Avocado Vanilla Smoothies.
Don’t leave me!
This is super delicious, I promise. Kind of like avocado chocolate pudding! But without the chocolate. Which sounds depressing, but let’s change our tune and say that it’s REFRESHING. It is!
Plus, I figured we needed something green for St. Patrick’s Day, something other than salad and something that didn’t include whiskey, potatoes or lucky charms. We can have all that for dinner. After we have this for breakfast.
The first time I put avocados in smoothies was waaay back when Trader Joes carried the frozen ones years ago. Remember that? Thinking about that now, it was probably the biggest waste of money ever – because I think that there were only two full avocados in the package? And they were so tiny. I don’t think they sell them anymore, but back then (indulge me while I sound like I’m 75 years old) I had a super difficult time finding avocados off-season in my area.
And! I can usually FIND them easily now but they still cost approximately $156 an avocado. Or $2.99. Same thing.
So will you please put your avocados in the blender with me?
This is why: it’s almost like ice cream. I know, I know. That’s a very bold, kind of flakey statement. It’s like saying that kale chips taste “just like potato chips!” Spoiler alert: they do not.
But it’s *like* ice cream. It’s not actually ice cream. It happens to take on this wonderful smooth and creamy texture. If you’ve ever had the old-school banana soft serve (which still frequents my food processor often) which is just, well… bananas – it is similar to that. So creamy and refreshing and delicious.
Also, super satisfying. Seriously.
I threw mine in the blender with my favorite go-to ingredients to make a milk-shake like smoothie:
frozen bananas!
hemp seeds…
and coconut milk. The light kind! I know I always ramble about how full-fat is so much more delicious, but I find that you need more liquid to blend this shake since the ingredients are rich. Light works better, and I definitely recommend the REAL stuff from the can. It’s not necessary to blend a smoothie, but it’s so good.
And for a grand finale, I like to add a drop of vanilla bean paste. I basically add vanilla to everything in my life, so it’s like that.
Shockingly, I don’t need any extra sweetener in this smoothie since I love the frozen bananas. If you want a little more sugar while still keeping it healthy, you can throw in a date or a fig or even just some honey. Yes yes.
Grab a straw and maybe a spoon and maaaaaybe some chocolate chips. ??? Can’t help it.
Avocado Vanilla Bean Smoothie
Ingredients
- 2 avocados
- 1 large frozen banana
- 1 handful of ice
- 1 (14-ounce) can light coconut milk, preferably cold if you like cold smoothies
- 2 tablespoons hemp seeds
- 1 tablespoon chia seeds
- 1 tablespoon vanilla bean paste
- pinch of sea salt
Instructions
- Add all ingredients to the blender and… blend!

I’m trying to go dairy free and have been craving a shamrock shake so badly! This with a tad bit of peppermint extract will be perfect! And healthy!

I was friends with a girl in elementary school and her mom made the most delicious avocado Popsicle things. Everyone thinks I’m crazy when I talk about them, but this smoothie reminds me so much of that I’m dragging my kids to the store this afternoon just for avocados and coconut milk. I can’t wait to make these! I also made your milk chocolate soda bread and it’s totally addicting!

no i LOVE avocados. and pretty much ALL of your recipes, but i don’t like them in this smoothie :/ love Seriously Delish and this blog and you, but not my fave post.
sometimes you have to tweak these recipes to suit your own taste buds….

Ahh thank you so much for this! I am on a clean eating kick because I am going to Mexico in May, and this is the perfect substitute for dessert. I’ve been eating avocados daily too. So good.
Jessica, do you ever go to Sams Club? That ‘s where I get avocados because you get 5 or 6 for $6 I think?
Okay, please forgive me up front for sharing my pet peeve with you–LIGHT coconut milk. They take regular coconut milk, add water and charge you the same amount. If it’s 60% less fat, think of all that water they add! I know, it would probably work out to a difference of 50 cents or something but it’s the principle! Curses, you light coconut milk makers, curses! ;-)

girl! You absolutely must go to Aldi for your avocados! They are almost always $0.99 each, and lately they have been on sale for $0.49 an avocado. FORTY NINE CENTS each!

2. Between blog recipes and your cookbook recipes, you must go through an obscene amount of coconut milk woman! Do you buy it by the regular can? Any brand you like best? Like… how many cans are in your cart at every grocery run, or can you buy it in bulk?

I simply had to try this immediately. I was also really craving an iced matcha when I made it so I added some matcha powder and it was incredible! Even better than the iced matches I routinely spend way too much money on… I think you just saved me a fortune.
I made it this morning and it was AMAZING!!! So creamy, almost like a soft serve ice cream and fill me up. I have matcha powder, going to try it on Monday w/ it. Thanks for the idea!

I think the most expensive I’ve seen avocados here in Ohio is $1.50 but usually they’re 2 for $3…. and I thought that was expensive lol, where do you buy vanilla bean paste? I’ve never heard of it but it sounds yummy! :)
