One Bowl Whiskey Chocolate Fudge Cake.
The quickest way to trash up an otherwise lovely chocolate fudge cake?
No. Not booze.
(Surprisingly.)
Cereal marshmallows. Straight outta the box.
Outta. Not a word at all, one I’m even embarrassed to type. But that’s how they came. Right outta the box. I probably feel okay writing that out because in the last three months I’ve had more horrifically humiliating typos than in the last three years. Where is my brain?
Also, let’s talk about the stares I got when buying two family sized boxes of lucky charms at the grocery store last week. Like I was gonna eat them all myself. Don’t judge me!
I don’t know WHY I did this again. I mean, yes I do. Last year I made boozy lucky charms milkshakes (after failing miserably at making lucky charms pancakes) and I looked at the photos two weeks ago and got all giddy over the colorful marshmallows. They are so pastel-y and pretty, aren’t they?
Even if Eddie does think that they taste like styrofoam and squeak beneath your teeth. Whatever.
So you don’t NEED the marshmallows. They are truly just for holiday décor. And for my inner seven year old. If you’d rather be classy and just serve a chocolate cake smothered in a thick layer of ganache? Be my guest. I think we know you have a lot more class than I do.
But wait. Can you imagine if lucky charm marshmallows were GLITTERY? My brain just exploded.
I personally love the marshmallows – as in, love so much that I was absolutely the kid that ate all the marshmallows out of the box then stuck the box back in the pantry for my unsuspecting (and excited) brothers.
This sort of felt like that? I think you can order bags of just marshmallows (oh look! you can!) but since I tend to be more of the fly-by-the-seat-of-my-pants type of recipe gal, I had no time for that. Hence buying two of the biggest boxes I could find (no, really, they were huge) and sitting at the counter picking out the pretty little things.
One marshmallow for the bowl. One for my mouth.
[also, these boxes had so many weirdly (is that a word?) colored hat marshmallows inside. since where is there an orange hat? a purple hat? AND a yellow hat? there certainly was a lack of rainbows. even compared to last year! the rainbows are the best ones. obviously.]
The fudgy ganache on the top of this cake is insane. It’s spiked with Irish cream! The cake and ganache itself is definitely enough, but once you see it topped with colorful gems, can you even resist? I might just start putting these things on top of all my food. Can you say lucky charms kale chips?
No. We can’t.
One Bowl Fudgy Whiskey Chocolate Cake
Ingredients
- 1/2 cup hot coffee
- 6 tablespoons unsalted butter
- 2 large eggs
- 1/2 cup buttermilk
- 1/4 cup irish whiskey
- 2 teaspoons vanilla extract
- 1 cup sugar
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 ounces semi-sweet chocolate chopped
chocolate ganache frosting
- 10 ounces semi-sweet chocolate, chopped
- 1 cup heavy cream
- 1/4 cup bailey’s irish cream
- lucky charms marshmallows for toppng
Instructions
- Preheat the oven to 350 degrees F. Grease an 8×8 inch pan with butter and set aside. In a measuring cup, whisk the hot coffee and butter until the butter melts, then set it aside until ready to use.
- In a large bowl, whisk together the eggs, buttermilk, whiskey and vanilla extract. Stir in the sugar, flour, cocoa, baking powder, soda and salt. Once it’s about halfway mixed, pour in the coffee/butter mixture and stir until you have a smooth batter. Stir in the chopped chocolate. Pour the batter into the greased pan and bake for 25 to 30 minutes, or until the cake is just set in the middle. Let cool completely before frosting.

- Place the chocolate in a bowl. Heat the heavy cream and irish cream in a small saucepan over low heat until it just bubbles around the edges. Pour the cream over the chocolate and let it sit for a minute, then stir continuously until the chocolate melts into the cream and comes together. Let sit for one hour at room temperature, then spread the ganache all over the cake. It will be THICK! Top with the marshmallows if desired. If you make the cake ahead of time (like the night before or morning of), add the marshmallows right before serving – in which case you may need to press them into the ganache so they hold. The marshmallows will stay crunchy for about 4 to 6 hours – after that they start to soften a bit.

I always picked the marshmallows out as a kid…and still firmly believe they are better “crunchy” and not soggy when you put milk on them!

I’m definitely on the whiskey + chocolate boat with you–although mine is a pie. (http://www.fchem101.com/2015/03/toasted-marshmallow-chocolate-cream-pie/) And the marshmallow part (also essential, clearly) is meringue and not nearly as pastel. But still so yummy!
I happen to have all those ingredients – so I made this today. It’s ooey gooey delishness! I used double the Irish Cream and milk not cream for the ganache, since that’s what I had on hand…. and I definitely did NOT wait for either to entirely cool. I topped mine with flake salt not marshmellows. Wow – amazing! Loved the alcohol flavor throughout. Will definitely make again!
I would take my with marshmallows. I was on a snack mix kick for a while and the looks I got for buying boxes and boxes of Chex mix. If only they knew what they were missing out on.
YES for the Lucky Charms marshmallows!!! That photo you posted of the bowl of just marshmallows the other day — I thought my heart stopped from the sheer beauty. I can’t imagine a greater heaven. Except on this CAKE. Perfection.

Hi ! I came accross this wonderful decadent cake and I am so willing to do it ! I have one question though : don’t you melt the chocolate before stirring it into the batter ? I think you did, but as you don’t mention it, maybe there is some way I don’t know yet that the chopped chocolate will incorporate into the batter without being melt ??

I baked this today for my dad’s birthday and ended up having to bake it for 55 minutes. I am not sure why, but it took forever to set in the center. I can’t wait to make the ganache and I have plenty of marshmallows for topping!

This cake is, by far, the quintessential chocolate cake. Loved by all my guests at my husband’s birthday party, even those who do not especially favor chocolate cake. One friend raved about it to his daughter in England and son in China. IMO – omit the lucky charms marshmallows for topping. The cake looks elegant without them.
