Frosty Coconut Mojitos.

I’ve made plans for you.
They include these drinks. Pink straws included. !!!! (if you want.) (but why wouldn’t you?)
I figured instead of forcing my childish Jessica-specific vernacular on you today along with extra love for sprinkles, glitter, 90s boy bands, denim and all other predictable things I gripe about, I’d just show you a picture of this icy drink and hope it’s enough.
Sometimes that’s all you need. Can I get away with this?
Frosty Coconut Mojitos
Ingredients
- 3/4 cup coconut rum
- 1/2 cup canned light coconut milk
- 1/4 cup coconut water
- 1/4 cup club soda or seltzer, I used coconut la croix
- 1/2 cup mint simple syrup, recipe below
- 2 limes, juiced
- 1/4 cup fresh mint, torn into pieces
- 1 1/2 cups ice, approximately
mint simple syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- 10 fresh mint leaves
Instructions
- Combine all ingredients in a blender and pulse until ice is crushed and mixture is combined. Add more ice if needed, then taste and add a little extra rum if desired.

- Add all ingredients to a small saucepan and heat over medium heat just until it bubbles, stirring constantly until sugar dissolves. Turn heat down to low for 2 minutes, then remove and let sit to cool for 15 to 20 minutes.

for something a little thicker I might skip the coconut water and go straight for cream of coconut – because ya know, calories don’t count when you drink them ;)

These look delish!!! If I wanted to make it a virgin, is there something I should use to replace the rum??
i think if you just increased the rest of the ingredients and maybe added a little coconut extract?? you could always use full fat coconut milk or even coconut cream, i just used the light stuff so it wasn’t super thick and creamy with the alcohol. if i made a virgin one, i’d probably use full-fat!

coconut sounds like the perfect addition to a classic mojito! So refreshing & summery. :)
I already love mojitos and anything with coconut, so putting the two together would be a dangerous cocktail for me. Mainly because it would not be a cocktail…it would be cocktails. Plural to the tenth degree.
Long story short, I hate mojitos with a passion and actually had a super strong aversion to them for years. I tried one the first night I got suuuuuuuper drunk – the funny thing is I didn’t even finish it and made myself sick off screwdrivers, but since the mojitos were the only new thing I tried that was my aversion I developed. It was so bad that I’d gag and get a little nauseous if I even saw a picture of one. This is the first time I have EVER looked at a mojito and thought, “wow, that actually looks delicious.” I don’t know what black magic this is, but it says a lot about your recipe that even I think it looks amazing!
