two things were instantly out: first, coconut. Even though he likes the flavor (read: coconut rum), it’s the texture he can’t stand. That was fine… I wasn’t really in the mood for a peanut butter coconut ball. Second – no dates. I actually love dates on their own, but looooooooathe them in granola bar and ball recipes. No people – they do not taste like cookie dough. Or chocolate. Or s’mores topped with peanut butter topped with fudge. No. They taste like freaking dates, because that’s what they are. !!!!! In case you don’t quite get it yet, I looooooooathe them.
It took a few test runs, but I developed the chewy-but-not-too-sticky consistency that I wanted with the majority of the ingredients I was going to use anyway from the other bars and boom. Instant peanut butter balls. I don’t know if we can call them energy balls but that’s what I say because I think I know everything. And they are so much better when rolled in crushed almonds or peanuts. I mean, so much. We actually ended up fighting over them… like when I went to grab some before a workout and noticed they were GONE. Like totally missing. He took them to work and I threw a fit.
Now, I just make a big double batch on Sunday (rolled in peanuts for him, almonds for me) and keep them in separate containers labeled “touch my balls and you’re dead.”
Quick + Easy No Bake Oatmeal Peanut Butter Bites
Ingredients
- 1 cup old-fashioned rolled oats
- 1/4 cup ground flaxseed
- 1/4 cup sliced almonds, chopped
- 2 tablespoons chia seeds
- 1/8 teaspoon cinnamon
- a pinch of salt
- 1/4 cup + 2 tablespoons creamy peanut butter, melted and slightly cooled
- 1/4 cup + 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
- 1/4 cup ground peanuts or ground almonds, to roll the balls in
Instructions
- Combine oats, almonds, flaxseed, chia seeds, salt and cinnamon in a large bowl and stir.
- Melt peanut butter and allow it to cool slightly (I melted mine in the microwave for about 30 seconds, then stirred), then stir in honey and vanilla extract until it’s combined. Once peanut butter has cooled a bit, pour it over the oat mixture and mix well with a spoon then bring together with your hands. Once mixture is sticking together, fold in chocolate chips.
- Roll dough into golf-ball sized (or slightly smaller) balls, then roll in ground peanuts or ground almonds. These can be eaten at room temp but we really like them stored in the fridge!

But these bites I am totally obsessed with! I actually love them with toffee bits too. and I even dipped them in melted white chocolate instead of the nuts. it was amazing.

Loved this! We are doing a gluten-free, soy-free, refined sugar-free, caffeine-free, alcohol-free, dairy-free diet and I made these (w/o the chocolate chips and with cocoa powder instead) and its been great to have something sweet for “dessert” after meals.
I cannot wait to make these. I was shocked and excited that there is NO BUTTER in these.

Didn’t have flax or chia seeds – which is not a great start to the recipe, so improvisation was ground almond/sunflower seeds/linseed (came already crushed and together). And that is what I put in the balls, and rolled them in too!
And added extra choc chip, because it sounded like a good idea!

I’ve made these twice in 2 weeks, and will be making them for the third time in a row in a couple of days. They are sooooo good, and I totally wasn’t expecting my boyfriend to like them (even though they are a hit with your husband). But I was wrong. He loves them and is eating more of them than I am, I’m gonna have to take a cue from you and make some his and hers balls.

Holy smokes these are awesome. Delicious, pretty easy, and exactly what I was looking for. Even had all the ingredients already. I ran out of ground peanuts halfway through balling and might just skip that step next time unless I’m taking these to go. Which I am likely to do so I don’t drive through somewhere. Their only downside is that I have to store them in my house and simultaneously try not to inhale them. Thanks!
These were delicious!! Over just broke and was searching for a no bake peanut butter oatmeal and came across this page. Had all the ingredients minus the chocolate chips, added about a tablespoon of cocoa powder instead and sprinkled a little bit of coconut flakes. Will totally be making these again!!
Amazing! I love these, I am completely obsessed. I agree they are much better after a stint in the fridge. I didn’t have chia seeds and they turned out great without. Didn’t have quite enough ground almonds to finish rolling so I made sure to add a little more on the second go around. Also found some vegan mini chips chocolate chips at Target which were a great in these! Thanks!

Just made these- SO good and easy!!
Instead of chia seeds, I ground up pretzels for some extra crunch! I also used pretzel sticks like lollipop sticks, so they’re little granola pops!
I covered half in ground peanuts and half in shredded coconut- they’re going to be a big hit at work; my roommates have already asked for the recipe!

About to make these for the second time. They really are quite delicious–even my food-trend-averse husband loved these. I’m going to try them without the honey this time, since they were quite sweet the first time around, and also without the chocolate chips since I’m trying this new vegan thing, and I don’t have any carob chips on hand.
Try vegan choc chips — avail. at co-ops, Whole Foods, etc. Also, maple syrup is a delicious substitute for the honey (assuming you’re using natural/unsweetened peanut butter, of course). (-:

This makes me smile, i eat this almost everyday, except in a bowl, not a ball. i actually have natural peanut butter, Chai seeds,Milled flax,honey and cinnamon mixed in a tupperware container in my cubbard to eat by the spoonful :) The proportions are a bit different and not sure my concoction would be good enough to print, but i am so very thankful you did the hard work of getting the consistency right and printing it for the rest of us. I might omit the vanilla, simply because i like the ingredients flavor as is. THANK YOU SO MUCH!!

I was scrolling through your recipe index and saw this picture – of course I clicked it. :) I was happily reading about your experimentation with these balls, when I began to wonder what “specialty” ingredients you would use. I was so pleased to see that you use common, simple ingredients to make these. I don’t usually have chia or flaxseeds on hand, but overall, it’s a simple recipe that almost anyone could make. I really appreciate that. These are the kind of recipes I am trying to provide on my blog. So many healthy bloggers use ingredients that are expensive and hard to find, so thank you.
