Fresh Mint Cookies and Cream Shake!
Hello hello! Today we talking about an embarrassingly easy SHAKE that needs to be in your summer rotation.
When blended it might not look like a beauty, but it’s filled with fresh mint! And cookies! And cream! In the form of ice cream, of course. I think my inner ten-year-old just flipped from milkshake excitement.
And yes, I’m trying to be a legitimate friend and tell you how to blend things in a blender. I mean.
Eddie’s favorite ice cream flavor is cookies and cream. His favorite dessert, period, is anything cookies and cream. Even when we get froyo, he actually LAYERS the crushed cookies into his yogurt. He gets a little yogurt, scoops in the cookies, gets more yogurt, scoops more cookies and repeats it, like, seven more times until he has a huge bowl.
So! I made these cookies and cream milkshakes with the thought of Father’s Day in mind. But since I’m a terrible, selfish, horrible, no-good person, I put fresh mint in two of them!
Eddie doesn’t like mint and chocolate together. He thinks it tastes like chocolate toothpaste, which in a word, is horrific.
I couldn’t resist though. My herb garden is killing it this year, I’m guessing since we’ve got so much rain. I can’t make mojitos and I planted my mint in a separate pot this year (yes yes, going to share everything I planted over on Crumbs very soon!) – and I already have a ton of it! It just makes everything taste so… fresh.
Plus, you might remember from way way waaaay back in the day when I shared some milk chocolate and fresh mint cupcakes. I mean, sure, I might have also dubbed them toothpaste cupcakes, but they were super good! A bunch of you still make them to this day which totally blows my mind.
Isn’t this basically health food since there is a green leaf that resembles a small piece of lettuce in my shake? I think so. for sure.
Fresh Mint Cookies and Cream Shake
Ingredients
- 1 1/2 cups vanilla ice cream
- 1/2 cup milk almond, coconut, cow’s, your choice!
- 8 chocolate sandwich cookies like oreo’s, obvs
- 1 handful of fresh mint leaves plus extra for garnish!
- 1 teaspoon vanilla extract
Instructions
- Add everything to a blender and… blend it! Serve with a big old sprig of fresh mint AND some whipped cream if it’s not too rich. Maybe some cookies on top. Go get it.

um so many thoughts going on right now! first of all OMG…this looks amazeballs. second, i’m totally with eddie on the cookies & cream train…love love love love love oreos & combining oreos + ice cream = the best. third, me & my black thumbs can’t WAIT for your herb garden post…teach me your ways. fourth, thanks for reassuring me this is health food…about to go make one for breakfast ;)

Jess you should never apologize for ’embarrassingly easy’ recipes! Those are the best kinds, things that are so simple but when someone points it out it completely makes your day!! I love all the cookie action in this drink but I’m gonna side with Eddie with the no mint situation, but I love how beautiful it makes it look!! Great post!!

This milkshake looks INSANE! My husband loves cookies and cream anything, and I also have a ton of mint growing in the garden, so this one’s a win all around! Mint and chocolate is delicious (come on, Eddie!!), and I love that you thought to pair mint with cookies and cream. Can’t wait to devour one of these milkshakes!

I jut had a flashback from college. My sorority’s cook used to make mash-up of mint chocolate chip ice cream and oreos. When that was on the menu, we all got excited. Even though you could totally go to TCBY (do they exist anymore?!) and basically do the same thing a la Eddie. What a good combo and the fresh mint makes it so fancy and grown up!

I love chocolate and mint. I’m probably obsessed with it. I love Christmas so I can buy all the chocolate and mint things and hoard them all year! I’ve even got my SIL coming around a little on the chocolate mint thing (she used to side with Eddie). Now to work on her with root beer…
As for mojitos, you can totally make virgin mojitos. They are equally delicious! And I will totally be making this milkshake!

Do you have any tips on growing cilantro? Not sure if you’re growing any, but I plant it every year because it’s my FAVOURITE, but half the time they die. The rest of the time I get one or two meals from a plant and then it goes to seed and is done. I have no issue growing any other herb!
Don’t know whether it’s just a cilantro thing or if there’s something I could be doing differently….
Thanks! This looks super delish! I’m also not a mint and chocolate fan unless it’s dark chocolate and even then it’s only in super small doses. Still, on a night where I’m feeling it and it’s 40C here, I’d be on board!
ok so that has happened to me every year too! this year, i actually planted my cilantro in a separate pot with nothing else. i have it in half shade and half sun. i’m sort of monitoring it everyday and judging just by how it looks. i think by the end of summer, i’ll have some more ideas on what worked and what hasn’t!
