Toasted Marshmallow Cream Hot Chocolate.
Today calls for chocolate.
Today, a few of my friends are throwing a little online partay for one of my veryveryvery closest friends, Bev. Bev is about to welcome twins into her life and this post can’t even begin to scrape the surface on my excitement for her.
But let me start at the beginning…
Bev and I met for the first time at an airport. We were headed to the same destination and ended up with a layover at the same place… and I can’t even tell you how long that layover was because we.never.shut.up.
Things only went downhill (uphill?) from there.
We were lucky enough to sit together on the plane, which was totally awesome, but only for us. To say that we didn’t halt our conversation for the entire FOUR HOUR flight would probably be an understatement. To this day, I am still suffering airplane karma for the damage we did. No, really. If I was another passenger on our flight, I may have lobbied for the plane to land and for us to be kicked off. We tried to keep our talking quiet but that didn’t stop multiple people from yelling at us, including the final woman who was like “we can hear everything you are saying. EVERYTHING.”
I probably don’t deserve a quiet flight until at least the year 2037 for that experience alone.
It was on that flight though, included in one of our many way-too-loud and probably quite inappropriate conversations that I asked Bev if she wanted kids. You’re probably not supposed to ask people questions like that within hours of meeting them, but I don’t really know how to make friends. And it was on that flight that Bev shared her story with me and said yes, they really wanted a family.
That was just the beginning of our friendship. I could tell you that it was because we bonded over the fact that 253 other people were probably hoping that we’d be added to the no-fly list and for their rest of their lives, will hear our annoying voices in their nightmares and envision it to be their own personal hell, but it really isn’t that. It was everything else.
A few months after that, Bev called me late one night after I had texted her that I was trying to find my emotions at the bottom of a cookie butter jar. I don’t even remember what I was freaking out about, but she talked me down off the ledge.
One day, after I shared drinks with my invisible internet friends and talked about my freakish obsession with Lisa Loeb, she sent me a whole video of her playing Stay on her guitar and singing every lyric. Singing it WELL! Good lord, you have no idea how badly I’d like to include that clip.
Exactly one year ago today, I forced her to come meet me in New York City so I wouldn’t have to make life decisions on my own and because I’m a giant baby but mostly because I love her and knew that for 24 hours, we could have the time of our lives.
We did, in the means of walking ten or so miles because we are freaks and eating pizza at midnight. She also saved me from crossing the street without looking about six times, so she has that motherly instinct. I was good practice.
One year ago today, we walked in the cold and talked for hours straight about how the coming year was THEE year. How the months to follow would give her everything she had wanted for so long or how they might… not. I am not kidding when I say that I have NEVER in my life met a more positive, optimistic person.  There are very few people I consult in my life before making big decisions and she is one of them. On everything. I’m not sure that I can even express my excitement, love and absolute overwhelming joy that exactly one year later, here we are. Talking about her babies and the wonderful reality that is coming next.
And she’s not only about to have one baby, she’s going to have two! I don’t really know anything about kids (or math) but I’m pretty sure that’s double the love and double the work. It sounds like fun and I should probably move there.
In our circle of trust here, I’ll tell you that this hot chocolate might not be Bev’s first beverage of choice. It’s one of our very few differences (well that, and the fact that I’ll probably clothe my future children in neon and glitter from head to toe while hers will be in stripes and neutrals) but I’m convinced I could get her to take a few sips. This is a SUPER RICH (hear that? very very very rich.) hot chocolate – more like sipping chocolate – that it truly taken over the top with a hefty dollop of homemade marshmallow frosting. I advise you to not be obnoxious like me and serve it in gigantic mugs because you might feel like you’re going to die afterwards.
Totally worth it though. Totally worth it.
Toasted Marshmallow Cream Hot Chocolate
Ingredients
- 1/2 batch marshmallow cream frosting
- 2 (14-ounce) cans coconut milk
- 1 1/2 cups heavy cream
- 3/4 cup milk
- 2/3 cup sweetened condensed milk
- 12 ounces dark chocolate, chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
Instructions
- Combine the milks, cream, chocolate, vanilla extract, salt and nutmeg together in a large saucepan and stir constantly until the chocolate is melted and the mixture is heated through. Pour the hot chocolate into mugs and top with a tablespoon or two of the marshmallow cream. The marshmallow is super thick and rich, so keep that in mind when it comes to adding your desired amount. Torch the frosting on top if desired. I suggest serving this with a spoon since the marshmallow may get all over your face!

I appreciate you so much!
[P.S. Bev, I hope I can introduce Natalie to some hot pink lipstick in, like, 18 years.]

There’s nothing like finding someone who you can immediately connect with. It’s so awesome that you found that with Bev, and now she’s having bebes! Hot chocolates all round!
Wow it must be fate to have connected with someone like that. Especially on a plane flight were most people are hesitant to connect to others.
The topping is my fave part to this drink! instant fresh marshmallows!
Marshmallows and Hot Chocolate is awesome
Ohmygoodness yum

What a beautiful story about you and your friend Bev. I actually started following her because of you. She is a pizza goddess, a girl after my own heart. Congrats to her and her babies.

Aww instant friends! How fun! There are much worse things you could have done on a plane. Talking happily with a new friend isn’t that bad in the grand scheme of things. :) This hot chocolate looks amazing!
Aww I love this story! Isn’t it amazing when you meet someone that you connect instantly with? (Well, amazing for you and perhaps not so amazing for the others on the plane in your case). Congrats to Bev and her growing family!

Holy heck, this looks like my new favorite drink in the worlddd!
Oh my gosh, I loved every word of this post. Especially the airplane story.
Holy smokes! Loving this! Also, it’s an awesome baby shower addition! Great post :)
this is amazing – i love creamy, rich hot chocolate!
There’s a slight change this is a duplicate comment but I love this post!! It’s so fun hearing the story of your friendship with Bev. I still remember your impromptu trip to NYC and midnight pizza. :) Love this cocoa!!
I don’t even know WHAT to say right now. I’m wiping tears from my face, laughing hysterically and remembering every.single.moment you described.
Those people will hate us forever and ever. And I SO don’t mind.
And you know what, IN MY CONDITION I would happily suck down about 45 gallons of this creamy hot chocolate. The babies like chocolate. We know that much.
I love you, Jess. xo.
This looks delicious! It is so nice to hear that people still make friendships that way and that doesn’t only exist on sitcoms. I’m such a baby about making friends, but this makes we want to reach out and talk to every lady whose shoes I’m coveting.
What a hilarious story!!! I can only imagine what fun you two had.
Three cheese for chocolate!
Err. *cheers* not cheese!! Lol. More coffee, please.
I don’t know, Aimee,,, Given Jessica’s love of cheese, “three cheese for chocolate” is wholly appropriate!!:)
Love this story about lady friends – too often, women have their claws out – but it’s so nice to meet someone like your friend, Bev. Congrats to her on her double baby blessings!
Also love the lipstick mark. Hot pink for life.
This reminds me of the very rich hot chocolate you can get in Madrid, Spain that is served with sugary churros! You just made my morning I think!
This was incredibly sweet, loved reading this! Also, that hot chocolate…there is no food/drink too rich in my eyes, it looks ridiculously good.
PS Stay is the best song ever. I know every.single.word
This was the sweetest post I have read about, Bev! You two sound like the best of friends and I have always wondered how you guys got to really know each other. I think Bev is pretty awesome and I could not be more exited for her! I have actually gotten my mom to follow along with he pregnancy since she is somewhat obsessed with babies (which is probably obvious since my parents have 7 kids). She is going to be the best mom!
And the hot chocolate!! Girl, it is amazing! SO chocolatey and that marshmallow on top is amazing!
SUCH a sweet post. Loved hearing more about how your friendship evolved. I can only imagine what that flight was like, haha. Also, I was dreaming about a huge mug of hot cocoa filled with marshmallows yesterday…thanks for reading my mind. And all the best to Bev [who I’m so happy to have finally connected with!]!!!! xo

I loved this post! I can just imagine the two of you together on an airplane–hahaha. And this hot chocolate is crazy, I can already imagine how thick it must be. I could use it on a day like this with all the snow.
That is the sweetest story of friendship ever! I love stories like that. Too cute. And I’d totally take a sip of this with you :) and then eat ALL the marshmallow cream!! Yum!
PS aren’t Bev’s pregnancy photos OUT OF THIS WORLD?! She looks so amazing and like she’s going to topple out of the IG frame! I love it!!
Such a sweet story! Congrats Bev!
OMG! Those are a definite showstopper.
You can win over anyone just by offering them a cup of those.. swear I’d declare anyone the best person ever if they handed me a cup of that!

I had to follow the link to see if Bev is Bev of Bev Cooks. Yes! I’ve been using her biscuits and sausage gravy recipe for a while now. So good.
I’m so glad I could read this :) You two are my FAVORITE.
When you and I get on the baby wagon, we’re going to do a photoshoot with all of the kids. Your kids in glitter and neon, Bev’s kids in neutrals and strips, and my kids probably half naked because I can barely clothe myself, let alone a child. And THEN, the Gap will buy the prints for their advertising campaign because we’re awesome.
UGH. I love this SO MUCH! Bev’s baby story inspires me to no end…I don’t know her, even a little, just her blog, but I am so, so, so happy her hopes are dreams are becoming a reality.
I love this!!!!! Such a sweet, awesome story! You have to share the birth update!

OH my. This looks so rich and decadent.
Your friendship with Bev sounds just amazing! How lucky you were to be on that same flight. This hot chocolate looks INSANE! I need a cup of this right now to deal with the snow in NYC!

This is my favorite story, ever. That Bev deserves every bit of happiness and joy that has come to her and then some. And good friends like you who make her OMGSOYUMMY hot chocolate.
This is possibly the sweetest story ever! Also, that hot chocolate looks divine.
Not only are you hilarious, but this is such a sweet post about Bev! Your friendship sounds pretty darn awesome! {the hot chocolate looks freaking amazing, too!}
This is AWESOME. And you ARE AWESOME! I just love ya.
I miss my best friends now. Beautiful post.
Love this post!! I had a similar experience at a restaurant the other day with my friends. We were the only ones there for a long time but then they started seating people around us and I didn’t realize how inappropriate our conversations probably were until other people were around. We got some looks but no one said anything surprisingly!
