You can’t make blondies without butter.

I mean, a whole lot of butter.

Also, I just noticed that autocorrect informed me that you can’t make BLONDES without butter.  I’ve been a blonde before and I’m not sure if this is entirely true.

Anyway, it’s no secret that I love some butter – in any form, really – but this is the most butter I’ve used in a loooong time for something that does not consist of buttercream frosting. I’ve missed it.

Originally, I wanted to make oatmeal chocolate chip blondies. Like – oatmeal actually in the blondies. And I did do that.

It wasn’t that they weren’t… *good.* They were okay. But the oatmeal sort of made the blondies cake-like. A bit fluffier, if you will. They didn’t resemble real blondies that were chewy and dense. And even though I gave most of the pan to my cousin and I’m pretty sure that between she and I, they were devoured… they just weren’t up to par. I couldn’t deem the blondies worthy of invisible internet friend sharing. Get what I’m saying?

It will be a miracle when I can one day tell a story or type out my thoughts and feelings without saying so many words. My dad tried to help me with that habit about five years ago and my husband just commented on it six months ago. But it DOESN’T MATTER. I need all the words.

I’m really fun in an argument too. Obviously.

My super excitement over some extra texture in these blondies is through the roof. Hello, streusel? It’s so crunchy. SO it’s like a little crunch on top ending with some chew. And some chocolate. A bunch of C things. Crunch, crispy, chew, chocolate.

The oatmeal cookie streusel got me insanely thrilled to make some of these sweet potato hasselback potatoes with the cookie crumble on top. Maybe I’m ready for fall.

Maybe.

But for today, this.

A glammed up bar – now that’s what I like.

Chewy Chocolate Chip Blondies with Oatmeal Cookie Streusel

Yield: makes one 9x9-inch pan

Total Time: 1 hour

Ingredients:

12 tablespoons unsalted butter, browned
1 cup loosely packed brown sugar
2 teaspoons vanilla extract
2 large eggs, lightly beaten
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips

2/3 cups rolled oats
2/3 cup loosely packed brown sugar
2/3 cup all-purpose flour
1/4 teaspoon ground cinnamon
5 tablespoons unsalted butter, softened

Directions:

Preheat the oven to 350 degrees F. Spray a 9x9-inch baking pan liberally with nonstick spray. Set it aside.

In a large bowl, whisk together the brown butter and sugar until combined. Stir in the vanilla extract, then add the eggs and whisk until a smooth batter forms. Add in the flour, baking powder, soda and salt. Stir until the dry ingredients are incorporated completely. Stir in the chocolate chips.

Spread the batter in the greased 9x9-inch pan. Prep the streusel.

Whisk together the oats, sugar, flour and cinnamon until combined. Stir in the melted butter until the mixture is moistened. Crumble it evenly over top of the blondie batter. Bake the bars for 30 to 35 minutes, or until the center no longer jiggles and the edges are golden. Let cool completely before cutting.

    Well they sure look good! Those cross-sections of choc chips in the interior look so inviting! What you were saying though about fluffier – I never use any baking soda or baking powder in mine b/c I like the dense, slab-like texture. Whenever I have put either of those leaveners in, I always end up with more cakey/puffy so I never do anymore. I love the streusel topping! Mmm, great thinking!

      THANKS for the tip about the leaveners – I also prefer a denser, brownie-like texture and typically omit soda and powder in blondies, etc. I have these in the oven now (minus the baking power & soda)!

    Blondies with out butter?! NEVER! You need that goodness to make it dense and rich. Also you can not forget the crackling top. The cross section of these are mouth watering!

    These look phenomenal Jess, and your photos are gorgeous! I adore streusel topping and usually only eat that part of a streusel muffin, but I don’t think i’d be able to stop at just the topping on these blondies!

    There’s a six layer chocolate cake with salted caramel and chocolate buttercream that I bake occasionally that contains almost three whole pounds of butter. It’s the reason I now have palpitations if I see that I have less than four pounds of unsalted butter in my fridge at any given time. Seriously. I’m down to one and a half pounds right now and on my grocery list at the very top is says UNSALTED BUTTER in all caps.

    i have a feeling that after i make these, then consume them, my center will begin to jiggle. Which really is ironic since when they come out of the oven their center is ‘no longer jiggling’. it’s like they are mocking me.
    i’ll use a little bronzer on my face to get the ‘golden edges’.
