Whipped Double Chocolate Chip Chia Pudding.
Let’s be real.
I’ve always been a pudding fan. I mean… always.
I mean… as in it is still a constant struggle every week when I’m in the grocery store because I want to throw a six-pack of pudding cups into my grocery cart. Every single week. And there is no passing them by because they are between the butter and the eggs, which are obvious staples in our life.
I want those pudding cups not only because they taste like a wonderful little plastic cup of nostalgia and seventh grade feelings, but because they make the most awesome snack or quickie dessert. And ummmm the chocolate and vanilla swirl versions? Cannot even.
It’s similar to my old obsession with quaker instant oatmeal in the strawberries and cream flavor. It’s like… I KNOW I can make it at home, and maybe make it without all the garbage chemicals and maybe even make it taste better, but it’s still just not the same. At all.
Whomp whomp.
So most of the time, I do things like this instead.
The other percentage is filled up by actually succumbing to the pudding cup.
Ever since making chia pudding earlier this year (a plainer version and a coconut cream pie one!) my friend Ashley has been telling me how I need to BLEND it! I am not weird about the texture at all, in fact I kind of like it. But the thought of thick almost mousse-like chocolate pudding was in my mind.
And now I’m in love.
I definitely consider this more of a snack or dessert (kinda like my favorite avocado pudding) because I enjoy some texture at my breakfast. But if you are a chocolate fanatic then this totally works first thing in the morning too.
What takes it over the top for me is using some sweet ground cocoa (I can find this ghirardelli one in my grocery store) in addition to unsweetened cocoa powder AND then stirring in some crushed chocolate. Total chocolate overload but in the best way possible. I guess it’s a little healthy too if you want to really think about it, but I’m just a chia freak and like making this quick fridge version in the summer instead of standing and stirring at the stove for a bit. There’s nothing like some real chocolate pudding but this is getting the job done.
Plus then you just brag about all the nutrients in your pudding. And antioxidants because CHOCOLATE.
Whipped Double Chocolate Chip Chia Pudding
Ingredients
- 1/2 cup plain or vanilla greek yogurt
- 3/4 cup full-fat canned coconut milk
- 1/4 cup chia seeds
- 2 tablespoons ground sweet cocoa
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons honey
- 1 vanilla bean, beans scraped
- 1 pinch of salt
- 1/4 cup chocolate chips/chunks, chopped
Instructions
- In a large bowl, whisk together the yogurt, milk, chia seeds, both cocoas, honey, scraped vanilla beans and salt until combined. Cover the bowl with plastic wrap and place it in the fridge to chill and thicken, for about 4 hours or even overnight. I usually go back and stir the mixture a few times while it sits to stir out any lumps. You also might want to take a little taste to see if you’d like it to be sweeter.
- After the time is up and the pudding is thickened, add it to a blender or food processor and blend until thick and pureed. Once it’s smooth, I like to place it back in the fridge for an hour or so to be chilled. Top with (or stir in) chocolate chips before serving.

This is so happening. I’ve been making the coconut cream pie chia pudding (and eating with the amazing fresh fruit that’s been available this summer – pineapple, strawberry, cherry, blueberry, yum!) religiously. Like every week. I tried it with the Liberte coconut yogurt (seriously the best ever coconut). Just…uhhhhhh yes. Thank you for rocking my world with these chia puddings!

YES! Absolutely love chia pudding, and I’ve heard about the whole blending technique for it but to be honest, I kinda like the texture of the unblended kind! Having said that, I don’t think you’d have to twist my arm to eat this. ;)

OMG Love love love! I juuuuust got on the whole chia seed bandwagon, and have been loving it! In fact, I have a recipe posting next week that is a Chia seed pudding recipe, and since I have all the ingredients in the house, definitely going to have to try this one out! YUM!

I’ve resisted the Chia craze but I think you might have converted me! Do you think Coconut Cream would work in place of Greek Yoghurt (to make a DF version- I make my own DF Choc chips)? It has the thick consistancy but not the same acidity. I’ve never worked with Chia seeds before so am unsure of their needs!!!

i haven’t made a chia seed pudding yet because of the texture thing, but with all of that chocolate you may have just convinced me to give it a go!
Have you tried this with low fat coconut milk? Not to be annoying…I just have solo many cans on hand that I’d like to use first. Think it would be too thin? I’m making this tomorrowwwwwwwww with some chopped roasted almonds and coconut flakes.
i haven’t tried this version, but i make other chia puddings all the time with lite canned coconut milk and it totally works!!!

Made this today and now I’m not eating anything else for a week. I ate it unblended because it was just so good and i kept stirring i and eating a spoonful out of the fridge but I”ve tried blending chia puddings before but can’t get them to blend completely smooth. Normal or is the blender not my friend? I use a ninja!

Mmmm … what impressed me the most about this was the fact that you used a mix of Greek yoghurt and coconut milk for the ‘base’. And I’m all for easy desserts!
