Eggnog Chocolate Chip Bread.
Please indulge me for a moment while I discuss how eggnog is weird for the third year in a row.
I mean, it’s weird, but I like it. I don’t know. I have such mixed feelings. The minute I spy it in the store, I buy a jug and then probably consume less than a full glass. Maybe I just love the IDEA of eggnog?
Yeah. That’s probably it.
I’m such a crazy dreamer that all year long I have these wonderful visions in my head of standing in a warm, fire-glowy house, decorating a tree and sipping on the perfect little glass of eggnog dusted with nutmeg in my perfect little life. Uh, perfect little life? You can show up now.
You’d think I’d learn year after year or something, but maybe my brain just freaks out and forgets eleven months later that rarely do I ever finish a container of eggnog. Ever. But no. Just keep on dreaming in my dreamer mind.
Anyhoo. What I’m really trying to say is that eggnog isn’t really my cup of, well… eggnog, when it comes to using it in beverage form. I love a few tastes throughout the season, especially if it’s spiked (but of course), but it’s almost too creamy and rich, even for me. And yeah, if I’m talking about something being too rich? It’s rich. This is the person that can eat like four slices of cheesecake in one sitting. Rich doesn’t have anything on my tastebuds.
But the thing is, I really love the flavor of eggnog. And I clearly love the whole concept since I’m the most into-the-holidays cliche ever evah. So baking with it? Well, I’m all over that.
Last year I made an eggnog crumble crunch cake and because I’m a texture freak, absolutely loved it. I wanted to do something similar for the season, albeit a little simpler, in order to have an eggnog idea when it came to homemade gifts and snacks around the house. And I think we can all agree that while quick breads often end up being a dessert, they are totally a breakfast food. They just… are. It’s bread. You eat bread for breakfast. It all adds up. Simple addition.
I have no idea why I’ve always hated math so much.
Eggnog Chocolate Chip Bread with Brown Butter Eggnog Glaze
Ingredients
- 1/2 cup unsalted butter, melted and cooled
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/8 cups whole wheat pastry flour
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup eggnog
- 2/3 cup chocolate chips tossed in 2 teaspoons of flour
glaze
- 1/4 cup brown butter
- 1/2-3/4 cup powdered sugar
- 2-3 tablespoons eggnog
Instructions
- Preheat oven to 350 degrees F. Grease a 9×5 loaf pan and set aside. In a small bowl, whisk together flour, baking soda, powder, nutmeg and salt until combined. Set aside.
- In a large bowl, whisk cooled butter with sugar until smooth. Add in vanilla extract, mixing until combined, then whisk in each egg one at a time until totally combined. Add half of the flour mixture, stirring with a large spoon, then stir in the eggnog until smooth. Add remaining dry ingredients and stir until just combined and smooth. Fold in chocolate chips. Pour in the greased loaf pan. Bake for 50-55 minutes, until top is golden and cake is just set. Let cool completely, then cover in glaze.
- To make glaze, whisk together brownie butter, sugar and eggnog, stirring well for 1-2 full minutes until combined. If it still doesn’t appear glaze-like, add in eggnog 1/2 tablespoon at a time and mix again. Don’t worry if it becomes too liquidy – just add a tiny bit of powdered sugar until you get the desired consistency. Spoon glaze on bread then serve.

This looks so yummy! I’m with you on the eggnog, not a fan BUT I am a fan of Vanilla Eggnog, sooooo good. Doesn’t even taste like eggnog, almost more like a milkshake. Ahhhmazzzing!

I find it at any grocery store. It’s Hood brand. Soo delicious!!
okay. EVERY year I buy the egg nog and my husband sees it in the fridge and shakes his head because he knows I’ll have MAYBE a glass and then it’ll sit there and go bad.
However, this year i’ve had two quarts! Maybe you have to get older to enjoy it? Haha.
Ok, my friend. I am about to blow your mind. I have the same feelings about eggnog. I want to like it, but…..eh. HOWEVER, have you ever tried Coquito? It’s a Puerto Rican coconut eggnog and it will blow you away. So sooooo good. Try this on for size….

I used to make my father a batch of eggnog custards every Christmas. He’d always make a pretend fuss that they were just for him and act like he didn’t want to share. I haven’t made the recipe since he died…just wouldn’t be the same.

Ahh, egg nog. I totally love the idea of egg nog, but sometimes it is too rich! I like having a splash or two of it in my morning coffee or with milk — that’s delish. All those splashes end up on my waistline though, ahg.

Egg nog ice cream is never a bad idea. Just put it into your ice cream freezer and boom, there you go….

I’m with you on loving the taste of eggnog but it being too rich/sweet. So what I do is mix it 50/50 with skim milk. Then I heat it up in the microwave. It’s the perfect sweetness and taste….so good on a cold day!
Yes! Do this, Jessica! I was going to post saying the same thing. Also, I like to brew coffee (they have eggnog flavored coffee beans but it doesn’t have to be) and then I pour eggnog into it and sprinkle cinnamon on the top! It’s like an eggnog latte. SOO friggin good!

I totally agree – I can’t drink eggnog because of the rich & creaminess! HOWEVER I discovered the almond milk version this year “Noel Nog” and it is AMAZING! It has the flavour of eggnog without the rich, creamy, too-sweet-for-a-drink taste! You should try it.
Try mixing your eggnog with milk and adding a couple ice cubes, seriously life changing!!!

This looks amazing, and I love eggnog! Do you think you could use regular all purpose flour, or would it have to be whole wheat pastry flour? Also, I was thinking of bringing this to a holiday party, and I’m not sure the glaze would sit through the drive. The bread looks fantastic by itself, do you think the glaze has to be with it?

I made this bread with Smart Balance and lower fat eggnog. It is incredible. The brown butter glaze is just too much.
I LOVE this and I think I will get gifting smaller loaves for Christmas this year! I am sure the full fat version will be even better, somehow.

I just bought a jug of eggnog and drank about a 1/4 cup. It’s like drinking melted ice cream, which sounds amazing in my brain, but real life me isn’t into it. Baking is totes the way to go. Imma bake this bread!

I have a solution to your eggnog qualm! My entire life, my mom has enjoyed eggnog but also found it too rich and creamy-thing. Solution? “Water” it down with a little skim or 1% milk (like, 50/50 ratio) and then spike with your favorite rum! Voila! I can’t drink it any other way, to this day….although I’ve heard homemate is incredible.

I like to add orange juice to egg nog. It lightens and brightens it up.

This turned out great. I used regular King Arthur all purpose flour, skipped the glaze. It does have a mild egg nog taste. This recipe was easy. I’ll make it again when I don’t know what to do with the left over eggnog.
